So many. The worst one (for me at least) was the restaurant where the owner stole his son's inheritance to fund his business dream, and then proceeded to make his son work there (who felt like he was shackled to it as the only hope to get some of his money back).

Love Gordon honestly. He gets a bad rep from some people online because of this show and Hell’s Kitchen for his over the top personality, but if you watch his less scripted shows he’s very respectful of other cultures foods and chefs. Gordon Ramsey also recounted a story in the newspaper where he was in the less savory part of Japan, and he was pulled into the backroom of a Yakuza-owned restaurant and doused with vegetable oil while being threatened that they would set him on fire for meddling in the profitable business of shark de-finning.

He won the request and tied the japonese speciality, won the duel. So yeah, he's so good he ties with a Japanese local very good chef in his own specialty, with a japonese jury. He's really good. Another thing that you can do with microwaving food as Alicia said around 26:00 is to put a small container of water into the microwave (a few ounces is enough) to keep the air in your microwave hydrated, this will combat microwave dryness if you experience that in some of your food. Also just a little extra tidbit. If you are on a budget and got some slightly stale bread? Run it VERY BRIEFLY under the tap to soak the outside of the bread and then put it in the oven, that'll reheat the bread and also moisten it up to the point of it being "Edible" again. (Or just turn it into croutons if you like croutons)

As a former restaurant manager this show 100% triggers me. I also feel for Martin because I fell victim to burn out too, before I resigned I haven't had any time off for about a year, I worked every single weekend for a year. I could feel myself just becoming mentally and physically burned out, I asked for a week off to recharge multiple times and they refused and gave BS, hypocritical excuses.

The sad truth is if you put in the extra work constantly its not extra work anymore, its your job. Thats when instead of being rewarded for doing the extra work, you'll get guilt tripped and punished for failing to maintain standards. If you fall back to normal work rates you are now being obstructionist, quiet quiting and a problem. I've done the same thing in other jobs. Much happier now I draw a clear line. "Need more time this week? Well I helped out last week and I don't do consecutive weeks. Oh you really need help? Thats sad, I'll think of you after my second beer. See you Monday." Don't move on things like that. If they have to close for a day because they run on minimum staffing then its a learning experience for upstairs.

Since "they're paying me a little over minimum wage, if I don't get tips it's ok" shocked me. 11:48 Dude, NEVER underestimate the value of having a good local diner. Esp if you're single/live alone it's good for your head health to get out of your home box occasionally and diners are great because they never give you weird looks for eating solo. Also unless they are slammed busy, they're usually happy to let you chill and read a book, hang out, whatever as long as you occasionally refill your coffee/beer. Up until I moved out of Oakland, Rudy's Can't Fail cafe was my absolute favorite late night grub go-to. A bigass plate of corned beef hash & homefries with a Shakin' Jesse (basically a milkshake made with chocolate and guinness stout) at 2am because you fell asleep after work and missed dinner, is the GOAT.

Three days ago ate out with my brother before we went to work (He works across the road from where I do so he drives and I buy us breakfast), the person who brought us our drinks... I get drowsy with caffeine so I always bring my own drink in (Can't drink most things like soda nor straight water; can't drink water due to a condition in specific), but my brother always gets his morning coffee. This person who served our table gave my brother watered-down coffee and I mean you could TELL it was watered-down looking at it. When we asked for a different coffee they brought another but it was still watered-down so we asked them why he kept receiving watered-down coffee. This person refused to believe my brother was old enough to drink coffee... Like the dude has his work clothes on and his security badge clipped. We explain he's in his late twenties and the server rolled their eyes and brought another watered-down coffee. It's been years since I've asked for the manager (First time and the last time was when I was twenty-three and had my first alcoholic drink with friends and the server almost snapped my State ID in half if they hadn't been stopped by the bartender, because that would've been a felony). Manager talks to us a bit and just to prove a point my brother, who is not exactly a nice person without his morning caffeine, slams his license on the table with his birthdate. Got a free breakfast and the manager brought the coffee and poured it himself for my brother. We could hear the server get chewed out in the back. We came back after work and that same server was there but they avoided us, thankfully our regular server who recognizes us and usually takes us came over. My brother was in a foul mood all day because of that other server though so I bought him his favorite carrot cake. We rarely get into issues like that, but him and I are both pretty baby-faced. I mean, my classmate back in 2017 was once accused at a restaurant of being a predator when someone thought I was a helpless child until we flipped out our college IDs we both had clipped (Our college campus makes you wear them for security reasons and we tuck them into our hoodies when at the nearby mall or food places; we were at the restaurant to celebrate my classmate's success in nailing one of the hardest projects our class had). Person caused a huge scene to the extent it ruined my appetite so we just got up and left and staff got them for harassing us. That same classmate still gets issues like that from time to time but they aren't going nowhere. And that is why I put a ring on that hand... Well two actually. I proposed this past May with two rings for two meanings, first one was one I had made using a labradorite from my own personal collection of gemstone I hand-mined and the second was a galaxy-band black ring. Labradorite ring was proposing to them there and then as they are and still are physically, the galaxy one is for even after death we'll be together. Really worked my butt off to plan the whole thing and even timed it at our favorite place so we didn't have people watching us, except the one security dude who was on break and just happened to walk by; didn't know he was there until we heard clapping which embarrassed me because I said some of the sappiest stuff. Funny part was I didn't realize how hard it was to put a ring on someone's hand when they're so much taller than you and you're kneeling and can't reach. My Sweetheart had to kneel down so I could. Man, the look on my grandmother's face when she heard I was engaged but then heard I was who proposed, priceless (She is still a bit prejudice with gender-roles and both me and my fiance are Genderfluid which confuses her even more). Wedding isn't anytime soon by any means, we have plans involved with that, but I did make it clear from the get-go before we were dating that if me being five years older bothered them, or if they have to deal with me being young looking and them getting accused wrongfully (Yes people I've dated before have been accused as predators), or if the fact I am barren and absolutely incapable of having children, if any of that didn't work out for them then they should just walk then and there. They said yes when I proposed and none of those things I listed has been a issue for them. Knew they were THE one when we had a full two-hour bullshit random moment in class one day (We literally made up codenames and mission details and stuff for TWO HOURS and remained in character the whole time for no reason, unplanned entirely).

I got nothing against Ramsey personally, I just don't need the stress-bait the producers and editors cram into his American shows. Purposefully picking shitty locations/contestants, putting him in a format of bandaging people who don't want his help; it's all just drama that doesn't go anywhere. I way prefer Australian MasterChef; that show chooses contestants that actually want to get better, not the loudest drama-queens, and the show actually has full-length cooking lessons in it because it's about the food not the egos. I get that the American shows are more eventful but I'm can't with the constant yelling that totally skips the part where people actually cook.

Honestly, I can say the son seems depressed as f*** to a point that he is just zoning out to a point that he isn't there despite being physically there, just not mentally there. He may not be taking anything it just may be depression. I can honestly understand why, he dreamt of running the restaurant after his dad for much of his life, then his sister jumps in at the 10th/11th hour. Not dissing her whatsoever, he still is unwilling to accept the fact that his sister wants to be part of that dream... But it likely threw a huge wrench into decades dreams. I can promise the very thought that he could lose the restaurant to her has likely crossed his mind many times and as the restaurant started going downhill the spiral effect it caused turned him into a spainless zombie. Sadly this likely has more to do with both of them not having a close relationship prior perhaps?

There's not enough discussion on the fact that Seline is a failed business owner who was placed in charge because her dad owned the place. Very common for workers to have no respect for a child taking over but the staff here had to go through the process twice and they know the second time is from someone who has a bad track record. Martin is completely out of line for his behavior but honestly the father is to blame for this. He brought in his son who is completely oblivious to the problems and then his daughter who is a failed owner. I've seen this happen to so many businesses except unlike Martin they actually had the balls to quit their job when they no longer felt welcomed at work.

The sad reality is that most of the restaurants featured on Kitchen Nightmares wind up closing, for the simple reason that most of them are already in dire straits before Ramsey shows up, and there's only so much they can do to try to turn things around with the time/resources available. It isn't really Ramsey's fault (mostly), but it does make it a bit depressing to follow up on the restaurants featured on the show.

I relate with Seline so much. I've been trying to find some kind of ground with my sister ever since I've started University. The only problem...well there are many problems, but the main problem is that she can't take any criticism at all and gets defensive even with my mom and dad when they call out her mistakes and give her advice. She has depression and other issues, which I understand because I went through the same shit. So it is so frustrating that she never listens to me or even asks for my opinion; she said to my face that she doesn't see me as an equal, just because she's my older sister. My parents are getting older, and I'm putting work in to ensure that I'm not under the same roof as her. Honestly, I don't know how long I can stand her. Sometimes I just wish I could unload, and just tell her what I've been holding back for years.

Just if yall need a _positive_ cooking show that actually gets you excited about your food.

My favorite part of his show is that they call him in to help fix things and then when he tells them how to fix things they get all pissy about it. I used to go to diner regularly, great place and the food was amazing... they had a refrigerated dessert display case there and they'd do things like, if you ordered a slice of cake and the cake had already been cut, they'd trim a thin slice off the exposed part of the cake and then cut your slice, so it was fresh all around. I miss that place, I've had to move since then and now it's about 600 miles too far to go for dinner.

for the microwave section I wanted to add, put the food on the edge of the turntable, not the center of it (if your microwave has one). Microwaves usually have 1 - 3 sweet spots that they will heat faster than others as the microwaves bounce around inside the box. If the food is in the middle, it may not hit the sweet spot, if its on the edges of the turntable, the food gets more of a chance to get into these sweet spots and can more effectively cook the food.
@gothicMCRgirl
@gothicMCRgirl Ай бұрын
Yes, I always place the food on the edge of the turntable precisely to avoid the center of the plate from remaining cold. I also spritz water on top when it’s possible, but if I can’t for whatever reason, then putting the food on the edges helps as well.

Sure the usual "ooo ahhhh, funni" is entertaining but it's cool to see the perspective of someone who actually works in the restaurant industry and have them sort of explain how certain changes could be beneficial or why a thing is bad.

When I was a teenager my dad decided we should to go a restaurant on opening night. They weren't ready for the amount of business they got so not only did we wait for 2 hours but when they finally brought food they brought us someone else's order. When my dad explained that to them they asked us to eat what they brought out. My dad turned red from how pissed he was and we walked out. From my perspective it was a fun night cause of the show but I imagine my dad doesn't remember it as fondly.

That restaurant story (leaving the restaurant and going to the other one bc of bad service) makes me think of last night at a concert. We were all headed to the parking garage and people kept pushing into my mom and grandma (who were on either side of me bc people and also my service dog) and eventually group 4 of these people pushing through comes up and the guy in front runs into my mom again. I wouldn’t have said anything if it was just me, but that’s my mom and grandma. They took me to see a band I’ve been wanting to see for years (Pentatonix if anyone is wondering, it was SO GOOD 100000/10 😊), and after walking through the crowds of people with less spatial awareness than someone who is literally half blind (me!) I was over people running into them, since my SD and I usually get more space just by having her. So I put on my cutesy customer service voice and was like “Hey guys, maybe we ask to get past instead of standing there or pushing through people to get where you’re trying to go. You’re the fourth group that’s done this so far.”. I wanted to say more but there were children present and I was also overstimulated to the max. Immediately felt kinda awful as this lady (who, bless her heart sounded so anxious and socially awkward) apologized and mentioned that she didn’t think any of them had hit anyone (some in the group had but she had not) and then the rest of the group proceeded to ask to get through and not push through people. Pretty sure I embarrassed my mom, but no one ran into her after that so I’ll call it a win.

If you're taking suggestions, there's a compilation of clips of Kitchen Nightmares called "Staff We Stan" (it's by the official Kitchen Nightmares channel!) that I think you'd like. It not only has Gordon standing up for the staff and just being really nice to them, but there are some moments that just feels good to see the staff finally being able to rebel and bring chaos to their shitty boss' lives. Example (with a bit of a spoiler but I swear the real thing is unmatched): there is a waitress who not only tells Gordon everything about the owners and their stupidity, but she makes a point to recommend the worst place she possibly can with the most giddy expression she can. It's glorious.

1:05:35 - "We love all of our children equally, we just love some more equally than others." 1:30:28 - A lot of people think eating bugs is gross, but they're okay with eating crabs, lobsters, shrimp, and other shellfish. 1:30:55 - I've never had truffle. Supposedly real truffles have "an earthy aroma and exquisite flavor", but they lose their taste and smell very quickly, so unless the restaurant is buying them fresh and using them within a day or two, all they are is fancy mushrooms. Furthermore, "truffle oil" isn't actually made from truffles; it's an olive, canola, or grapeseed oil artificially flavored with a synthetic flavor compound called "2,4-dithiapentane" that is supposed to mimic the scent of truffles (though a few brands do use truffle residue or include a small piece of truffle in the bottle, it has a negligible impact on the flavor). Apparently Gordon Ramsey himself once said that artificial truffle oil is "one of the most pungent, ridiculous ingredients ever known". 1:31:38 - "I'll have the $1000 steak, but can I get the gold foil on the side, to go? Unrelated question, but do you happen to know the current market value of gold?" 1:34:00 - A genuinely good steak is absolutely worth paying the money for. You can absolutely taste the difference between a $15 dollar steak from a generic restaurant and a $60 steak from a good steakhouse. 1:36:22 - If I go to a restaurant just for a meal and not some kind of social gathering, after two hours we should have already eaten, paid, and left.

1:31:00 There are a few ingredients like truffle, that either you get the top quality (which is insanely expensive) or it is now worth it. I like my cheap Spanish ham bought prepackaged in the supermarket. I love to use it to make bocadillos/sandwiches, sometimes I microwave it a bit so that I have some sort of crispy Spanish ham, which could resemble bacon. It is 100 times better than bacon (and somehow usually cheaper, at least in Spain). But if you have ever tasted a good Spanish ham, that is just different. They are not the same food. The taste, the mouth feel, everything is different. With truffles, it is the same. Either you get the real deal, or you might as well be talking about a completely different ingredient.

As someone who's job during university is washing dishes... the fact the pile is that high when the restaurant is practically empty is... upsetting. The dessert case honestly gives me unintentional Japanese display vibes. I personally LOVE when you walk by a restaurant window in Japan and they have mockups of menu items. It's obviously taking more space than a mere poster/slapped-on menu, but with minor forward planning it's really neat to have idea of portion size and look as they are typically very well done. The thing about that dessert case is that it's not meant to serve that purpose... if it's obvious that it is there as a display, then that's fine, but if it's a running fridge and cake sounds like bricks when you take it out... it defies all potential upside to it, especially if it's noisy too. I used to be a fan of salad kits. I would drop by a nearby grocery store and grab a cesar salad one, chopped a cucumber as I mixed it all and was a nice quick way to have raw vegetables on the go when I didn't have access to a fridge (I never was big on coolers). Problem is that it's gotten pretty expensive now after inflation, and I'm not around enough to buy a full lettuce before it goes bad (or I have to eat it every single meal for a few days). I hope you never have bad escargot... though I've been running on trauma for decades. I love mushroom dishes and my mom used to trick me by mixing some snails in a bread crumbs coated fried mushrooms I liked. First time she said they might have been a bit old, the next time she said they were actually snails and they became my sworn enemy. Plenty of food I had issues as a kid I got over growing up (though I still hate some), but snails never outdid that betrayal.

47:58 that is SO true. I've never seen any customer ever tip in my country, nor see any business enforce a tip culture (I've heard stories of places that outright DEMAND you tip on top of paying for what you've consumed) and I've always felt like not tipping because of what you said. I'm already sitting there, making a time and money investment (and even if the food's bad, I never dine and dash nor deny to pay, but that's more a me thing) and I feel like if the base experience is good, I don't need to tip because people aren't dumb. They will flock to places who make good food and I will reccomend it to people. I get that in other countries, the people who actually work in a restaurant get paid and treated like shit, but forcing others to console you monetarily would just make your experience more miserable, as well as ruin the restaurant's reputation.
