I can seriously hear this in an Uncle Roger video: "... Uncle Roger now emotional support animal for animate Elf girl - this acceptable." I literally talked with my best friend who went through a culinary course about these reactions, and his response was "Jamie Oliver isn't a chef - he's a troll with cooking credentials. I'm a better cook, and I dropped out of culinary school." *gives Alicia a hug*

For anyone who might not know - washing your rice isn't so much about cleanliness; it's about texture. Rinsing your rice removes excess starch, which helps the cooked grains separate easier - especially important for fried rice! (Which should ideally be at least a day old, anyway.)

Jamie Oliver was entirely too big in the UK. Growing up i couldn't walk around a shop or eat at school without his malevolent influence. Then i found a gordon ramsey cookbook, and my Aunt Jyoti taught me a family recipe for curry. Now i love cooking, even when broke.

Here in Japan, chicken thighs cost more than chicken breast, ‘cause thighs taste better and are more popular. Chicken breast is mostly considered dieting food.

it's the other way around because they're also considered "health food" in the US lol. instead of making healthier food more accessible for our very unhealthy and overweight country, most of the time they just jack the prices up for stuff that people consider "health food" to make it a commodity. it dosen't happen with everything (grains and legumes like lentils, beans, and rice are always a good price and vegetables are usually fair as well) but things like lean chicken, oily fish like salmon and mackerel, granola, yogurt, etc are often more expensive than what is reasonable.

American mass produced chicken uses a highly specific breeding line that grows so big and so fast that they would actually break their legs if not harvested on time. If you look at the typical size of chickens sold in the USA vs Japan, there's a nearly 3x size difference, with the breasts being most of the weight. Downside to these birds that grow so big so fast is that they barely develop any fat or flavor (mass market thigh is what most of the chicken SHOULD taste like just with more fat), which is why foodies like to raise their own in the US with heritage breeds that actually taste like it should. The thighs would cost more if Americans prioritized flavor over volume, and marketing wasn't so effective at making chicken breast so popular.

My favorite utensil BY FAR is my simple wooden paddle, got it at the Asian market. Frayed around the handle and stained to hell, but that edge is STILL straight as an arrow. Strong enough to stir a whole bowl of chili; straight enough to flip an egg without breaking it. W utensil.

Seeds do not contain Capsaicin. The placenta is where the heat is (The white flesh inside the pepper that holds the seeds)! Scraping them out with a knife though can also scrape out the placenta, which will remove a lot of the heat.

Of course it would be. The rotisserie batch was already deemed close to expiring so they would actually lose money making the cooked one cost equal to or more than the whole raw ones that are still good in the fridge. Also, it's a great marketing tactic. You come for cheap chicken, but more often than not, you go home buying stuff to eat with the readymade chicken.

My family has a rice cooker, but I prefer to cook in a saucepan out of habit. That’s it. Habit. He’s using so much water and rinsing BECAUSS he isn’t washing. The extra starch and crap causes it to stick. You’ve got to watch it constantly in a pan so it doesn’t stick to the bottom. Also, our rice cooker isn’t large enough for 7 people in the house xD Brit here. I thankfully grew up before he poisoned our school menus (at least in my Catholic school)

As an ex military chef from the UK I use rice cooker all the time it is amazing I use a wok in fact my rice cooker does other stuff as well and I can confirm myself and other people I know that are or was in the catering division vomit every time anyone mentions Jamie Oliver he isn't British he is an embarrassment and claims he is Italian. My dad was the main cook in my family and as soon as any of us started cooking he hammered it into our brains that you neverrrr use metal on non stick. Anytime we pulled out the non stick, he'd hand us a plastic/silicone spatula/spoon. I'm from the US, my moms side is the type to think salt and pepper are spicy, my dad's side is also white but more adventurous at least and dabble in actual spices and love traveling and trying new things. Coming from the midwest and knowing how restaurants probably water down flavors to cater to our typically bland palettes... it sucks sometimes because I want new flavors, try things from other parts of the world without having to spend the money I dont have to go there. Obviously there are a few good authentic places here and there, but nothing like if I were in say NY or CA

My rice still comes out great in a pot. I let it steam up by shutting the heat off but keep the top on. Never sticks to the bottom. I do get it though. Probably will invest into one. Can't afford much all the time. I do use a tiny bit of butter to give it flavor. I am on a "taste everything as is" route to cooking so I can get more flavor. Not gonna lie, it sucks 😂 but gotta keep working on some skills

Shrimp paste smells absolutely horrendous and gross - but it's also an essential component of thai green curry, and the flavor it adds is amazing. Totally worth a little stink while cooking!

​@@ElderonAnalasFun trivia: salting the earth only really counts when it's concentrated crystal salt. The amount in sea water would require being absolutely drowned for a long long time. Using sea water to put a fire out will only disrupt the soil for a month or 2 and be back to normal, even faster if you allow weeds to take over because they bioaccumulate the salts.

My family don't have a rice cooker, but we also never cook just rice or dishes that use clear cooked rice. We usually make something like pilaf or risotto with our rice.

Like, it was done without one for literally thousands of years and the cooker is a heck of a lot harder to properly clean than a saucepan. I guess maybe if you are just really short on time and want to throw the stuff in there and walk away from it but I'm usually prepping other stuff while the rice is cooking.

​@@AliceBunny05 yeah, rice cooker sounds nice but, I know I don't eat it enough to warrant one, heck, I'd buy a 2lb bag of rice and it would last me 6 months, or more. But, I also prefer making it in a sauce pan because my mom always made rice as more of a dessert thing. Cook the rice, add in a splash of milk, a generous glob of honey, and a big sprinkle if cinnamon. Then mix it together, make sure it's warm, and presto, the closest thing our redneck family got to making rice pudding. I still make it sometimes to remind me of here, but I just can't add the same love she used to now that she's gone.

Anyone else notice that Jamie takes ONE bite out of whatever mess he's created, says something along the lines of "So good", before using whatever utensil he holds to shuffle the "food" around but not getting any more of it near his mouth? Guy Fieri, on Diners Drive-Ins & Dives, has to take 2 bites of the food the places make for him. yeah to be fair it is about preference, some people tend to eat more or less in their portions. but generally a serving of rice is about one cup cooked, so roughly 1/3 cup raw. however the listed serving suggestion is actually 1/4 cup raw, most people eat a bit more than that

Honestly, as someone who was just culturally aware of Jamie, but never really watched anything but a few of his "10 minute meal" episodes, it's severely eye-opening to see how little he knows about cooking anything that's not from one region of Italy. There are some things you can excuse, no TV chief gets to use their own equipment, that's why so many end up using camping stoves. But these don't even resemble the named dish.

Did you notice how Jamie struggled to keep from spitting it out? He literally has to pause and bring his fist to his mouth in a reflex to keep from spewing. Then he never took a another bite, he just poked it and stirred it around.

Okay, I have to say this as a definitely very white person who isn't used to "proper" spicy: Leaving the seeds in with chilis is too hot for a LOT of white people. Heck it's probably too hot for 95% of my country. I could maybe handle it, as I do like spiciness myself, but it would be at the upper end of my tolerance. That's how white (and european) I am. :P And how little tolerance white people have for proper spiciness. So Jamie being from the UK, I can understand that he recommends taking the seeds out of the chilis. As for the "it's not common sense to not use a metal spoon in a non-stick pan" comment: Really...? REALLY?! That's not common sense?! Damn, basic cooking skills really aren't part of Gen-Z and up's repertoire anymore, are they... "Don't use metal in non-stick pans" was the VERY FIRST thing I learned about cooking from my mom, and I'm a millennial! Lastly, my mom has some Jamie Oliver cookbooks, and she seems to like his recipes. But the more I see from him, the less I appreciate him. (not even like him) In fact, at this point I'd say I dislike him. It's like yea...he's a cook. But there's absolutely no passion AT ALL. No learning the basics, no learning how to properly make dishes before experimenting, no nothing. Just his own...mish-mash of barely relevant ingredients thrown together, and then calling it "X dish, Jamie Oliver style". Even though his crimes against cooking don't resemble the dishes they were supposedly based on at all anymore.

What's funny is that the seeds aren't that spicy. The Capsaicin is actually located within the whitish pithy pepper innards. While the seeds do absorb some Capsaicin which is often enough to make them taste hot on their own. But compared to the amount of Capsaicin in the pepper it's only a small percentage.

@ZarathosDaimaoh Thing is, for most people in my country just the seedless chilis are already spicy enough or even too spicy. Because the non- seed parts do have spiciness as well. That's how little my country is used to spicy food. :p I myself am fine with jalapeños with seeds, but I'm a huge outlier here.

Modern non-stick surfaces are a lot better than older pans. As long as you're not really getting in there and scraping hard, it's fine. Just be gentle. I avoid it, but the extent to which it damages modern pans is really exaggerated.

If a non Asian did it it would be called racist . I hate that. I’m a white guy and find great joy in expressing myself in accents that are not my own because some things are best expressed in other cultural means. For me it's case by case. Trust has to be earned with good execution. Like some black guys doing the "bitchass white boy" voice it's just a lazy excuse to be an asshole and call it a joke; but other black guys slipping seamlessly from Tyrone to Tyler takes me the fuck out and has a specificity and accuracy to it that i can laugh at. Its the difference between "isn't it funny how ALL white boys are bitches?" VS "don't you notice when there's _that one Kevin_ who pulls this shit at the DMV _every. goddamn. time?"_ One of them I'm like "that's not even what we sound like and you're mixing up 3 totally different personality types without understanding what class and bias they come from, so this isn't even real to me you're just doing a fake voice" and the other is "YES! I will say this. There was a step you could add, taking out the chili seeds and grinding them separately(mortar and pestle), then adding them back in. Alternatively? just chill/freeze your chili, makes crushing them in the pestle a lot easier and they keep their color better. *On coriander, they use the roots washed well, If you can't get enough of the root, can use a little of the stem (NO LEAF) too much of the stem can actually throw the flavor. Coriander roots are patted dry then crushed with pestle. They have an earthy lightly citrus note. Which complements with kaffir lime leaf and galangal. Honestly, when Jamie says "tropical" I think he was reading off a teleprompter, Without the chili component, the other primary ingredients in the green chili paste do taste "tropical/citrusy(aromatics)" It is just a vapid statement though. 1)He didn't use galangal, nor did he fry it off. 2)he didn't use coriander root, nor fry it off. 3)He didn't fry off the kaffir lime leaves. So... he stewed his food processor "paste" Considering how much flavor is developed in the crushing friction (galangal is so hard you practically need it to be crushed for it to be cooked properly) none of those flavors could be right. After the paste is made, it is either used fresh or stored for later use, once it is to be used, it is fried off/sauteed in coconut milk, some people reduce the milk, some add coconut cream, some cook the milk until the lipids split. regardless. You rely on the coconut fats to extract and develop flavor. The paste cooks completely before it is served, anything less is awful or wasteful. If your curry doesn't taste amazing, either the paste wasn't made properly, or the person cooking it did not love the food enough to take a few minutes to cook it properly. Some people would tell you what you can and cannot use the paste/curry with. So long as you don't tag "traditional" onto it, use it with whatever you want. Amazing food should be enjoyed. For example, you can marinate tofu in paste overnight then fry it off and serve on rice, it will be good even if it is not the most traditional.

A way my Mom stretches left over chicken: chop it up and combine it with ramen noodles (cooked without seasoning packet), corn, & cream of mushroom soup (thinned with some milk). Heat it all up in a pot or saucepan. Season to taste. My family calls it Dog Food, as my late brother, when he was a little kid, called it that and asked for Mom to make it every dinner for over a month, so the name stuck.

How to cooked Thai green curry 1.Go to supermarket or convenience store and buy a Green curry paste. 2.Buy protein and ingredient same the place you bought a green curry paste. 3.Back to your home and open the kitchen windows then start cooking. 4.When finished your meal and you don't like a taste then change a green curry paste brand. 5. Important! Don't make a paste by your self its waste your time. 6. Green Curry paste it's super cheap that make your life easier and avoid some argument with your angry family when they hungry. (Don't mess with hungry people they can kill somebody) 7. Thai cuisine it's easy to cook but you can't replace some ingredient with a related ingredient except a protein that make your dishes go to far from a taste you looking for. As a Thai I'm not mad with Jamie's recipe but if he is a Thai and make this dish we need to talk with fists.

In my family we personally make sure to all follow grandma's rules for making rice: Old pan makes good food. Respectable amount of garlic, don't be stingy. Always wash the rice. One cup of rice per person and one extra in case someone is really hungry. Water until it's about 2 centimeters (4/5 of an inch) above the rice, confirm with the finger measure if needed. Taste the water to make sure it doesn't have too much or too little salt. Don't forget to sing, rice cooks better when you sing to it. Leftover rice shall be kept in the fridge for a day or two, then mixed with savory cake dough, made into little balls and deep-fried for a delicious afternoon snack. Serve with coffee, black with sugar.

To be honest, no shrimp paste is not the issue. I am highly allergic to shellfish and I hate it when they use products with shrimp or other cross contaminated seafood such as paste or broth... especially in food that has no other seafood in it... why does a beef dish need shrimp products like broth or paste in it?
