I lost all respect for Gordon Ramsey when he told people that you scrape butter on the bread when you make grilled cheese, then I lost a little respect for Uncle Roger when he said Gordon did that right: kzbin.info/www/bejne/hqLQaWd_l9SAebc You melt the butter in the pan, you heathens. I mean, no offense to other vtubers who have done that, I get the reason why people watches that - for the pure chaos of it all, but maybe she can offer something different?

Just started the video but I want to note this - Americans might know Jamie Oliver from that one time he came over here to pretty much the poorest part of the country and tried to convince a bunch of kids they shouldn't eat "dirty" foods like... chicken nuggets. And then called them "brainwashed" for wanting chicken nuggets anyway. There's a fantastic video on it called "Jamie Oliver's War on Nuggets"

And even if the kids were going to be disgusted by it, it's still such a shitty thing to do because they're in a poor district. The district and their families CAN'T AFFORD his 'healthy' alternatives. But does he listen? Nope, he just gets upset at how 'brainwashed' the kids are even though his proposal was impractical from the start. He's awful

And then there's the time he made ramen but because he's culturally insensitive (AT BEST, there are much worse things I feel he could be called) he decided that it was too 'unhealthy'. When he brought out the soba noodles I nearly died. You just know he googled 'healthiest Japanese noodle' and instead of making a proper soba dish, decided to just throw them into the ramen along with that nasty spinach ball he made. His ego is so fucking high he thinks he's 'helping' people with his work. When all he's doing is insulting cultures. Sorry, he makes me heated LOL

Fun Fact: That's actually a term of endearment. I'm Asian myself, but my skin is so light and my hair is slightly brown that my fellow Asians often also treat me as the "white boy" of our circle. It's from the common idea in Asia that foreigners often look good/like Hollywood actors, or stand out among the crowd in Asia. In the opposite color spectrum, here they also call dark-skinned people endearingly with "Negra" or "Negro" (from the Spanish word for black which is "Negro").

I have nothing against mentioning you can use packet rice for a recipe, and saying how the process would differ, but a professional chef using packet rice and not even attempting to show people how to cook rice for a rice based dish is shameful.

Me and my family are from Guam, Rice is pretty much water to us, can't live without it. I'm 26 and if I don't have Rice made before everyone gets home from work, I'm dead. God forbid if I mess it up, forgetting to cook it is a better alternative to messing up the rice. Thankfully rice is not hard to cook, BUT you need take into account the brand of rice. You can get three different brands of white rice and they will all react differently to being cooked. Also Red Rice goes hard, it's always a treat whenever we have a family gathering.

From what I was told and what I heard about Jamie Oliver he essentially is teaching cooking to "old white british women" which is why he uses stuff like olive oil or store bought rice essentially something that would make a 50 year old stay at home mom that wants to "cook ethnic" but doesn't want to go to the asian food section at walmart.

So I’ve watched a few reactions to this, and one chef had a theory as to why Jaime added the water at this point - because the sugar from the chilli jam was about to caramelise if he had fried it any longer. So he had to drop the temperature somehow and stop that from happening, but obviously that fucks up the humidity of the rice no matter how much you cook it off.

I think the jam is too viscous and unable to coat the rice, which was causing massive clumping. He used water to help thin it out.

​@@MortZar I think it was mentioned in some other video or the same video of the chef that have a theory as to why Jamie put water in the rice (his name is Brian his channel is Briantsao) that Jamie was trying to replicate the Malaysian version of egg fry rice that use some kind of red spicy paste (I forgot the name of it, watch uncle roger reaction to Reynolds's fry rice if you want to know) and since the Malaysian version fried rice used kecap manis (sweet soy sause) so Jamie must's just think of a replacement that fits the two sause that being chillie jam cause it's a red paste that's sweet and spicy (well as spicy as Jamie could handle to be more precise)

@@AndyPlaysAllNight The UK has Fair Dealings, which is similar to Fair Use. Kay striking a video is because she's upset she got critiqued for how bad her cooking is. People only watch her because she is a lolcow for the cooking work and even then her views are abysmal Uncle Roger filmed his original vids when he lived in the UK, so he's protected under the Fair Dealings provisions as he is providing humorous commentary.

There’s also different techniques to the finger method. The way my mother taught me, is after you clean your rice preferrably twice or thrice (Heh, pun intended), fill it with water, then put in your index finger just until it touches the top of the layer of rice. If the water is halfway before reaching your first finger line, it’s the right amount. This works with whatever amount of rice you put in, doesnt matter if it’s one cup, three cups, or four, it’ll always stay the same and you’ll have a far better consistency with your rice that way. Also, modern rice cookers are a wonder to have in the kitchen, mine has a built-in pressure cooker and steamer so I can use it to tenderize meat or make steamed dishes.

One thing I will say on collander, while what Uncle and Alicia says is right that you never have to drain the rice, cause the water cooks off and rest is absorbed by the rice, collander is actually near and handy for washing the rice since since you can just run the water trough it.

28:51 From what I remember reading, his "Punchy Jerk Rice" (which was like an Uncle Ben's instant rice packet) didn't use two key ingredients used in Jerk cooking, spefically allspice and Scotch bonnet peppers.

The only overlap in "typical" ingredients was ginger, and there are about a half dozen things that are much more common in Jerk (cloves, cinnamon, scallions, etc). Given that the Scotch bonnets are for heat only, substitution would have been OK except he went for jalapenos which have a distinctive taste that is nothing like jerk.

The biggest issue with Jamie Oliver doing the whole school thing was that there was minimal oversight with him leading a push for change but not offering up actual reasonable alternatives, meaning schools just switched to cheap, mass-produced ready meals. My school went from in house made food to Jamie Oliver approved bulk made ready meal crap that nobody liked, so everyone went to the garage across the road or the local chippy instead. And I'm a big believer that food should be experimented with, and if it tastes good then fuck people saying you're making it wrong because it's not traditional, but when you're professionally teaching others to make a well known food, you should be doing it right or call it something else if you’re going to get funny with it. You certainly shouldn't be using pre cooked rice. Fair enough if you want to mention how to adapt the recipe for pre cooked rice for the lazy people, or suggest some personal additions that aren't part of the main recipe, but you should be teaching how to actually make it from scratch, otherwise you may as well just tell people to buy pre-made egg fried rice.

@@abjectlyterrible I wouldn't say he doesn't care. He's done more than any other celebrity chef I can think of in terms of social health activism. Sure, kids were mad they got food they liked less than deep fried chips and nuggets, but the ideas he was putting forward got enough national support from adults to pressure the government to act on it. He has made a difference. Most people just don't like him because he comes off as preachy and condescending and a bit full of himself. And we don't like that.

On the whole rice cooking thing: I don't own a rice cooker because you can't get them cheap in my country. So I do 1 part rice, 1½ part water, little bit of salt and then 11 minutes on low-medium heat followed by 11 minutes off. You never lift the lid so the later part of the cook is steaming not boiling - works every time and gives you some solid rice Edit: Put just the water in and bring it to a boil, then turn the heat down to low-medium as you add the rice and salt

I personally put the rice into boiling water, cook it under the lid for 20 minutes on low fire and then I let it steam for another 20.

Years ago an Indian chief told me use a paper towel to trap in the steam, bring to boil and rest for 10+ minutes. It's been my go to for years, except I keep it on low if I add vegitables to the pot.

in my family/culture we would say "Oh diabhal" which is Irish for Oh devil its usually used for expressing disappointment and things like that also its pronounced Oh yeowl(Like oh meow with an L on the end replace M with Y) kinda like that but give it a really gruff gravely tone and there ya go you can express disappointment like an irishman from Connemara

17:40 Fellow Ethnic Canadian from Toronto, That Mom and Pop shop sound very similar to a shop I used to go to when I was a kid growing up, both owners were Chinese, very nice, closed during covid, and the packaging looked sketchy but the food/ingredients were great. If it's the same shop that was in a plaza with a parking lot with potholes in the weirdest spots then, I 100% know the shop you are talking about and I miss it everyday.

Basically it's slanted enough that you can move food across the heat, though that only work on a gas burner, when so of the sides get heated. The science people definition of Wok-hay is a slight charring of oil as it's tossed near he flames, but again, that only works for gas. though Kenji got me to broil my stir-frys, as the 2nd to last step.

A cast iron skillet gives more and more flavour in cookings over a long period of time, due to the concept of “seasoning” a skillet. A wok has only a little bit of that, not a lot since it is thinner, so there’s not a lot of micro pores and crevices that allow for seasoning. What wok does have is the shape, which kind of “traps” and allows the aroma of the cooking to flow back into the wok, and infuses the cooking with flavours that way instead. It’s perfect for frying and lightly charring your cooking when you’re tossing it.

basically yes. Woks are made of carbon steel, and the dude a couple comments above has no idea what he's talking about. Woks season just as well and easily as cast iron, and build up flavor of their own over time and use. It also causes the wok/skillet to create its own nonstick layer. It's why you should never use soap on a cast iron skillet or a wok, just water and heat - you'll wash the seasoning off and have to start all over again.

another chef that reacted to this video of uncle roger, thought he might have put water in the pan, because the jam caramelized way too fast and he needed to stop that asap. so not only was the jam wrong,. it further disturbed his cooking.. edit: if you wanna cry a bit,.. i would recommend his green thai curry / red thai curry and as crowning achievement,.. the Ramen episode...

I love using my wok, I don't have a ton of opportunity for it, but I have a cast iron wok, and it's absolute bliss to cook on. Also timeframe wise I will likely never make a stream myself, but I am totally down for watching ALL of the Uncle Roger content you want to watch. Excellent taste.

Extra Edit: The water in the pan I think he was trying to keep the rice from burning while he cooked the egg since he has a sauce pan. I think it was going to fully steam away. OK in defence of the UK, ALL of the tv chefs here tell you to drain rice, its because for the most part there used to making risotto dishes which calls for creamier, damper starchier rice. The problem is all of TV chefs have never bothered to learn how to cook Asian style rice which means when they make Asian style dishes they teach you how to make risotto rice for it, they even tell you not to worry about what kind of rice. Chilli Jam DOES slap but absolutely not for anything like this, It's great for a bacon sandwich but you want something a bit spicier than HP Sauce or Ketchup, its great for a cheese board BUT NOT FOR THIS!

I have a fantastic market near me that has products from around the world and I strive fur authenticity. One night I had a man from India staying in our house who wanted to show appreciation for letting him stay there. He wanted to make his favorite dish. He was shocked to find i had all the ingredients in my pantry already. After he made it he said he dumbed it down for “white people” we ate it. It was good. But we said “ next time don’t dumb it down. We like flavor and spice here!! Why eat otherwise?!?! “

To be fair, not all types of Rice should be washed (eg musenmai or fortified), and certain countries like Japan, Italy and Spain, have rice that's not usually washed either because they want the extra starch for the dish or the excess starch is removed at an earlier stage. For example, in a risotto, the extra starch gives the dish a lot of its creamy texture and flavour. It's also more important for brown rice or rice that may be from an area with polluted soil as the outer layer can contain things like lead and arsenic, in small amounts, but if you eat a lot of rice it's certainly a good idea to rinse it off. Washing it is probably less common overall in Europe because it makes up a much smaller percentage of the overall diet, meaning the levels of such pollutants tend to be negligible. Also worth noting that if you're ever in a situation where your food is limited, washing rice removes a lot of the protein and nutrients off it. If water isn't limited there's the par boiling method which gives the texture of washed rice and will still wash most of the pollutants off, but retains most of the good nutrients which will be absorbed in the initial stage, it just takes more water and involves messing around draining then adding more water half-way through and may get you some funny looks from people more particular on how their rice is cooked.

Maybe it's the way the USA packages their rice but you're rinsing not just excess starch but dirt or insects that may have gotten in (although finding bugs is not common in my experience).

@@Vincisomething As far as I'm aware, most packaged rice sold in America, the UK and the EU is pre rinsed. Not excessively unless stated on the packaging, so you may still want to wash it again for fluffier rice, but enough to remove most of the stuff you don't want in your rice.

@MrEsphoenix yeah, you're basically washing enough to get excess off but you're not scrubbing the rice down to thoroughly clean it lol. The starch can be too much in some rice packagings and the water gets really murky/cloudy. By US packaged rice, I didn't just mean the small baggies you find in Whole Foods, Walmart, or Fred Meyers, but also those big Asian rice bags in Hmart, Uwajimaya, or 99 Ranch

@@Vincisomething I understand that, I just wanted to point out that asking the reason for washing rice shouldn't be laughed at, as there are multiple reasons both for and against and at least they’re trying to learn. From what I can find with a quick google, all rice produced and packaged in America is washed and fortified, so probably shouldn't be washed at home. Didn't see much about imported stuff and don't want to spend all night looking into import law of a country I don't live in, so best bet is go by what it says on the label, and if there is no label, play it safe (and maybe look for a different supplier). In theory, any rice sold by a reputable seller follows FDA standards, but I don't know the details on what those standards are for imported Rice.

The one thing I will always remember Jamie Oliver for is when he showed a group of kids how chicken nuggets were made from the leftover bits of chicken to show them how "processed" and "bad" it was, and at the end, when he asked them who would still eat it, they ALL raised their hands and he looked so defeated. I'm white (though from Texas, so where southern and mexican cuisines overlap), and even I know how to make rice and have a rice cooker. And yes I know to wash my rice.

14:22 Only time I got rice in a strainer stovetop cooking IS to wash it. I like doing with the strainer cause you can see when the water runs clear. I only cook a small amount at a time tho. I also toast the rice after washing it, get the water boiling, lid on, cook 18 min, turn off heat, let sit lidded for 10 minutes, don’t let the steam out.

4:24 to add to this point, while non carbon steel woks are fine, they don't have nearly the lasting power nor the correct heat retention and transference that carbon steel ones have. The seasoning process of a carbon steel wok is a lot more effective then a non carbon steel one, however a wok is still a wok, and a non carbon steel wok is better than no wok at all.

Alicia, you explained rice cooking exactly like my mom did, except we don't have a rice cooker, so we use a pot. Why would anyone ever strain their rice?!😂 the water is what it needs to be delicious 😂

There's a similar no-drain pasta technique where you add about a half inch or so of water over the pasta and boil it until the water is mostly gone (at which point the pasta is still a bit al dente), then add your sauce and cover, and let it sit ~15 mins to absorb the rest. The result is much starchier and results in thicker sauces, and pulls the flavor of the sauce into the noodles. Works great with mac and cheese, spaghetti, etc.

@@myphone4590 Don't know much about cooking but I do know that al dente pasta has finished cooking. Yes, al dente is "firm to the bite", but that's how it's supposed to be. I'm sure you meant that the pasta is still too firm, but that's not "al dente" that would be like calling what ever Jamie Oliver made in this video "Traditional Egg Fried Rice". Not trying to be mean, I just think it's important to know the meaning of certain words.

In Spain we drain the rice xD the one we use here has a TON of starch, I have tried using a rice cooker and even after cleaning the rice with water 5 times the cooker spilled foam everywhere... Btw in paella the rice is not drained xD we don't cook a lot of stuff where you need to drain the rice
