Pantaleone’s is actually one of the many few restaurants that did take all of Gordon’s advice to heart & is still open in 2024. They don’t offer a dine-in service anymore but you can still do takeout orders or delivery from them

Honestly pretty good to hear because most restaurants even following through Gordon’s changes fail either because they have too many debts or they’ll last a few more months, but because of their business is thriving they have to pay more rent. Really sucks

The mid-day nap thing is a remnant of old fashioned Greek party culture. In Greece having dinner before 9pm is too early, cause you're supposed to go out to the tavern and party and feast and drink until like 4AM. And to last for that long you take a nap during the afternoon. Lunch is at like 2PM the earliest and is a hefty meal which causes you to be sleepy, hence the afternoon nap. Also if you partied until 4AM you barely got enough sleep anyways so you need the nap so you can party harder that night. Basically it's not at all conducive to American style work schedules and in general productivity, but it's hell of a lot of fun to live that way and really satisfying as long as you have the sort of work that is conducive to it.

I'd like to recommend a more wholesome episode of Kitchen Nightmares, and one actually from the original UK version. It's the episode on Momma Cherri's, a soul-food shack in Brighton, and it's one of the few episodes where the food truly impressed Gordon. It's a nice change of pace, really. 😊

Just to be fair to Rao's in Vegas, restaurants turn over in Vegas all the time. It not even necessarily that it did bad, but Vegas is always looking to add new things to give people a different experience every time they come, which means that they need to make room for the new by getting rid of some of the old. Its not just restaurants, its also shows as well. Seeing as it opened back in 2006 and was open for 15 years, I would say that is actually really good. Speaking as a Vegas native.

Frozen would definitely be better, especially if you can keep them in the shells. As long as you defrost them properly and have a good sauce, you can make a solid linguini and clams dish with frozen clams. Canned ones will always have this weird texture to them that's hard to explain

@@levievil9220 Sunday is the most profitable day of the week for most restaurants by a large amount. If you are a restaurant and aren’t open during key hours and days, you won’t survive. Culinary business run on very thin margins, so you better not waste the one day in the week, where you can actually make a profit.

When I started my job at McDonald's the general manager at the time was kind of a hardass about making sure people responded when somebody called for something they needed. It wasn't until I was put on the line one day, however, that I fully understood why: It tells you- the line worker- four things. 1) People are paying attention when you tell them something. 2) People understand that you need something. 3) People will work to get it done as soon as they can. 4) Who you can trust to get what you need done when you need it. I've had a variety of coworkers over the years who fit all the spectrums of reliability, and there was one specifically that I remember who we couldn't really rely on for anything. He didn't pay attention, he didn't acknowledge anything unless you directly called him out (and even then you had to do it a couple times), and he didn't follow orders. Hell, one day, the manager who was running the grill area let me chew him out for not paying attention to what I was telling him because I was the finisher that day, which basically meant I dictated what food needed to go down when. I gave this guy a rant, but it went in one ear and out the other. None of us were unhappy to see him leave.

Not being open for a certain time can absolutely work IF it's the norm where the restaurant is. Where I live, all restaurants (except fast food places) are closed between 2pm and 5-6pm because it's the norm and it's not even because of the siesta, we don't do that here, it's just how it is.

To explain the “too stuffed” calzone: you can literally hear the crunch of the outer shell when Gordon cuts into it but everything is uncooked inside (including the dough). It’s the same with the pizza being so big that the top layer is the only part being cooked. Either turn the oven down and cook longer or stop making everything so thicc

I lived in Denver for about two years. Thing is Denver may have a ton of restaurants now but it didn’t start really growing til about the 2010s. In 1985 when Pete won best pizza I can’t imagine how little was actually in the city. There must’ve been no competition.

Siesta is kinda common iin some countries in Europe, especially in small villages in the south, but not everybody do it, you have to have a work that allows you to work at specific hours, when you want, etc When i go to Italy in vacation, the older people do it but restaurants, cafes, ... are still always open

To be honest, I think what's saved. Pete's was that there were two family members who were very committed to the restaurant and already understood what the issues were. They can keep the ship on course if Pete can just humble himself enough to listen to them. ...I also do want to say that the three of them going to Vegas sounds like the start to the Hangover sequel I never knew I needed.

14:32 There's a pizza place in my hometown that doesn't do delivery. They've been open since like 2008 or so. But they actually ARE the best pizza in town and all the surrounding towns. And by a pretty big margin, too. They definitely take a hit for it, but a hit they can afford because they're always ALWAYS packed to the gills.

That medical story reminded me of my dad. He was misdiagnosed with HEPATITIS for like 10 years. Turns out, he did not have hepatitis. He just appeared to. Nothing was actually wrong with him. He was just like that.

Probably one of my favorite parts of Hell's Kitchen is the wait staff being sassy A F. They know the place is bad, and they're HAPPY to see Gordon tear the owner a new one. The vindication they must feel

There's an awesome family restaurant in my city where the original owner (which was also the head chef in the past) is very old but still working there. However, I only ever see him cutting the pizza. He still wants to be involved in the restaurant but clearly knows his limits and lets others cook the actual food. And the quality is still as good as it was years ago. Even better I'd say.

As a professional chef, a lot of these episodes hurt my soul and give me PTSD from my own experiences. If I were Gorden, I'd be checking the kitchen out before ordering any food. I also liked the Hotel Hell series with Gorden Ramsey, especially the one where the kitchen hadn't been cleaned for a year, and he had to evacuate the entire hotel due to the amount of bacteria found in the bedrooms.

I think a lot of businesses in touristy places like Vegas died during covid. Some restaurants were able to integrate delivery to stay open, but that doesn't help much when you mainly serve out of town travelers and suddenly no one is allowed to travel.

"You can't fuck up a meatball" >_> back in my Uni days, someone set off a fire alarm because they burnt microwave mac n cheese not understanding they needed to add water to the bowl before cooking it.... I wouldn't trust them with any heating element, let alone trying to cook meatballs XD

Thing with amys baking company u mentioned that the kitchen was cleaned and the fridge was organised thats cuz as someone mentioned in the comments on that video she forced her employees to scrub and clean in expectstion of Gordon's arrival
