😂 Interesting description. That said, I have a jar of professional grade black pepper grinds from 15 years ago and they are still very potent. Still works very well as seasonings for BBQ. Your mileage will vary.

My grandmother and mother never ever used whole pepper corns, and when I was young I didn't like black pepper on anything. When I started High School I took as many cooking classes as I could and discovered fresh ground black pepper and have enjoyed it ever since. By the way, I love America's Test Kitchen and Cooks Country. I also converted my mom to using a pepper mill and ditching the can of pre ground pepper

Cambodia is famous for their pepper and they have a dish, one of my favorite things to have when I am there, that's a stir-fry using green unripe pepper berries left on the stem. You can buy them here in the USA brined in a jar.

Every video on this subject I have seen always says that black pepper is the spiciest of all, however I grew up with white pepper on the table, not black, and have always found it to be hotter than black which is why it is used to kick up the heat in a number of Szechuan dishes, such as hot and sour soup. It has a completely different taste to black pepper and, for some reason, has never commonly been used in American cooking. It is much more common in French cooking and, of course, Asian cuisine. I find black pepper, and yes, I do grind my own, to be much more complex in flavour. I recommend that everyone give it a try!

Nice! I just heard a British chef talking about, and raving about, the flavor contained in the “pink peppercorn.” That chef recreated an old 19th century Royal meal using freshly ground pink peppercorns. Now I am excited to try them after watching this informative clip.😁

I used them for my homemade pickled red cabbage. Add some Szechuan peppercorn in the pickled brine. It gives this nice citrusy, numbing taste on the finished product.

I'm not sure the pink peppercorns are low in flavor; it's been a while since I worked with them but there are some nice distinct notes they can bring. They seem to work well with vinegar, IIRC.

A good peppermill is more expensive in the short term, but will save money in the long run because you're not paying for a new mill every time you refresh your supply. You can also adjust the good ones for the size of grind you want from course to fine. I have a Peugeot Paris U'Select Pepper Mill that cost about $50, but since I use it almost daily it's a pleasure to have. (Instead of changing the size of grind by tightening or loosening the knob that holds the cap on, the U'Select models have a twisting base that is marked to indicate the size of the grind. The great food/science writer Harold McGee in _On Food and Cooking,_ says of Sichuan peppercorns "they produce a strange, tingling, buzzing, numbing sensation that is something like the effect of carbonated drinks or of a mild electric current (touching the terminals of a nine-volt battery to the tongue).” (Having experienced that málà [麻辣 spicy-numbness] flavor sensation myself, I’d say that allusion to touching one’s tongue to a nine-volt battery is about right.)

McCormicks makes a blend of whole Szechuan, pink, green & black peppercorns, coriander seed & sea salt that's really good. I grind a few twists on the outside of grilled cheese sandwiches before cooking. Really good!

My parents ground peppercorns in the 1950s and on. This, in spite of the fact that we lived at the poverty level and in small towns. One sister-in-law once said she couldn't imagine a Chambless without a pepper grinder.

I get my black pepper preground from Penzeys and it has so much flavor. I’ve tried grinding it myself and it just doesn’t work as well for me. It’s hard to get it evenly sprinkled. Thanks for the info on the different types though.

Compared to fresh ground pepper, it is basically flavorless. You can feel the heat from the pepper, but very little actual flavor.

The compounds in pepper that give it nuance and flavor are very volatile. Once pepper is ground, those compounds break apart and essentially expire fairly quickly. By the time you buy that preground pepper at the supermarket, all those good things in pepper are gone; it’s just black dust that hurts a little.

Clairressa, you should do a blind taste test of pre-ground pepper versus freshly ground pepper. The pre-ground stuff has some heat, but not much else. Freshly ground pepper has heat, but also nuanced floral, grassy, citrusy, and herbal notes that pre-ground pepper has lost.

I buy both. Whole peppercorns and pre-ground. The whole peppercorns are for putting on food after cooking. The pre-ground stuff is for seasoning food that is about to be cooked. I just don't think it matters very much in that application and milling a half teaspoon's worth of pepper is a bit of a pain.

I think it's potency; I don't think most modern brands cut spices. Some blends have filler, but there I think it's to make it easier to control what you're adding, like the 'large print' of the spice world?

You lose a lot of the more subtle flavors and mostly taste the heat with pre-ground. Using more will get you only more heat.

In my opinion, ground pepper does have a different flavor profile, but that's to its advantage. It is much milder and less sharp, and therefore much more suitable for cooking or for simply those who prefer something not as biting.

The various kinds do have enough of a distinct flavor that the combination creates a fuller profile as I taste it. Sometimes you don't want that, like Cacio E Pepe, where the flavor of a good pepper just sings, but for a lot of uses and especially for a table condiment, I think the combination is nice.

Use whichever you like best. They say it's like sawdust, because it loses flavor once ground... just the same as coffee beans. But the thing is, everybody has their own tastes in food. I buy Tones peppercorns as well as Tones "Restaurant Style" ground pepper, both ATK recommended. I can't tell any difference between the two. I believe Jack did another video recommending the Tones restaurant style ground pepper. I guess this video was to promote the pepper mill not the pepper...🤔

Whole peppercorns are not a substitute for ground pepper. Ground pepper is far more mild and, in my opinion, much better suited to cooking than freshly cracked pepper. Freshly cracked is for eating fresh. If you put freshly cracked pepper into a batter or on anything that's going to be grilled, you're going to wind up with a burnt carbon flavor that is not at all desirable. Everyone is certainly allowed to disagree on this, but stating that ground pepper has "no flavor" is simply wrong. Not OK ATK. I'd much rather you told the truth than set out to simply stroke the snobs' egos.

When making a BBQ rub for something like brisket that I plan on smoking, I would not use fresh ground black pepper since the primary purpose of it is to create the bark. You are literally coating the entire outside of the meat with it. Fresh ground would be way to potent. I think for that sort of thing 16 mesh pre-ground black pepper actually has a purpose.
