This needs a sequel. Get Ben and Kush to make complete fine dining meals out of frozen- soup course, main course, dessert- and then have the normals blind rate them.

I have a suggestion to this; One of them uses frozen while the other one gets fresh. Then have James come in and dine with the normals, and have all four of them rate the individual dishes and agree on a "fair" price to pay for each. The one that makes the most net profit wins.

I have a potato soup recipe that I've been cooking for my family since I was a teenager (we shared cooking responsibilities in our house). Always took about an hour of prep, and several hours to cook properly, and a fair amount of attention, but it was a favorite of the fam. When I was an adult, and feeding my own family, on a limited budget of both money and time, I realized that almost all the veg I used was included in a package of frozen potatoes O'Brien. The homemade mashed potatoes I used in conjunction with boiling starch out of the diced potatoes for thickening were cheaply and easily replaced with mashed potato flakes. The bouillon in the recipe, easily replaced by a 32oz carton of chicken or vegetable broth. The chopped ham, I could buy already chopped. I make the same recipe today, but instead of an hour of prep, I throw most of the ingredients into a crock pot and leave it alone for a couple of hours, add in the ham, heavy cream, some fresh chopped herbs, and potato flakes at the end, and voila. If you put it side by side with the same recipe cooked the way I used to cook it, no one would be able to tell the difference. Fresh is great and all, but sometimes the convenience of pre-packaged ingredients is worth the switch, especially since with the cooking method, you can't tell the difference. And bonus, less food waste, at least directly from my kitchen.

And honestly a fair amount of the time if you buy a decent companies etc it often tastes better than the so called "fresh" which has travelled hundreds of miles if not more and then sat out back of a warehouse, then the supermarket before you even consider how long it might spend on the shelf. There's honestly some great frozen foods out there even some cheap stuff from the right places. To me frozen just makes so much sense unless you're really a huge foodie who might actually tell the difference in several cases but this video seems to show that's not true so. For most families, everyday home cooks well why waste food or money? Then as you say there's many people who need certain things done or need help who can get decent preprepared food when in that case the only real alternative is canned and canned veg and most food in general is awful and already over cooked and soft when you open the can.

As a non-chef who regularly turns to frozen ingredients for my own meals or just buying whole meals outright, I can say that Barry is completely correct. You will be surprised by what you can find in the frozen section of a supermarket or grocery store. Furthermore, the quality of some products are astounding; e.g., some of the best garlic bread I've ever had in my life has come out of a frozen aisle. It's because of this that I absolutely love this video. It's important to think about what frozen food can do for you as well as what it can't, which honestly is true for everything in the kitchen.

Frozen ingredients became a reliable staple during lockdown, and its a habit that I have retained since that ended. I always have ready chopped onion, carrot and celery in the freezer, and a good selection of herbs, chilli and ginger. Freezing spare bits of fresh herbs is a no brainer too, so that you can add interest to soups stews etc with minimal waste. Word or warning though - always label things clearly - I discovered that home grown yellow tomato pulp can be easily confused with orange pulp when both frozen and it really doesn't make an ideal spanish almond and orange cake - Yikes!

Frozen ingredients can give you so much flexibility and freshness. Especially with stuff that would suffer from long storing times or stuff you can't get otherwise. Or just stuff that doesn't suffer from quality drops when frozen. In my own cooking I use a fair bit of both fresh and frozen ingredients and I like the results. And with some stuff (like peas or spinach) I often don't even bother buying them fresh because they are actually "fresher" if you buy them frozen anyway and they are just as good. Especially for midweek cooking.

The scratch cook section has a lot of really great stuff. Frozen lime leaves are one of my favourites as they have so much more flavour than dried and fresh are unavailable in my area. The pellets of pre-grated ginger and garlic are also good, though you need a bit more of it than fresh. Ones to avoid are the bell peppers, as they can be rather tough, and the chopped coriander, as it's rather flavourless. Seafood is always a win, but a more surprising win is hash browns, which are the best of the frozen potato things in my opinion. Mince has a noticeable difference in texture, but I still use it in things like bolognaise where you slow cook it for hours as slow cooking breaks down the texture similarly to freezing. Any meat you are planning to slow cook works just as well frozen. In terms of veg, peas are better frozen in my opinion, and the mixed mushrooms make no difference once you drain or cook down the extra liquid. Cauliflower isn't a huge difference if you steam it instead of boiling it. Brocolli loses a bit of flavour and texture though, and edamame beans go weird. Onions aren't as flavourful, but you can still caramelize them and get a good result.

I frequently use frozen potatos in various forms (from the obvious fries to thick cuts and smashed, all good to grab for keeping any fresh foods cold on the way home too :p), peas are greener frozen than canned and I use frozen corn because it's easier to portion that cans. Then there are jams and berries and such that are good depending on what you're making out of them. Ofcourse frozen aren't same as fresh but if you are making something that will cook/smash them anyway... Only thing to consider with frozen meats is that fattier the meat => shorter it stays good frozen. Chunk or cuts of lean meat can stay excellent for a year if not longer but something like fatty salmon, or pork should be used in ½ year or the texture&taste changes - and not for better. Same goes for most ground meats. My totally non-scientific explanation is that the surface of meat dries and any moisture turns to ice around the meat. Ground meat has more surface area compared to thickness so it dries faster. I always have some mutton, assorted vegetables, mushrooms and potatoes in some form in my freezer. If I'd now empty my tiny freezer it'd feed a family for good couple of days. :p

This is a great concept. SOO many variants on how this could play out... fresh (seasonal / local) ingredients mixed with frozen lower cost ingredients (e.g. white fish fillets). Or premium frozen ingredients added to low cost canned ingredients. Lots of scope to play here interns of building tasty food - but also keeping in mind salt etc. in the ingredients, not usually an issue with frozen but canned it's worth pointing out that there are some bad players in even quite simple canned foods

We are really loving Kush on camera. It feels like it’s very much on his terms, and we ❤.

Kush, wild garlic grows up here in the north too. I live in Ramsbottom, which is literally named after Ramsa (wild garlic) and the main parks and local woods have tonnes of it

Kush's commitment to the bit is it. Like he hated that handshake just as much but the fact Barry hated it made it worth it for him
