Each one of those cars on its face is not that interesting... It's only when you dig in and look at all the work that Marty did to make something like his little nugget into a four-wheel drive or all the work swapping super gramps drivetrain and making it reliable or the insane amount of work in the fair lady.... Then they become interesting. Because of the effort that went into them, not just the car itself.
