Alle Belle of Coconut crepes or pancakes are made at tea time in Goa. This is also enjoyed by other Christians in India. My earliest memory of this is boarding school. I spent years at St. Joseph's Convent in Panchgani, India enjoying this treat every Fat or Shrove Tuesday the day before Lent begins.
The best filling for these are made with fresh coconut. Frozen fresh Coconut is fine, but fresh is always best. I like to add Jaggery for that toffee like flavor. You can substitute brown sugar for a toffee like flavor. I also like to lead these up with nuts - Cashew nuts, Almonds, Pistachios and RaisinsHere are the ingredients and steps to make this recipe!

Goans do not use nuts yes some use raisins as twist but purely coconut grated with palm jaggery.

I would agree that the original recipe does not call for nuts as I called out in the video, but it's a lot better than plain coconut.

Dear we Goan don't use nuts in our alle belle. Iam a Original Goan and this Alke Bella was part of my life in my childhood. I proud to be a goan n its Portuguese culture. Viva Goa. But thanks for the morden receipy

Thanks so much Edwin, you are right, it's not used in a traditional recipe. But these days a lot is added to the filling and it's a really nice texture. Cheers!

Hi Karen thanks for another great recipe. Question: how do you grate fresh coconut that’s in a shell here in Canada? My mum had that wooden scraping machine back home. How do you grate yours?

I actually have that scraper :) but i never use it ... I just use a cheese grater and any pieces left over, I either use a sharp knife or just use the processor. OR you can just cut the coconut into smaller pieces and use the food processor - I don't recommend that, it ruined one of my blades once.

Hey Kiara - some people like to used a coconut scraper. I cut off pieces of the flesh and put it in my food grinder. I don't grind it too much, just so it's coarse enough.

Try adding 1 tsp of baking powder per egg and add a bit of oil as well.

I hope I'm not stepping out of line here by answering your question. Take some chickpea water, whip it very well for about 8-10 minutes till it gets really thick and airy preferably with a hand mixer as a fork will take forever. Adding a little cream of tartar helps to make the batter light and airy which makes the pancakes / crepes perfect. This is called Aquafaba. Any extra Aquafaba can be stored in a container in refrigerator or freezer for further use. Ratio: Take 3 Tbs (tablespoons) of chickpea water per egg and use according to recipe. Hope this help.

Yes you can, but the texture will not be the same. All purpose makes the crepes light.

Hello from kolkata...We have a similar recipe to this..The difference is..We do not add eggs it's purely vegetarian dish...And it's called, Pathishapta..

Love all your recipes, hints and tricks and always look forward to trying them. Just one request some of your videos have very loud jarring music which could use some toning down. We prefer to hear your voice talking n narrating. Love love love the short stories you talk about but truly the loud music overrides it all. Thank you in advance for following up on the request. 🤗

Hello Karen. Did you miss me? I’m back, and with some questions about you deliciously crepe recipe. Here goes, and do please bear with me... firstly, can I use tortilla wraps and compensate for the lack of fluffiness of the crepe with a sprinkling of coconut flour, sugar, and a dusting of coconut milk? Secondly, I’m thinking of stuffing my crepes with Heinz baked beans. Is this wise ? Thirdly, I have it on good authority that my uncle’s gardener’s wife’s sister’s son’s cleaner has a go to recipe for pancakes. Would you like me to track the recipe down for you ?

I'm from Goa but we use only coconut and palm jaggery for filling . We in Goa make it every week for evening tea time . I will try the way u did and let's see the taste .
