Hi Lovelies,
have you baked Christmas cookies already this year? I feel like this year I have really over done myself and I feel like all I do is bake cookies for my friends and family :) I hope I am not the only one who thinks this, but I truly feel that homemade gifts for Christmas are very special :) Today I want to share one of my new favourite cookie recipes with you, a delicious almond Christmas cookies recipe with a powder sugar and raspberry jam decoration. They are packed with so much flavour and I just love them! I hope you are going to like this recipe as well :) Have fun baking! :)
Ingredients:
(makes 45-50 small cookies)
Cookie dough:
- 125g (1/2 cup) soft butter
- 75g (1/3 cup) sugar
- 1 egg
- 150g (1 cup) all-purpose flour
- 1 tsp gingerbread spice
- 6 cardamom pods
- 150g (1 1/2 cup) almond meal
For the icing:
- 50-70g (1/2-1/2 + 2tbsp) powder sugar (you might need to adjust the amount to reach the right consistency)
- 1 tsp seedless raspberry jam
- 1 tsp water
For the jam decoration:
- 80-100g (about 1/3 cup) seedless raspberry jam
Bake the cookies at 190°C (375°F) (bottom top heat) for 10-12 minutes or until they start to get colour.
