What an interesting recipe, Francine. I'm sure the lard will make the cookies very flaky! This is the recipe I've been looking for - thank you. I will probably scale it up as I have lots of kids to feed. I remember as a kid, my parents used to order Chinese after we went to bed. In the morning, I would be the first up to get the almond cookie in the wax paper bag!

Thank you for this fantastic recipe! I’m trying it right now and so far, it looking great. By any chance , would you happen to know a recipe for sesame balls? I think they are made with red beans… but not sure.

You're welcome! I hope the cookies turned out well for you. I have not tried making sesame balls before. I think they are made out of glutinous rice flour that is deep-fried. The filling is usually red bean paste, but sometimes it is lotus paste. I hope you find a recipe for them.

If your dough is crumbly you may have been heavy handed with the measurement of your flour. You can wet your hands or roll the dough ball into a tiny bit of water until it can form a ball when pressed flat it can hold together.

I haven't tried making these cookies vegetarian, but i would try substituting the lard for vegetable shortening like Crisco. It think it should turn out very similar in texture and taste. Good luck with that, and let me know how it turns out!

I’m confused about your measurements for the lard. It doesn’t look like only 1/2 cup of lard. I try it and it was not enough liquor to mix all the dry ingredients together. I had to add more lard. Thank you.

Yes, I did use 1/2 a cup of lard that was then melted. (1/4 of a package of Tenderflake). This is the correct amount of lard and should be enough to form the cookie dough.
