Puffed Almond Croissant: A delicious and easy recipe to make at home without the need to handle bakery techniques. With an unparalleled final flavor, and a flaky and soft texture.

RECIPE
6 cups of all-purpose flour
½ cup of sugar
7 grams of dry yeast
1 pinch of salt
1 cup of water
1 cup of neutral oil
1 cup of warm milk
2 Eggs (1 dough and 1 paint)
150 grams of cold butter
½ cup ground almonds (almond flour)
3 tablespoons of chopped almonds.
1 Tbsp Vanilla
First we cut the butter into small squares and take it to the freezer.
In a Bowl we put the sifted flour, make a hole in the center and put the sugar, yeast, water, oil, warm milk and an egg and add the salt on the outside. We unite all the ingredients forming a dough and knead for a few minutes until everything is well integrated and the dough is smooth and does not stick to the hands.
We put the covered dough to rise until doubled in volume. Meanwhile, in a food processor (or by hand) we mix the butter that was in the freezer with the almond flour until we achieve a sandblasting and return it to the cold until we need it.
Once the dough rises, we put a little oil on the work surface and stretch the dough with our fingers until we get a rectangle and less than a centimeter thick, there we put ¾ parts of the butter and almond sandblasting covering the ⅔ parts of the dough, we close in 3 as if we were making a puff pastry, we cover the dough and let it rest for 5 min.
We stretch the dough again with our fingers and spread the chopped almonds on top and close again in three again. The dough will be rectangular and we cut pieces of 2 cm thick each (we should get approximately 10 or 12) We work each of these pieces first stretching them a little and then twisting and closing like making a half moon. Put on a baking sheet with parchment paper. Once they are all armed, let rise covered until they double their volume.
We paint the croissants with egg and vanilla and take to a preheated oven at 400 F or 200C in the middle part of the oven. We cook for 20/25 minutes until they have the desired golden color. Remove and let cool on a rack.
