Fabulous recipe! Turned out fantastic, crispy, exactly as you described. Made it as per recipe but next time, I may add some maldon sea salt flakes prior to baking. And I’ll try a seasoned version as well as a sweetened and cinnamon version. Will update when I do. Thank you for saving my 92 year young mom’s life. Not being overly dramatic but it’s been difficult taking a Scottish-born shortbread-loving woman to the keto side of no sugar, no flour ❤️

To be more eco-friendly and budget friendly, silicone mats work awesome for this. 😀 Sandwich the dough between 2 sheets when rolling. Then use the bottom one to cook it on. Easy peasy. ❤️

As a matter of fact, metal sheet pans can be recycled, silicone mats cannot. Furthermore, silicone mats tend to be more expensive than metal sheet pans, and are prone to tearing and wearing down much faster than metal. Lastly, you NEED a metal sheet pan if you want a crispy cracker, because silicone mats are not made to transfer heat, and you need that heat from a metal surface to make your cracker crispy. The cook knew what she was doing! 😉

I roll my dough on parchment paper with saran wrap on top and use a cute cookie cutter. I bake them at 12 minutes and they don't burn. It's hard to adjust to the taste of an almond cracker because I usually, eat Chickpea crackers. But if I use it as a cookie, I find that I don't crave cookies like I used too, and that's a good thing!

Made them and used a round cookie cutter and used a meat tenderizer to create the scoring (too lazy to use a fork😜) they look beautiful except for the ones I allowed stay for 12 minutes that got burnt, but the next batch did 8 minutes and they were fine. Didn’t add anything yet as I am looking to use them for my salmon cakes so wanted to keep the flavoring neutral. Thanks for this

I would def reccomend adding Rosemary extract or chopped rosemary. Simple mills really knew what they were doing when they added it to their recipie. Also their addition of tapioca starch is important as a binder.

Yes, these are very similar to that. I have some tips on making them sweet here: www.wholesomeyum.com/recipes/paleo-crackers/ Just replace a couple tablespoons of the almond flour with sweetener, and you can add any spices you like (or not).
