@@apurvashanker it's different just in the South too! Andhra food vs Karanataka food vs Tamil Nadu vs Kerala. These guys lack so much in terms of knowledge, it's just mind boggling. My comfort food is Karnataka food with simple lentils and vegetables. It's so incredibly healthy! May be some chapati at night to reduce the carbs, but otherwise it's so incredibly healthy. That is a different level of cooking. It's so complex and refined. To make something that's so basic so delicious and edible is just insane. These guys are looking for flash, with all that cheese, oils, etc. It's so short sighted, simple and lacks that forward thinking. I'm a huge foodie and I cook a lot of different cuisines at home, some of which rival even the best in the industry and it stuns me how these guys are so incredibly narrow minded and stuck in their ways. I genuinely believe that they lack the hardware to process a lot of the different flavors that many people from other parts of the world enjoy.

Almost all Asian countries have some aspect of cooking that is similar to other Asian countries; even on opposite ends of the continent, whether it be similar ingredients, flavors, cooking styles, or the roles of those ingredients in a dish. For example, almost all Asian cuisines have some sort of dish where a saucy protein and vegetables are served over a bed of rice. This is true in Chinese, Indian, Korean, and even many central Asian countries. Likewise, European dishes share some common aspects of cooking; even comparing France to Russia. I don't think it is obtuse to put Asian cuisine into one category in this context. I think on a global scale, there is a lot more variety to be had which was what the guy was looking for. There are 5 other continents to pick from after all... Of course no one would say "skip Europe" because that is the style of cooking that is dominant in Canada so it would just sound weird. He might say something like "I think it's time for more cultural variety", suggesting that their style is TOO familiar.

None of the judges told him to "skip" and cook something else. And I believe the guy who won, pretty much only cooked "great british classics". In the earlier seasons, they seem to want to steer Alvin into the "tough, mean judge" role like Gordon Ramsey, which he can't really do convincingly. In later seasons they let him calm down and be himself and he more naturally falls into the "tough love, snarky judge" role. The three judges end up being more chill and natural in the later seasons and it really sets itself apart from the drama of the US version.

If he didn't admire Alvin in the first place he probably wouldn't be able to accept any criticism at all. He likes to act independent and headstrong to hide how insecure he is about needing the approval of others to the point where he's blinded by his need for validation being fueled by it being how he measures his self-worth, so no one and nothing else matters.
