Baked this day before yesterday for my mom's 1st birthday in Heaven (31st July). She was a baker and her grandchildren looked forward to every birthdays with her cake. This year I had to bake without her supervision (I am not into baking). This cake comes out really good and my niece and nephews devoured it! God bless you all.

I taught Culinary Arts at the Governor's Academy for German, and am SO SO SO SO SO glad to see you using Kirsch. I can't imagine the whipped cream without it (and I say this as a lifelong non-drinker).

I'm from Germany and just made a blackforest cake -Schwarzwälderkirschtorte- last weekend! We make it only a little different: cakes here are rather the 8inch 2 layer version and actually we bake one cake and cut it in2 or 3 layers. I didnt use fresh cherrys because you only have them a very short time in the year, we use sour cherrys in a glass and bring it to a boil with the juice and the starch, the kirsch comes in after the boiling. (And you can keep a little bit juice from the cherrys instead of water for the syrup.) And you said, the whipped cream will not be stable without the whole cherrys: in Germany we use a powder to stabalize cream, its made of one part powdered sugar and one part starch to put in to the cream before whipping (1 teaspoon per 200g cream). This way my cake was firm even 2 days later.

I'm an English teacher. Scales, in the plural, is the common usage of the word in the UK, when referring to weighing instruments. It is also the norm for British bakers to use kitchen scales; cups are imprecise. As is this sentence fragment, "scales when there is more than one"; it should be, "scales when there are more than one".

@Supr Eme "I am a Professor not a student" haha, sure you are! Even if this is true, it's irrelevant. Not to mention your error in a later comment. Smart ass karma! Edit to add your error(s): "Are you back at your Firm... Is it open?. I have depos this coming week! We'll checking on Monday..." I'll let you find them, since you're a professor, shouldn't be too hard for you.

Supr Eme Supr Eme how is that wrong? Lmao they meant John has multiple scales. “I love an American normalizing the use of scales and measurements in grams.” Said American is using multiple scales. It’s not grammatically incorrect. If you are a professor (which I sincerely doubt considering your username) then you need to be fired💀

A trick that I learned from Natasha's Kitchen to stabilize the whipped cream is to add a little instant vanilla pudding mix. I add a heaping tablespoon per pint. This helps keep the structure and prevents the cream from 'weeping'. It's especially useful for cream pies.

Again, love your recipes. One thing that I tried that really made a difference with the whipped cream.... I used Martha Stewart's recipe for "stabilized whipped cream" using a small amount of gelatin. It was outstanding! The cream never deflated and stayed stable in the fridge for several days - no weeping or breaking down.

HinJohn, looks really nice and delicious especially the cake. In Germany we have a complete different version of a Black Forrest Cake. We have 2 chocolate cake layers and the bottom layer is a white shortcrust. The filling is made of pickled cherries, the cherry water is boiled with cherry 🍒 liqueur and corn flower to make it more solid (like a cream) .This is put on each bottom plus a layer of whipped cream and the outside is the same as your except for the ganache where we use also the cutted chocolate. To keep it stable we often put gelantine in the whipped cream. And of course due to the shortcrust our cakes are larger and thinner. Best regards from Germany 🇩🇪 Stefanie

I have made this cake multiple times and it comes out perfect everytime. I wanted to make it for my friends who don't eat eggs. Would you be able to recommendation some alternative?

FYI- If you want to frost other types of cake with whipped cream without the need for “structural cherries” (lol), whipped cream stabilized with gelatin is actually a little more sturdy and it holds up pretty well between layers. Ive never made a three layer cake, so I can’t say if it’ll work with three, but i can say from experience that it will definitely work for a 9” two layer cake if it’s stabilized, especially if you give it time to chill in the fridge before frosting. It also doesn’t melt as easily when pouring on warm ganache. It’s really awesome stuff.

My 25 year old daughter, made this cake. It was good but it broke in half. My first chocolate cake that's didn't sink in the middle or go completely flat. So yay in that. 😆 Lolz going to use this chocolate cake recipe from now on. No matter what I'm making. It turned out very yummy. So thanks 👍

Black forest cake is my favourite cake in the world, and I've only had the pleasure of having a REAL one once, on my 23th birthday. I can't afford the tools and ingredients necessary to prepare this cake correctly, but watching you cook made me so, so, so happy. :)
