Chef Mike! It took me 2 years to get around to trying to make cheesecake, but I always remembered this recipe looked the best. Simply, I severely regret taking 2 years. I'm biased because I love cheesecake, but this might be the best thing I've ever made in my life! I can't thank you enough for this great recipe! P.S. For convenience sake, I did a graham cracker crust, and I don't know if it was that or my crappy oven, but it wasn't making much progress at 300 degrees, so I upped it to 325 and waited until the top was 'barely' browned, but still had a little jiggle. Probably 1 hr at 300 and another hour at 325. It came out so perfectly I might just keep doing it that way! Thanks again!

I've made Juniors cheesecakes several times for very special occasions and it is aways a HIT. I was living in Hawaii at the time, and the man sitting next to me said "who ever made the cheese cake did a great job" I told him I made it from a Juniors recipe and said it did taste just like a Juniors and also said he ate at Juniors almost every day as he was working just across the street from Juniors! I've tried other recipe but always come back to Juniors! Thanks for posting this video as I lost my recipe in the move back to the mainland

I noticed the spring pan was turned upward .. when I made cheesecakes I turned the bottom of the pan upside down to slide it off easier but wrapped the bottom with foil to help keep water out.. it usually works but I wonder if in this case it would change the temperature or an inconsistency of cooking evenly? I will try it and see but it looks beautiful..I will also be trying a strawberry glaze swirled into the cheesecake and see how that turns out
