Junior’s makes the BEST cheesecake in the world, no question. Every time a friend goes to NYC, I always have them go there. I get an immediate “OMG, thank you!” text every time.

Junior's is the best. I have had many NY cheesecakes, but it is absolutely fabulous. When we went there two years ago, I was eating to reverse diabetes, which I did. BUT I gave myself permission to have one slice of Juniors cheesecake. Imagine my surprise to see "diabetic" (with the quotes) cheesecake on their amazing menu. It tasted exactly like my husband's slice of regular cheesecake. They kindly explained to me they used Xylitol as the sweetner. Super worth it.

Junior’s recipe is out there. They sell books with both their restaurant and cheesecake recipes. The main hallmarks are Philadelphia brand cream cheese (made by Kraft), and keep it dense, don’t make it fluffy. Juniors is super dense

Kinda like my reaction when I did my first Junior's Cheesecake. It is really that great and I don't think there's a better cheesecake on this planet.

Looks good. I've had Juniors a ton of times in NY, looks very close, gonna give this a go (even though I can find Juniors frozen at Bakers supermarket lol).

You say to ad corn flour in the States we have corn starch. it is white and looks like flour just wanted to know if we are talking about the same thing ?

There are two 'the best cheesecakes in the world. Junior s as you know however juniors is in Brooklyn and the other is Lindy's which is in NYC. They are similar yet different tasting. Even considering their crusts are different. I like them equally.

So now please return to do your take on ELI's Cheesecake from Chicago AND for those that have a dairy allergy, please try a vegan Oreo cheesecake. Or maybe different toppings or mix-ins like dark chocolate ganache or a banana foster topping!

Interim update (learning as I go). My oven much hotter than I expected so darkening/burned 2/3 of surface. Will play with scraping it off or hiding when ready to serve, perhaps with dollop of whipped cream. Seen another recipe that says leave cake in oven for a further hour after bake. I've taken my straight out and leaving in tin on rack to let cool.

I had it it's good but definitely not "the best". I agree with the New York-style cheesecake as the best in the world, but you can find far better versions at different NYC locations. As an avid cheesecake lover, and trust me I've had my share, if you want a recipe that is exactly like a proper NYC cheesecake, go ahead and make the recipe from Gemma's Cupcakes youtube channel with the blond chick making it. It is identical to the classic NYC and once you use Philadephia, good digestive biscuits, all you have to worry about is to bake it at the right temp, and you get yourself the best cheesecake ever.

Watching again for 4th time (due to nerves as first ever effort at such a challenge). Recipe print out doesn't have vanilla essence in sponge base but is in video. So I've gone with the video. Also realised at last minute don't have cornflour and using online suggested alternatives used 4 nearly 5 tbsps of plain flour. (Online advises double of plain flour as substitute cornflour). Update later!

Thanks for the video. But, 180 C for 65 min made my cake turn into rubber. Nearly uneatable. I don´t see you mentioning temperature for the cake it self. just the sponge. Am I right?

Junior's has two cookbooks, but one is dedicated solely to different types of cheesecakes they make. Let me know if you'd like me to send a copy. I've made their cheesecake before,just to see if I could do it. Since leaving Brooklyn NY for Las Vegas, it's become a must to make my own since there's no junior's here.

Biscuits are standard nowadays, but it seems like different countries and cultures have different bases! I've seen biscuits, pastry and, including this case, sponge cakes. I certainly prefer a crunchy base though!

What type of cream cheese do you use? We dont have american cream cheese in uk

I usually use Philadelphia or any kind of supermarket own-brand cream cheese, as long as it's the original full-fat kind 😊

That slice is too small for me. Your cheese cake would be eaten by me in 1/3. Meaning this cake is only 3 slices for me.

Where a recipe mentions Lemon Flavouring, I thought this implies that use Lemon Juice and not Lemon Zest. I was rather surprised that you used Lemon Zest and not Lemon Juice. Also please can you sort one issue for me that has been bugging me for a while - isn't Citric Acid actually Lemon Juice? Kind regards, Peter Skuce. St Albans. Hertfordshire.

Hi Peter! Yeah I wasn't sure about the extract, I felt a couple of drops of lemon juice might not add much flavour, hence the zest? No idea how authentic that is though! Lemon juice contains citric acid but they aren't the same thing. Lemon juice has a strong flavour and contains liquid, while citric acid is a powder with a strong sour taste but no flavour. :)

The zest would be a better substitution, I think. "Lemon extract" here in the US is made from macerating lemon peels in a neutral spirit, much in the same way you might steep vanilla pods in alcohol to make "vanilla extract." (Or it can be made with alcohol and lemon oil, which is what you're getting by macerating the peels in alcohol.) It is not acidic, so lemon juice would not be a good substitute. A good limoncello would be a decent substitute, but that will also add some extra sweetness (which would not be too bad here.)

Hi HELP!!! I had some issues...Left cheesecake overnight, when taken out of fridge it was slightly wet on top, inside wasn't fluffy but like a thick cream and worst of all the sponge was WET literally wet? Cooked the cheesecake for 1 hour 10 mins with a slight wobble, let it cool before refrigerating any ideas what went wrong?

I know. It's just something I do when baking anything. Been doing it for years and never had a wet cake. Don't know if it helps but it's worth a try...

your springform pan probably wasnt wrapped properly/enough and water seeped in from the bottom. try to double wrap it with the foil

What is the fat percentage grom your heavy Cream ? We don’t have it in Belgium :(

Naomi Eylenbosch hello! British double cream is typically 50% fat, but we also have a kind of cream (whipping cream) around 35% that works. I hope that helps!

Maverick Baking I made it but I used more baking powder. otherwise it was much weaker than yours, I didn't get it so stiff. Hé is amazing !
