I will NEVER look at a packet of noodles the same way again. I love how almost all of the machinery in that factory is on wheels (so basically everything's modular and can be taken in or out depending on where they are in the process). And the different noodle-stretching machines! They absolutely astound me. Someone had to think carefully about each step in the process, how far the noodles needed to be stretched and what motion could do it without breaking them. Thank you so much for sharing this video, and thanks to the company that allowed us an inside look!

Can you imagine what it must have been like before they had all that equipment to help them? Lots of work sure goes into making those noodles that everyone loves so much. ❤️👍🏼

元奈良県在住です。 お正月になると初詣で参いる桜井市三輪神社鳥居の近くにあるお店で三輪そうめんのにゅう麺で冷えた体を温めるのが好きでした。 奈良盆地の冬は乾燥してとても冷え込み、この乾燥した冷気で日干したそうめんは食感がなんとも言えないくらい美味しくいただけました。 同じ関西地区で他に兵庫県の揖保乃糸素麺が有り、これも美味しいのですが、私は三輪そうめんが好きですね。

I have never seen anything like that, my mind is blown🤯 That was SO COOL!! I have SO much respect for these craftsmen and women. They must feel so proud of their work. Amazing what a few bags of flour and some salt water along with hard workers can accomplish right? Amazing skill!

Looks like there is work for all the family, which is really good to see. I wonder how many generations have used the stretching machine, it certainly is different. Thank you so much for showing us the process of how the noodles are made.

I spent an hour of my life watching this and I have 0 regrets. In fact, I'm extremely pleased. So thank you so much for creating this and sharing the fantastic process that goes into these somen noodles. Which I now really want. Because watching food being made makes one hungry, or is that just me?

Fascinating process, and such dedication (and concentration) by the noodle makers! It's extraordinary how the dough gets converted into this wonderful pliable material, which is so consistent that the noodles are all the same thickness at the end! Just amazing! And I say that as someone who tried to make strings from dough to decorate a bread loaf - it's very VERY difficult! Thank you for this video, I thoroughly enjoyed it.

This was insane! Respect. I strongly believe that this whole process has been designed by Leonardo himself. No offence meant but safety wise, there are so many questionable things here: pullies, belts, chains, turning wheels, and all them with no cover/protection whatsoever: very tricky and difficult to imagine what happens if something goes wrong. The level of hazards here is "red". Hygiene wise too there are some questions: all these machines are painted, with oil leaking from all over the place: no stainless steel anywhere. I am not sure why. Anyway: these people and the ones who designed these machines: respect.

I really disagree with all those comments. The workers are experts and understand the machines very well. Sure, all this could be made more compatible with 'western' sensibilities but so much tradition would be lost. I bet the noodles wouldn't taste as good either.

I work for a large food company, all machines are that: made of clever usage of speed, angles, bruches or cuting parts. Some processes are fast, over very slow. I love that.

My grandmother ( from the coastal area of Zhejiang, China) also made these noodles, in basically the same process, and they were made by hand . It is pronounced "su mian" in the dialect. I remember as a child running through the wooden racks where the noodles were drying, and the light falling on my face through the noodles.

Я с огромным восхищением наблюдала за самим процессом производства, это так аутентично, очень здорово. Но меня коробило от условий: работники в обычной одежде, сушка на улице... Если это сохранение традиций, то ок. Дорогой автор, расскажите пожалуйста про эту сторону производства

Удивительно видеть древние станки по сучению и выделки ровницы (текстильная промышленность) в изготовлении лапши (пищевая промышленность). Человек который придумал это должен был видеть оба тех процесса и полностью осознавать то, что он делает. Это не кулинария, это чисто инженерный процесс по выделки нитей из ровницы пластичного материала, но в это же время это слежение за тем, чтобы тесто не потеряло пластичности...... удивительно. Дико трудоемкий процесс, но по всей видимости правильная намотка для сучения рвет тесто. Действительно тонкая работа. День второй - не могу понять что за тех процесс, но явно из обработки церстяных нитей..... стирка чтоли?, Вот растягивание на досках явно что то самобытное из прозводства лапши. Полез смотерть тех процесс для выделки шерстяных нитей. ) Гениально, дико непревычно, но гениально!

When watching this video, I was amazed at the time it took with modern day machinery, it made me keep thinking about how long it must have taken 100 years ago. I know this process was in a factory to make up 1,000’s of bundles in those 2 days, but still the process to make 1 bundle or a 1,000 still is the same. Today’s noodles were all perfect in length and thickness. Imagine 100 years ago, kneading the dough by hand, age it, knead the aged dough into desired size and thickness, several times, aging in between, once that’s done, then the noodles need to be stretched several times to desired length and thickness, drying them, stretch and dry again and finally after 2 days, you can finally eat your wonderful hand made Somen noodles. Amazing dedication to their craft.

@@food_star They all deserve a good meal with their noodles on their birthdays ... I have seen a master do this by hand and now a machine do it and the only difference is the hands here loaded and unloaded the machines otherwise it was as exact as the by hand method ...

@@pmbbmp I have had those and by far beat the store bought name brands in north america ... but these are another level entirely ... I have had both at one time in my life ... and the flavour is like the difference between a jalapeno and ghost chili .. yes the faster hand pulled versions are excellent ... but these are following a master maker in every step of the process ... not just a learned student ...

そうめんってこうやって作られてるんだ…… 機械があるとはいえ手作業がほとんどだし時間もかかるんだなぁ 序盤でもしかして1本を長く細くしてそのままそうめんにするのか!?ってくらい長い作業でぎょっとしました(笑) 手間暇かけて作られたそうめんは凄く綺麗で美味しそうですね✨ これから暑くなってくるしそうめん食べたい〜〜〜〜!

They work smart. They treat the noodles like a real VIP. It's worth every minute watching this from start to finish. There can never be another factory like this because all their equipment are purely fabricated for this factory only, and it takes years to calibrate them to such precision.

Je ne verrais plus les pâtes japonaises de la même façon ! C'est fascinant, je reste sans voix, j'ai envie de voir jusqu'au bout même si c'est long, je n'ai pas vu le temps passer. Je vais d'autant plus les déguster en me souvenant de ce que j'ai découverts. Je me demande depuis quand les Japonais procèdent de cette façon ? qui a inventé ces systèmes et ce protocole ainsi que la composition de la recette ? Mille merci d'avoir partagé cela Je vous souhaite bon courage car votre travail est très dur, très long et très fatigant.

I guess I never really considered the production (professional) of noodles... There were many interesting uses of what appeared to be custom built machines and processes. I hope they are able to package off the trimmings, and find a market for them. And that the employees are welcome to the "irregular" pieces that wouldn't be the final product(s), those are often just as good, and still edible, it would be a nice perk for working there... Thank you for allowing us to see this more traditional production of noodles

Désolé, je ne parle ni anglais ni japonais, mais il existe assez de traducteurs en ligne pour que vous puissiez me lire. Je trouve très intéressant tout ce processus d'étirage, dans un premier temps j'ai l'impression de regarder une tréfilerie de cuivre et dans un second temps des machines textiles, les techniques sont très ingénieuses. Mais j'ai de la peine à comprendre le temps que vous passez à emballer à la main alors qu'une machine pourrait le faire, sauf si c'est une période où justement, vous n'avez plus grand-chose à faire. J'ai beaucoup aimé le reportage ainsi que la qualité des prises de vue. 👍

So einen riesen Aufwand wegen Nudeln??? Die Maschinen sehen aus wie in einer Teppichweberei, sehr interessant. Bei diesen vielen Arbeitsprozessen müssten die Nudelln richtig teuer sein Ist aber gerechtfertigt. Schade das ich sie nicht in Deutschland kaufen kann. Ich würde sie wahnsinnig gerne kosten. Ein toller und spannender Film. Danke 🙏

@@food_star 実のところ私は田舎育ちで、夏になると素麺ばかり食べて いるのです(笑) けれども創ってらっしゃるところを拝見したことは有りませんでした♬ 動画を観てて、もうそのくらいでいいでしょ♪ って言いたくなるほどの手間のかけようで、 浅はかな自分は、顔から火が出るほどのものがありました。手垢のついたような言葉でし か表現できませんけれども、やはり何度観ても、これが匠の技なのだと想うしか術がないほ どの作業現場。野に偉賢有りをまざまざと痛感させられた次第です。ありがとうございました。
