I make Shakshuka so often as it’s a well balanced healthy meal for breakfast, lunch or dinner. Each time I make it, I add a slight twist or variation. It’s a perfect meal on a budget.
This one today is really delicious. I hope you try it and enjoy them as much as I did.
Serves 2-3
2 tablespoons oil
2 tablespoons butter
3 cloves garlic
1 large onion
1 red bell pepper
5-6 medium tomatoes
1 teaspoon cumin seeds
1-2 or 1 teaspoon chilli powder
1 teaspoon paprika
1/2 teaspoon turmeric
1/2 teaspoon dried oregano
1.5 tablespoons tomato paste
3 eggs
1 ball mozzarella cheese (optional)
Cajun spice mix (optional)
Black Pepper to taste
Salt to taste
Chopped parsley
The Cajun spice mix took this dish to another level but it’s absolutely optional.
