Sichuan (四川) cuisine is borderline insanity for most Japanese. Mapo-dofu (麻婆豆腐) is very popular in Japan, but they have to dial it down to meet the tolerance of most Japanese customers. In Sichuan cuisine, they use a lot of Sichuan Peppercorns (花椒) and it basically makes your tongue numb. Mexicans and Koreans are probably the few who can tolerate that level of craziness.
