Cherry Pie
300 g flour
60 g sugar
150 g butter
a pinch of salt
1 egg + 1 yolk
20 g cold water
800 g cherries
2 tbsp starch
120 g sugar
10 g lemon juice
a little water
1. Flour mix with sugar and salt.
2. Add cold butter, cut into cubes and knead crumbs.
3. Pour the mixed egg with yolk, cold water and quickly knead the dough.
4. Divide into 2 parts, one a little more than the other, wrap with film and for an hour in the refrigerator.
5. For the filling, mix the cherries with dry ingredients, water and lemon juice.
6. Stirring bring to a boil.
7. Pour into a container and let cool.
8. We take the dough out of the refrigerator and roll out the layer to the size of a little more shape.
9. Form sprinkle with flour and shift the dough.
10. Pinch the edge of the dough to the form, and cut off the rest.
11. From the rest of the dough, too, roll out the layer and cut into strips about 1.5-2 cm wide.
12. Pour the cooled filling on the dough and make a mesh on top of the dough strips. If desired, you can cover the dough with a layer, or put a pigtail.
13. Sprinkle the cake with sugar and put it to bake when 180ʼС on top/bottom until golden brown.
14. Let it cool, freeze well and only then cut.
