Hey, Just want to say, I followed your recipe, and the cake turned out great. I used unsweeten oat milk so it didn't curdle as well as your video showed but the cake turned out fine. Thanks for sharing!

I'm not vegan but I've been put in charge of making my sister-in-laws wedding cake and I'm going to try modifying your recipe to fit the flavor they decided on (Cardamom Chai Cake, ginger orange marmalade filling, and a spiced buttercream) I'm still super new to vegan baking so I'm excited to try your recipe!

It has bread consistency. Moist and dense. Not spongy and light. Followed the recipe entirely. My baking soda and powder are fresh. Used vegan butter.

Was everything room temp? You may have over mixed and lost aeration. I have made this cake 3 times now (I actually used it for my wedding cake!) and it came out beautifully. But I also added more baking powder (1 tbsp in total) and I split it between three 8” tins. Also I used apple sauce instead of yoghurt. It’s not the lightest cake around, it is a little crumbly, but it’s not dense like bread. I find baking really is trial and error. If you used a different brand of product, your oven temp is slightly off, you over or under mix, or you dare to inhale in the same room, your result may be different to someone else.

For vegan buttermilk, soy milk and almond milk work best, but I still love the cake with coconut and/or oat milk!! :)

Yes you can! It will definitely have a coconut flavor in the cake, but if you're okay with that, then that's fine!! :)

You can use refined coconut oil. It doesn't have that coconut flavor

Was really hopeful but this was a fail for me. I think it may be the Bob's 1 to 1 flour but the aftertaste is nasty. It was dense too. :(

The recipe required a lot of vegan butter, is that healthy? Even vegan butters have total saturated fat.
