Your modern video style has a lot finesse to it so seeing these classic recipes brought into 2023 and consolidated just feels right. I prefer chocolate over plain vanilla for pretty much anything but I've actually made your standard-vanilla and yellow cakes before a long while ago and they definitely hit the spot - even without any frosting (these were back before my appliance days).

thank you Gretchen,I made the vanilla cake with the American buttercream , I used vanilla soy creamer instead of vanilla soy milk, I put a little egg replacer in too, baked 3 8 inch rounds ,7 inch round cake pans are hard to find ,8 inch pans worked fine. i used the aluminum disposable ones, I used all earth balance soy free sticks for the buttercream. and extra vanilla, came out perfect and the crowd raved, thanks for this easy recipe look forward to trying your others when I need a vegan cake, wish i could post a picture of it

I don't understand the sifting part. Do we sift before we measure the ingredients or after? Doesn't sifting change the volume? I'm here to learn from one of the best bakers on KZbin. TY

Good question and yes, you are correct. When you are using cups measure, you will almost always get a different result, which is why I always recommend to weigh your ingredients with a scale sifted or not sifted air does not weigh anything so it won’t change the weight measure. But you are correct it would change the cups volume measure every time!! That said, for people who still won’t use the scale I recommend the fluffing and scooping method for measuring volume/cups this means fluffing up your bag/bowl flour & scooping it in.

@@GretchensVeganBakery Just read it. Well done. Every word resonated with me because my own journey was similar. I do grapple with a few questions, which I wonder how you and/or others reconcile: 1. What to feed our pet cats? 2. I have friends who live on a farm with egg laying chickens. The chickens aren’t kept in cages, are free to roam, and appear to be living happy lives. Would you have a problem with eating eggs under those conditions? 3. Given that we vegans are pro animal life, shouldn’t that extend to being pro human life too? Most of my fellow vegans are pro-abortion, even later term abortion, which seems like a disturbing disconnect to me. Thanks for your thoughts!

Yes all good questions! I also think the same with my cats, as we (*the figurative"we" for 1000's of years) have domesticated pets to the point they don't have to fend for themselves anymore in a natural setting. I have only recently come to the understanding of why many staunch vegans say "no pets!" I used to not understand that at all, and now I do get it , but I am still not willing to adhere. I have never bought my pets and the 5 I have now I've taken in from dire situations and will always do so when it comes to that. The pet food thing though, yeah~ I know..... I've also only recently come to understand the backyard chicken argument too. I never really thought too much about it, since going vegan and while I was an avid egg eater in my past life (LOL) once I connected the "chicken menstrual period" reality in conjunction with not having eaten an egg in almost 8 years, I have no desire to eat eggs at this point no matter how happy the chickens are to give up their eggs. But I think what I have come to understand about the backyard chicken conundrum is that it all comes down to using these animals as commodity. So the chicken breeding business stays in business if the backyard chicken demand is there. And the cycle continues. The factory farmed cows/pigs/chickens etc ... all stay in business if the demand is there. And the cycle continues. No different than the pet store stays in business if the demand for bred dogs & cats for pets is there. Last I believe that everyone here is on levels. Levels of learning and levels of NOT learning haha, in which case we get to come back and do it again until we "get it" What I know now, I did not know 10 years ago or even 10 days ago in some cases. It's been a slow process of opening my heart and unlearning everything I was taught as "normal and tradition" and listening to my heart. When I went vegan and realized the value of life through the animals that I hold so dear, and even such a small life as an ant! I then became a kinder person to humans. I am a firm believer that you cannot speak of peace while you have death on your plate. I also believe that life begins at conception, so yes that certainly is a disturbing disconnect. Again.... levels of thought and awakening. I can't say I would have said the same answer myself 20 years ago? Bottom line though, In my opinion it all has to start with looking deep inside ourselves and getting clear on our own trauma first~ that has gotten us to where we are right now, bogus belief systems that have been instilled into us about how we feel about ourselves and the world in general, and then getting in touch with the one truth of this reality and that is without a doubt Nothing more or less than LOVE. There are so many hurt people walking around that it all seems overwhelming at times to even look at let alone be a part of, but I know that Love trumps all and when you can truly operate from that place that is all you are here to do. I am still working on that every single day believe me, in a world that is designed to make us all hate~~ the challenge is real. xx

I love chocolate cake. I'm getting older now so I've been using carob instead. I can digest that better. And I think I'm doing something wrong with the vanilla cake. I'm using walmarts brand of soy milk and the cake never smells right 😭 I'm going to try another brand this week though.

So I’ve been using country crock lately as I haven’t decided what I like better if it’s the country crock one or the Earth balance? I want to say the Earth balance butter has more salt in it not sure though? Either way, though, regardless of which kind I use I always add a stick of Crisco shortening and it seems to always whip up really nice and fluffy very white and I’m not having complaints from anybody. What do you think about adding the shortening to the butter?

Yes Earth Balance can be salty so I often leave out (or adjust the salt) I almost never add shortening to my buttercreams anymore. If I do (or rather when i DID) It would be sweetex brand. Which is hard to come by for home bakers since it is a commercial brand sold in 50lb cubes. But as long as it is HiRatio it is going to be better for icings. Crisco (*in my opinion) will leave a heavy greasy mouth feel, but hey~ If YOU love it! by all means! :)

I've heard of Sponge Pudding which is made from cake scraps or left over cakes. I would imagine that the scraps that you cut off and save could be made into a Sponge Pudding!? Eh Hem....HInt hint! How would Gretchen make a vegan Sponge pudding? I foresee a new video now. LOL :-P

LOL :P I'll try to describe what I saw (in rough description) and as many of the ingredients that I can remember. Maybe you'll be able to make more sense of it and know what I'm talking about or what more needs to be done. I know just enought ot get it all wrong. LOL Here are some of the ingredients that I can remember: Chocolate Sponge Pudding -Cake scraps -Semi-sweet chocolate -vanilla -"Butter" -"Milk" -"Eggs" -"Heavy Cream" - (to serve) The Sponge cake was put into dariole molds and baked in a steam bath. But I'm sure it can be made in one big bowl or baking dish or whatever. This one I saw was served with a drizzle of chocolate sauce over top To continue, I was so fascinated and my friend told me you can take Sponge Pudding in all kinds of directions. She said she's made Lemon Sponge pudding with lemon curd on top, Date sponge pudding with a date syrup glaze on top, Raspberry Sponge pudding with Raspberry Coulis on top. Strawberry sponge pudding... So it sounds like someone is only limited by their imagination when making them. So with my horrible description, Good luck! LOL :P

Okay, it was bothering me that I couldn't be more helpful in my description, so I turned to ChatGPT and had it create a recipe for me to help out my description. Chat GPT never fails. Here's what "Ol' Faithful" came up with. I'm sure it can be veganized with non-dairy milk, "Chia/Flax eggs" or tofu as the egg and vegan butter. However, It created what I couldn't and here we go: "Your description of ingredients sounds like a great way to repurpose cake scraps or uneaten cake to create a new decadent desert. Let's create a Chocolate Sponge Pudding with your given ingredients. Chocolate Sponge Pudding Ingredients: 1 1/2 cups cake scraps or leftover cake, crumbled 200g semi-sweet chocolate, chopped 1 teaspoon vanilla extract 1/2 cup (1 stick) unsalted butter 1 cup milk 3 large eggs Heavy cream (for serving) Instructions: Preheat the Oven: Preheat your oven to 325°F (160°C). Grease a baking dish or individual ramekins for baking the pudding. Prepare Cake Scraps: If your cake scraps are not already crumbled, break them into small pieces and set aside. I think it meant to make whipped cream and I forgot to tell ChatGPT to make a chocolate sauce to drizzle on top of each serving. All in all, I think this is what I was trying to explain.
