I was charged a monthly fee without knowing for when I signed up for this. How to I change from professional to individual. I do not want to pay monthly only per product.

Go to setting then go account info. You see the Account Overview option. Click on this. On the left side you'll see "Selling on Amazon" Click on this Now you can switch your account from professional to individual.

I see im auto enrolled in Mexico. I’m looking at remote fulfilment / manage listings… I see a list of our asins but they all say that they can’t create an offer for this asin in Mexico. I then check in Manage Inventory and for Mexico it says inactive. How do I activate these products for Mexico?

You can go to your USA listing click on the edit button of ASIN check if ASIN is closed from the backend. If it's inactive you can change it from there.
