Cool video. However , there is something you got wrong: you guys said that the firing up (sapecado) activates enzymes in the leaves, but its quite the opposite, the heat inactivates destroys certain enzymes preventing further oxidation, and bursts cell walls speeding the drying of the leaf.

I can drink gallons of mate and it makes me more zen and relaxed. I could sleep on it. so, I mix Argentinian Mate with small amounts of coffee in a french press. It is a dynamic duo. I feel fucking great.

You can get green mate that isn’t prepared with smoke from Mate Factor. I’ve always used them. Guayaki might have a green version too, though.

Just watched a very interesting video on this subject. Getting the green version could be a better alternative. But the studies I've seen say it's much more important to heat the water to the right temperature. If the water is too hot it can slowly damage the esophagus causing an increased chance of cancer.

Mate factor is delicious, and totally different from any traditional type of mate, but guayaki used to produce an air dried yerba mate called San Mateo, you can still find some from people online

Yerba Mate is originary from Paraguay. Not from the Amazon. Ilex paraguayensis is the scientific name

I don't know. Some of those farms could be exploiting workers or using pesticides. Isn't it better to buy fair trade because you know the farmers and workers are making a sustainable wage?
