CK is one of those games I've always wanted to get into, and I know I'll love it, but there's just so many buttons and things that's kinda overwhelming to learn

I was the same way! CK3 is very newb-friendly (...right now... more complex game mechanics incoming, which is great, but this would be the time to get in on the ground floor). I'm a super casual gamer, mostly into RPGs and simple tactics/puzzle games. I found CK3 very enjoyable from the get-go. Probably helps that I like to read and explore menus and go slow? But you can definitely crank up the speed and just enjoy the ensuing disasters/weirdness right away too, if you're less of a scaredycat. :)

I once did a custom viking character in Ironman mode. I made him an expert strategist so that he could go out to conquer and establish Norway. He went from a random count to a King in less that half a lifetime. The latter half of his lifetime he joined wars and fought with his allies. But somehow he also was immensely pious. I have no idea how but he eventually became a paragon of virtue. It was crazy.

I downloaded a mod that lets you further customize your religion and made all the traits of my character virtuous. It cost over 6000 piety even with the 50% off but afterwards my piety was +50 per month and every character of my new religion has +100 opinion of me no matter what I do. The virtuous traits are also congenital so even my heirs get that opinion as long as I make sure the right one inherits. The rest of the world almost all have -100 opinion but it doesn't matter because my empire is so big and I never have rebellions because all my vassals view me as a living god. I've almost reestablished the roman empire from starting with a single county and it's only been 120 years.
