Actually we used to put Dry fruits , cardamom and Resin during 90% of cooked kheer and Steer for a while until kheer's rice cooked to 100%. Also we don't roast Dryfruits and resin because it have bad smell after roasting it.

Your Grand babies are adorable. We Indians love it more when the young ones love Indian food. That is the real stamp of approval. And the tan is a good thing. Some parts of India use cane or palm jaggery for that, and some of us caramelise the sugar to get the tinge. All in all. Good work. Much love :)

You should add charoli(chironji), California almond (cut in chips),akhrot(apricot)..but all dry fruits add in khir when khir is 50%ready... saffron also use for nice flavor...

Next time when you make this kheer again instead of basmati use arwa chawal caz that's the rice traditionally used for making kheer in Indian homes. I really appreciate your hardwork though😇😇

hi sir ...thanks for appriciating this god loving Kheer with your family. a small suggestion pls try out any small grain flavourful rice (Govind Bhog or Ambe More) or a rissoto rice pre soaked instade of basmiti rice and cook it in heavy bottom pan instade of instant pot in low flame (use a wooden spatula). it will be more creamy and add 50% ghee roasted nuts, resins and cardimum & rose petles or saffron to the kheer 10minitues to complition. Dont worry about the colour, as you have used the organic sugar . [cooking time 30 to 40minutes dipend upon the rice texture you want (creamy and dence), you can also add condence milk 2Tbs to the kheer while adding the 50% nuts ] Hope you enjoy it

you can make another variety of kheer with dry shev (noodles, made of wheat) or sev using the same ingredients and same methods. only you have to fry it in tup (ghee) first. if you guys are interested ask for wheat shev or sev for kheer in an indian grocery market.

Once finished all a little pinch of kesar.... kheer Also served cold (chilled)....Thanks

Enjoyed watching you in action. Change of color is natural. And the roasted nuts, what we do in here is to add them to the Kheer and cook for the last five minutes in low flame. Try it and feel the change yourself.

It must be cane sugar due to which kheer is not looking white. My aunt puts date jaggery which give almondy colour to the kheer.

You can store this in the fridge to have a night snack. It can be too good in hot warm and chilled or cool versions. You can add rose essence or rise water. You can try pressure cooking the rice and milk to give it a special evaporated or condensed milk flavor. Smoky milk flavor. A smaller bowl or a cup of rice kheer will be enough. That serving is huge. Take care and you are kind.

Love from India for your family, specially for your Sweet Grand Kids. Your Chawal Kheer (Rice Pudding) must be tasty. Please try making it on the stovee at lowest flame and keep on steering while heating the milk and please add 1/2 Table Spoon of custard powder once the milk is reduced to 60%. Also, add sugar 2 minutes before turning off the flame of stove. Trust me, you will get an Awesome Kheer.

The beige color is the right color. No matter whether you add saffron or not, properly made kheer is beige in colour. If it is white, it is not fully done and will taste somewhat like cooked rice soaked in milk.

You should wash the rice in water to remove excess starch and also soak it in little water for some time before cooking. This softens the grains.

Generally beigish color is OK if you use milk solids (or Khoa powder) or Milkmaid liquid (it's concentrated sweetened milk). So in this case, it is the sugar.

I just Overdosed on cuteness. BTW, Rice Kheer is best when you boil the rice in a wok/pan/karahi stirring frequently for at least one hour (traditional method) and instead of sugar, traditional kheer uses kajur gur (date jaggary or khajoor's gur has a wonderful flavor, but is expensive and not found easily these days ) . In Bengali kheer, the resins are added in the boiling milk , which must be reduced to at least half for the kheer to taste good. The modern kitchen trick to make fast kheer is to put some condensed milk (brown&polson, minutemaid etc) . If the milk is runny, the kheer is not going to taste nice. It must be thickened properly. Both green cardamom and black cardamom should be used, and optionally some saffron or a drop of kewra extract. (or cheaper artificial essence).

Nice Try Sir.. But Originally Raisin dry fruits etc are added at last when it's put on slow cooikng till it gets thicker at last minute. .. that makes it awesome. Color changed because u fried raisins and dryfruits in ghee .. otherwise it's always in white color and served chilled. #IndiCurious
