grew up in the restaurant industry … ( 35 years ). my first teacher was my own, “father” … not a really good teacher, ( period ). so i took it upon myself to teach myself how to cook properly … by watch programs with ms. Julia Child and mr. I almost do the jerk chicken this way, in Jamaica they use pimenta wood, which I cant get ahold of so I use the berries from the pimenta tree(allspice) soak it wrap it with tin foil poke a few holes and add it to the grill..adds a new depth

You are suppose to score the chicken pieces to allow the jerk seasoning to penetrate the meat. Very similar to how tandoori chicken is marinated.

the skin helps it to retain the juices and keep the meat underneath from getting dried and tough. I usually put the seasoning under the skin, poke in near the bone and get the season in there too as well as around. I want my joint seasoned to the bone fuh truth! 😂🤣

That jerk chicken looks delicious! Also, I have had a stainless steel coiled grill brush for 3 years so far, and I think it works amazing! Yes, you do have to maneuver it just like turning the Weber bristle brush on its side to get between grill grates, but the coiled grill brush always gives me peace of mind and a clean grill.

You are correct but we can't always get them in the USA so we will occasionally use habaneros. The flavor isn't the same though

None of the grill brushes reviewed have a water reservoir. I have a grill brush that has a water reservoir that is the absolute best at cleaning the grill, due to the steaming of the hot grate removing all the stuff from the grill and also seasoning at the same time.

I make jerk wings all the time so why not do both? Also a killer sauce to toss jerk wings in is half cup brown sugar quarter cup dijon mustard punch of allspice and quarter cup very hot water.

Definitely try jerk seasoned wings. Just marinate the wings in a jerk paste and use pimento wood, the pimento tree is where allspice berries grow, when you smoke the wings.

@@farmerbob4554 We are some of the only Americans who can sing BOTH anthems having cut our teeth on Sabre's games! I miss the old street-hockey days of my youth! I was lucky because everybody wanted me as the goalie because in all of that equipment, I was fearless! Never let a puck go by me! Great to hear!!!

Oh snap I always to say “Juk” meaning to poke but didn’t know it was related to Jerk. I’m Barbadian 🇧🇧-American and sometimes would speak some Bajan Creole (broken english) words. I aslo met a Panamanian 🇵🇦 that would say Juk too and that’s when we realised it wasn’t unique to our own countries.

The pumice stone works pretty well, too, and is much cheaper than that wood scraper.

Grill grate cleaning tip... flip grate over between cooks. Light your fire let it get hot then scrub with any metal brush. But alternating sides of the grate makes cleaning easier

Metal bristle grill brushes are extremely dangerous. Most deteriorate quickly and the bristles can dislodge. My family member almost died from ingesting a metal shard from a brush. Avoid these at all costs. Was glad the issue was at least discussed, the seriousness was minimized though.

I have seen the xrays of metal bristles youre talking about! I still use a metal brush on my gas grill because i like how they remove bbq sauce and marinades that have sugar, but i rinse my grates because of those xrays! I also replace my brush annually because nothing is made to last anymore. Not even my nylon brush for my cheater smoker.

I have a piece of 2x3 untreated pine that I use to clean my grates. Both bristle and coil brushes eventually deteriorated and started leaving fragments of metal on my grates and in my grill.

I get the impression that the jerk marinate was too spicy, based on Julia's reaction to the smell of the blended marinate and their taking only one bite of the chicken. The chicken looked delicious. Wouldn't want my mouth on fire to distract from the overall flavor of the chicken, so personally I would use only 1/2 of a habanero. Nothing worse than food that is over spiced.

Actually ladies,Jerk Chicken seasoning was invented by the Arawak/Taino Indians 2500 years ago. Not to discredit the Maroons, but they only adapted the jerking seasoning chicken technique down the line being taught. Jerk Seasoning didn't come from or invented by African Slaves even though some blogs says it was conceived by theM.. All this info is on the web ladies.

Yikes… that seasoning is too light in color, too runny and missing clove & fresh ginger. I mean I bet it tastes good but you need those extra flavors. And if you can find scotch bonnet peppers use them in place of habanero. 👌🏽

If you need a long smoke, do two packets of wood chips. One unsoaked to start smoking right away and one soaked to dry out and start smoking.

@@christopherestewart in Meatheads book, he suggests an actual tin of chips in water, so that the water evaporates as your dry chips smoke in another container, then the other will be ready to go once dry, probably more effective that just barely wet chips.

Rachel I’m Jamaican, you can eliminate the sugar if you want, sugar and slat helps to Preserve the meat in those days when they used to do jerk they had no refrigerators so that is why they added the sugar to help to preserve the meat so you can take out the sugar and add salt to taste. Also we use Jamaican Jamaican Lager beer to smoke it.
