Out of curiosity, does changing an amiibo’s costume and nickname mid-training change how they play?

I don't believe it does but I'm not entirely certain. Your best bet would be joining the Discord server and asking there. The link to that is included in the description of this video.

It does not. The bits where moves are stored are different from the bits where things like name and costume are.
