Becky, you’ve inspired my wife and I to stop eating out as much. We call our meal prepping “Beckying”, but on a smaller scale. Our meals are so much more flavorful and filling than anything we could have ordered out. I was pre-diabetic before, now I’m down 7 lbs and my A1C is back to normal. THANK YOU! 🙏🏾 ❤

Great job on the a1c, my hubby was on metformin and insulin, we went keto, cut the carbs and sugar and became intermittent fasters . Everything is home cooked and mostly home raised. He lost 50 lbs, off all meds and is the docs poster child. Funny how when you cut out certain things from your diet and add others it can make such a positive difference.

Does anyone else save onion skins and carrot peelings for stock making? I keep a bag in my freezer of veggie peelings and use them when I make stock. It enhances the flavor and the color. Love Becky's vlogs.

If you add a few tablespoons of apple cider vinegar to your boiling bones, it helps to encourage the bones to give up more of their goodness.

@@Paperista it’s a small amount. A couple tablespoons. I don’t notice a flavor. The alcohol cooks out. It’s not necessary, but it does help break down the bones and draws out the marrow/collagen.

Hey girl! Quick tip! So I’m a baker & I often, to save time, will use small fold-up rechargeable fans to quickly cool my cookies so I can frost them quicker. Of course you need to keep the fans clean & don’t leave them on long enough to dry things out. But for tasks like when you wanted to pull the meat off of those bones, or cool cake layers..it’s really great! Thanks for being YOU! ❤

I used to cook a lot when I was younger and was working. I had to retire at 53 as I am now disabled. I’m unable to stand and have a bum right arm. I live vicariously through you. You do projects I would love to do. I hope you know how much you mean to all of us Thank You 🌸🌼🌺

I can completely relate! I’m disabled as well. I live in constant pain and have limited use of my left arm, but love to bake! I push through the pain and spend hours at a time in the kitchen. Of course, by the time I’m done, I can’t walk and my legs look like sausages!! lol!

I can relate as well. I'm not disabled but have limited use of both arms and back issues. Plus recently diagnosed as type 1 diabetes (insulin dependent) life throws all the wrenches at us but I cook/prep in stages. I can't do all that Becky does in one day but I can do a little. I love watching Becky cook and meal prep - you can tell she loves it! So inspiring!

Perfect timing for this video! In all my 69 years, I have never made (or had, I don't think) homemade pot pie. Just a few days ago, I had delivered from Amazon, some individual pot pot pans. Since it's just me these days, I didn't want to make big ones. And, just this morning, I got two big packages of leg quarters to roast, pick the meat from, and turn the bones into bone broth. It's like you read my mind, ahead of time. lol I have already printed out the recipe for the pie, and for the rolls. Thanks for all you do, Sweetie. You are constantly teaching this old lady new things. ❤

Good morning Becky! I, too, have long hair. Always wear it up. Everyone always compliments me when I wear it down. As it gets in my way when working and or cooking I don't wear it down often. Your hair is beautiful, and it is good to see it down.

When I was a kid, back in the 60s, we had a butcher / grocery store in town where my mom bought meat and groceries. The butcher always saved the chicken backs...mom used those for chicken and dumplings....and wings...no one ever bought the wings, they were usually trimmed and thrown out. This also reminds me that people who lived in town had milk delivered as well. So much has changed in 60 yrs and I miss those days.

I'm 70, and I, too, remember the good old days. We used to go to the candy store and buy half penny candy. I miss the quiet slowness, the neighbors who helped each other. The freedom to play and feel safe.

Becky sometimes how I keep my jars warm is put them in the oven on a low temp until they are ready to be filled. Works well for me, try it!😊

Hi Becky, a few years ago Martha Stewart made snowflake marshmallows to drop on top of hot cocoa. She used 1” and 2” snowflake cookie cutters (sprayed with oil/cooking spray). I love your idea to freeze dry your marshmallows and thought freeze dried shapes could be a wonderful treat or gift during the holidays

If your butter is frozen it's best to grate it before mixing with dry ingredients, it's really good that way

I do, too! I even enjoyed seeing her start off by folding her towels. So many would cut that or wait to record after that, but it's what gives Becky's videos a special feeling. It's like spending the day with your sister or cousin or best friend!

Thanks to you, I bought a large freeze dryer and having great fun using it for my garden harvest. I have done most of my herbs, green beans, candy, fruit and the best thing yet has been sweet corn. I blanched the corn cobs, peeled off the kernels and freeze dried 12 trays so far. No salt, no sugar, no anything and they are fantastic as a snack. Might rehydrate and fry in butter. Anyway, thanks for all your experiments. I’ve learned so much. Yes, I also bought that electric pressure canner and love that too. Electric water bath canner with the spigot is another ‘must have’. I set it right by the sink. No more dragging kettles of water around.

Hi Becky, im from Australia and have not long found your channel through my searches for gardening ideas, and Im now hooked on your cooking days and recipes. Made one last night for dinner and making a pasta salad tonight to go with some grilled salmon. So many things you do I cannot wait to try however I currently have a tiny kitchen in our one bedroom cottage whilst we renovate our large house and I get my dream kitchen. Thank you for inspiring me to cook even in my dodgy tiny horrid kitchen!

I have now watched your videos for about 3 years. I love the way you just "go with it" sometimes. Regardless of the outcome. We should all practice that non-judgmental attitude towards ourselves when experimenting on cooking. Sometimes the best outcomes are the unexpected. I admire your tenacity lil lady. Always up for an adventure inside and outside the kitchen. I am an avid canner and have been for years. Make lots of pickles and so much more, sharing with friends, and selling to local and non-local visitors to our area her in VT. It's a great way to focus and burn off my stress from the world. Hello Beckie. When I make broth I put the bones/ backs in my electric roasting pan and turn it way up and roast the bones in there, then add the rest of the ingredients, turn the roaster down when it comes to boil, and simmer the broth right in the roaster. It saves some dishes.

I use a cheap coffee grinder from the big box store as a spice grinder. It’s small, electric and fits in the cabinet.

I just saw you put your lids in the dishwasher - those are actually better hand washing as the heat in the dishwasher can compromise the sealing compound around the edges.

BTW: I have an Presto Electric Canner and it through a code on the screen when I was trying to can corn. I called the 800 number and they are going to send me a new canner. All I have to do is send them back my lid. I talked to a lady named Sheryl and she was delightful and helpful!! Great Customer Service!! I love the canner and I am really glad I bought the Presto version!!

Be proud of yourself and keep going! You got this! This dutch girl LOVES your bonket. I need to share my families recipe with you :) I lost my mom last year to cancer ( I was 47 and she was only 72) she was (is with all the recipe books I have from all of my grandmothers on both dutch sides) my cooking inspiration. I have friends who live in Eugene, it’s a beautiful part of the state! Their photos are stunning, I miss West coast sunsets so much. I’m near Toronto, but I only emigrated from Lanarkshire, Scotland about 5 years ago. I lost both my parents before I emigrated, but my two kids are still home, they’re only 12.5 & 14.

On BIG batch pie crust days I use my gravy fat separator for the iced water. It saves me time. I don't have to fight with the cubes!

Hi Becky, when I have roasted whole chickens and removed all of the meat we need I return the whole chicken to the oven uncovered, roast the carcass for another 30 minutes. This really intensifies the flavour. Then you can keep in the fridge up to two days and make your stock. Or freeze when food and save a few frozen until you have enough for a pan full.

Hi Becky, you always put a smile on my face and we sure need that! 😊💕 As a suggestion, if you take your frozen butter and allow the processor to process it into smaller pieces that’s really helpful before you add the other ingredients. My grandmother always used lard in her pie crust. I know you have a lot of lard you could use instead of butter. Love all your videos.

Thank you for using your electric pressure canner. Great tip of filling jars of all the stock you made & replacing the hot water with room temperature water, going to try this next time I make chicken broth

I love giving my dog crunchy food. It cracks me up to watch her eat it. So fun! I just processed tomatoes, cucumbers into pickles, and froze green beans from my garden. So rewarding!

🐞O.M.G. That Pot Pie looked amazing!!! I tried freeze dried Milk Duds from a friend and they were unbelievably delish!! Thank goodness I don't have a freeze dryer because I would be snacking on Milk Duds all day long..lol🤗

You should check out Markelly Farms. They just did a video on freeze drying. They froze broth into an 8 block form & then freeze dried them. Their 2gal of broth was able to be reduced to much less. They tried to reconstitute & did 3 parts water to 1 part "bullion". Would save a lot of extra space for other harvested items... 🤔

Hi Becky! I want to thank you for the idea of using veggie scraps to add in my chicken broth. Saving the bits in a freezer bag has helped me make the best broth for my family. I only use rotisserie chicken carcasses, gives such a beautiful depth of flavor and comes in handy when fasting or when recovering from illnesses. Thank you so much for being my “kitchen friend” 😊

If you’re going to use frozen butter, start with the shredder blade and shred it first then switch over blades and add everything else.
