LOL. you should try hydronic gardening. You can even do it in the corner of your living room. Start with lettuce and mustard greens. Each in at least 2 gallons of water. You’ll be eating them in a month. When the grid gets knocked out, and it will be since it’s being hit hundreds of times already as the terrorists look for the sweet spot, if you can’t grow food you aren’t going to survive.

Becky I hope you read this. The one thing I absolutely love about your cooking is that you SEASON your food. You are not shy about seasoning every component of your dishes. Quite alot of people would not have thought it necessary to season those chicken breasts because would be put in the casserole. Thank you for doing that. I was eating a grilled chicken Caesar salad while I watched your video. The chicken was not seasoned and was the driest I have ever eaten. In addition the caesar dressing is too thick and missing something... 😢. I spent $18 for that inedible salad. 😮 Thank you for not being afraid to use seasonings. 😊

I make my turkey stuffing with lots of. Poultry seasoning and extra sage that’s how my mother made it. My mother is now gone and now my mother-in-law comes over and I don’t think she really likes it. Oh well, my children love it.

Becky, try making homemade Boursin! 2 garlic cloves 8 ounces butter, at room temperature 16 ounces cream cheese, at room temperature 3 tablespoons grated parmesan cheese (the real stuff, and freshly-grated) 1 tablespoon fresh dill, minced or 1 teaspoon dried dill weed, crumbled 1⁄2 teaspoon dried marjoram 1⁄2 teaspoon basil 1⁄2 teaspoon chives 1⁄2 teaspoon black pepper 1⁄4 teaspoon dried thyme, crumbled 2 tablespoons minced fresh parsley Mix butter and cream cheese, add in other ingredients. I freeze mine in silicone muffin pans. I get at least 6 out of this. I've also added different spices and Feta. Pennies on the dollar

Broth and stock have both gone up in price so much in the last year! I'm so thankful you taught us all how easy it is to make chicken broth and stock. I buy a cheap rotisserie chicken from Sams then store the bones and my veggie cut offs (in the freezer) until I'm ready to make a big batch of broth. I basically save a huge amount of money every month from things I used to just toss out. 💙

Becky,Congratulations!!!!! You are one of my favorite KZbinrs. I spent my life cooking every day,canning,dehydrating and smoking food. Unfortunately,I have outlived many family members and friends,so I don’t have many to cook for anymore. I have one sister-in-law who still works part time as a hospice nurse. She also was a fantastic cook. While watching you a few days ago I had an AH-HA moment. Why couldn’t I fix some of your casseroles, divide them into 1/4ths,freeze them and give my sis 2,keep 2. Then when I am hungry or she is… we can pop these in the oven and have real food that we have cooked for our families (when we had them). She and I (and thousands of other widows) are just lost with no one to cook for. We end up eating a sandwich,or drinking a protein shake instead of nutritious foods. It is just too taxing to cook for one….. Thanks Becky and again Congrats!!!!

Honestly I've learned so much from all my homesteading friends over the past few years and gained so many skills that I either had no experience or little confidence to do for myself but honestly the most valuable to me is the confidence to make substitutions - and the freedom of well if it doesn't work out it's only one recipe and I've learned something- about textures, cooking processes, timing, spice combo, etc. With very little waste. I don't like wasting food but a learning experience is never a waste even if there is a small sacrifice in food products.

I am not a natural cook, but I am now making 3 meals a day for my daughter and grandson (and myself, of course) - trying to help my daughter get her A1C down to acceptable levels, but she is craving comfort foods... and I think with a few tweaks, these recipes would be DELICIOUS!!

I made the chicken pot pie casserole and used fresh veggies. I added sage as well as thyme, salt and pepper. I did not have enough milk, but had dried buttermilk. I doubled the batch and used one cup of buttermilk made from powdered and 2 cups of homemade chicken broth. Instead of biscuits, I’m going to put tater tots and cheese on the top when I serve it tonight. Another recipe I looked at said 30 to 35 minutes with frozen tater tots on top, but these are mini tots. So I will bake for less time. Without that inspiration, I had no idea what I was making for dinner tonight. Thank you, Becky! 🙌🏼

I have made your Boursin pasta sauce before, what I do differently is let it get a little charred in the oven and then blitz it in a blender. Then pour over cooked pasta with chicken or salmon. The charring gives it a lovely smokiness. I’ve even done it with meatballs. So good. I make it in bulk and freeze pots of it at a time.

Love how you are so adaptable and organized. So easy it is to make our own roux and benefit from your own sauce not the processed. Oh and nice nails. It all looked delicious. If the taste of the sauce is so good with the gnocchi, extra sauce is not a disadvantage especially if you add more veg. Really enjoyed every minute of your video. Thank you.

I’m in the UK and had never heard of casseroles using soup as a base. My husbands favourite casserole is chicken with dumplings. The base is the same as yours minus the milk and the dumplings are just flour, suet with a little salt (and herbs if you’re in the mood) it’s one part suet to two parts flour, add the salt and herbs, if using, then mix to a stiff dough with water. You then just make them into balls and put them on the top and bake for another 20-30 minutes

You probably made the gnocchi sauce correctly. Potato gnocchi absorb some sauce and release starches into the sauce that help thicken it. It is the issue I have sometimes with cauliflower rice. It is delicious, but it behaves differently. Love your videos.

Becky in the UK we never use soups in our casseroles, also your biscuits are also known as scones in the uk, however when I make cheese scones I also put some yellow mustard powder in the mix with the cheese. The recipe you made is more like our dumpling mix, a dumpling mix is 2-1 mix of self raising flour ( your flour with added baking powder) and 1 part grated suet ( fat from around the kidney of the cow) mix together with some salt and pepper then add some water to a mix like you had for your drop biscuits, place on top of the casserole and bake in the oven❤, perfect for beef casserole or pork

I love my vadalia onion chopper for chopping vegetables for pot pie and other dishes that require veggies. I chop red peppers and onions and freeze for my pepper soup, celery, carrots and onions For other soups and casseroles. Saves so much time .

I am anxious to try these. The only thing I was not a fan of was adding taco seasoning to the stuffed pepper dish. But hey, I’m a big girl and I can figure something else out from my personal taste. I’m a firm believer of “you do you”. Just because it’s not my taste doesn’t make it wrong; just personal choice. And this was my first video to watch from your channel. I can’t eat canned soup because I am lactose intolerant. Have been making rue and am so happy you have this on your recipes. For cooks who are lactose intolerant, use lactose free milk.
