I'm Filipino and my sister is a chef who was trained in Indian Cuisine while she was working at a well-known international hotel. About 6 years ago, she brought the chicken biryani and murgh makhani among other Indian cuisine recipes at home and it was well-loved by all family members. To me, to the point of obsession XD. When we have celebrations here, pancit is now often switched to biryani rice which goes very well with most of the Filipino celebration staples like lumpia, lechon kawali, calamares, etc. To me, Indian food is a comfort food.

I think the dum process is safer, i just cook the chicken and rice separately and drain the rice from water to dry it, so I'm already sure the rice are gonna be separated.. then just add the rice and chicken in layers with bit of kewra water, saffron water(it's okay to do without these too), ghee, biriyani masala(store bought) and some fried onions, then let it sit for 10-15 mints,, and it's done, by this process the rice are generally one white and one colourful

I usually cook my biryani in a pot, at first, I leave the lid on, and eventually I remove it to get rid of the excess water, so it doesn't become too soggy. Sometimes the sauce from the meat makes the rice too soggy. I can't really explain it, but you just have to eye it. Takes a lot of practice and patience.

Good thing she liked the tortang talong. Cooking it is quite tricky than what the guy said as depending on how cooked the eggplant is its texture and taste will varies. It should have same texture consistency as a scrambled egg but if its not cooked properly the middle part usually of the eggplant will be harder and wont have much depth in flavor.

To be fair to godfrey he wasn't told the most ideal and traditional way to cook biryani. It's always best to boil and drain the rice then layer the biryani masala and rice, then cook on slow with lid on until the remaining moisture is gone from the rice and the masala and fluffy rice are well-infused. Cooking biryani in a pressure cooker that way is way more tricky and risky compared to the traditional way.

for a first time... you should never have attempted it in a pressure cooker.. should have just given him instructions to parboil the rice separately and then assemble the biriyani. Its a little extra work but is far harder to mess up comparatively! loved the effort though.. loved the enthusiasm.. very pure and beautiful energy!

I've never seen a Tinola that brown. But i have to say, i think that brown toasted chicken and onions might make it taste even more flavorful

I usually cook my tinola directly boiling everything. Just like some people, they prefer to fry the meat first like how we cook adobo at home instead of just boiling everything lol.

I am not sure, but I think she customised the biriyani recipe to make it easy for Godfrey. Raw rice cooked in meat broth is pulao or tahiri, not biriyani. Godfrey did great with the instructions, he can do better next time 😊

Is no one gonna mention that she actually cooked it authentically by using the stove instead of the suggested “microwave”? aaaaand the fact that tinola is supposed to be a soup. so where is the soup? it looked more like chicken adoboww
