We must get out of the perspective that in Italy everyone knows how to cook, and that everyone always eats a lot of pasta. it's false. Yes, it's true, one dish of pasta a day in almost all families is used for lunch. But not everyone knows how to cook and especially as well as your wife. Trust me, she reproduces dishes in the original recipe in an exemplary way to envy Italian chefs, and I'm not exaggerating. it's really amazing. In our family we all are (or were) capable to cook, my late mom was, dad is, my brother and me are, and at levels of those dishes in the video but I witnessed families where only the wife was capable to cook and the rest of the family depended entirely from her, i.e for example I had acquaintances with a family where only wife cooked for husband, son and daugther, with husband and son uncapable to even boil an egg. Seriously!

Ingredients matter ! In Italy you can eat out and throw stuff together and it'll be healthy. You can go to the store and buy real milk and cheese. You can buy dry goods etc. Even their street food is made with high quality ingredients. Also every Italian knows how to make pasta ..at least enough knowledge to feed their family.

You guys did Atkins, not keto! LOL You can (and should) actually eat a good amount of vegetables on keto (like leafy greens) and not so much protein, especially lean meats like turkey. Having said that, I love the edge of the video. You guys never fail to cheer me up!

If you really messed up a keto diet by eating too much protein what happens is not cute. Keto is meant to force your body into using fat as its main energy source. This will also trick it into using the built up fat you have already on your body, so of course, you become thinner. But if the proportion of ingested protein is too high compared to the fat, it will instead make your body prefer protein as its energy source. In other words, it makes your body start eating away at its own muscle.

Atkins vs Keto…….BOTH diets goal is to put your body into ketosis. Keto people say more fats, but so does the Atkins diet. Keto diet is basically Atkins 2.0. The difference is the people doing the Keto diet wasn’t born when the Atkins diet came out.

Its the ingredients that matter most. Aby diet could be healthy or unhealthy depending solely on ingredients. Vegan food is some of the most processed. Oreos are vegan. It matters what you eat. Not how you eat. That goes for any lifestyle or diet. She was taught to seek out the freshest ingredients and make as much from scratch as possible. Her body is also functioning properly because she hasn't been poison since she was an infant. Her brain is not addicted to chemicals, sugar and toxic ingredients. Her gut is healthy is intact etc. .. You can not compare Italians to an American diet. Our carbs and food vary in quality. Its very hard to find equivalents here. She had access to fresh pasta, high quality oil, raw milk , local farm and buthchers. It was all fresh and local. Now, her options are limited but she knows how to cook using real ingredients..... her body craves and prefers those foods. Also Italians eat a lot veggies too. Its a lot of healthy ingredients along side the pasta . As Americans , most of our food is toxic. High sugar. High carb. So for us eating more carbs is over kill . Unless you watch what you eat. Its so much deeper than eating carbs . We also way over eat .

I cook a lot of Italian food on keto. Tomatoes are definitely allowed, and if you’re making your sauce from scratch then even better. Of course there is no pasta allowed, but you can make several things just without the pasta. We make a chicken parmigiana that’s awesome. She may not like it 🤣, but hey it’s good enough for me. Plus! An antipasto salad is my favorite to eat too! You can survive!

Does keto Mediterranean diet count? Like they are doing it so unnecessary hard for them self. Just do mozzarella gelatine pasta and eat fish and Mediterranean vegetables and they are all set. Homemade tomato salsa and pesto is the best and easy to do. Macadamia nut bread is also so damm good.

The keto diet was developed to treat epilepsy. Any diet can cause weight loss as long as calories are adequate. Countries with a heavy emphasis on carbs in their food (almost every Asian and Southern European country) are also less obese because they control portion sizes and walk more. It also helps that they have a large variety of vegetables in their diets which are low calorie but very filling thus helping with portion control.

Another thing that contributes is simple vs complex carbs. Complex carbs like what you find in rice, pasta, and bread typically are more nutritious, they help you feel fuller and they digest slowly. Simple carbs like sugar on the other hand don't make you feel as full and aren't as nutritious and will also spike your blood sugar quite quickly. You do get simple carbs in natural things like fruits and vegetables, but the amount of sugar in these things pales in comparison to the amount in cookies and cakes and other sweets. Not to mention in america we have a lot of added sugar in things where it really doesn't belong. Technically if you eat enough complex carbs you could still get fat but since those make you feel fuller quicker people don't eat as much of those. If you want to lose weight reducing your carb intake is probably the best strategy but that doesn't necessarily mean you need to go as extreme as keto and probably your best bet is targeting specifically simple carbs like sugar, and instead of cutting out entire food groups, what is by far the most reliable form of dieting across all types of diets is portion control rather than specifically singling out a "bad" food.

I just came back from visiting Rome for a week and tried keeping it at least "low-carb". That was easier than you might think. The usual plate of pasta is not that big (70-80 grams as a primo piatto). I bet the average person in Italy eats less carbs than in northern Europe or America (no cereals, less bread and potatoes, fewer sweet snacks, fewer sugary drinks ...). BTW: I love your kitchen, Eva and Harper! And I am so waiting for a collaboration of "Pasta Grammar" and "Pasta Grannies"!

Exactly!,,,yes,,, I am SO Thankful when a person see's that we cherish fresh ingredients. i grow all the herbs and tomatoes,,,, that is my key. if i plant nothing else it is tomatoes 3 different kids, and bassil, theyme,, etc. (its winter here, herbs come into the house in winter under a light)

Your channel is very entertaining but you are blessed with a great metabolism and insulin resistance. 😍For those of us who don’t have those two, we must reduce our carbohydrates. Keto cannot be effectively judged from one day, but I understand your struggle. Try blending your butter coffee with the butter. It is as, Eva would say, delicious. Then skip breakfast. Even if you are not trying to get into ketosis it is a beautiful coffee drink, add vanilla or almond extract. 😊

Notes to improve your keto experience from an Italian -> (you're going to feel hungry for a while) Coffee: Butter, heavy cream, or nothing (add stevia if you want some sweet) Breakfast: I don't usually have much, but A+ on that. Add some cheese to your eggs. If anything, make a little bit of veggie to soak up any of the yolk if you want. Snack: Almonds, a few macadamias, pistachios are okay along with one of those VT meatsticks is awesome If you're jonesing for a sweet, sugar free gum is great (but in very minimal amounts because it can add up) Meals: You can find some reasonable ketchups out there, but you gotta look. Beef is great for the fat content, but understandable. Make sure you add fat somewhere to that turkey burger. Avocado oil, butter, etc. Some cheese on top. Have a side of veggie (spinach, broccoli, cauliflower, side salad, fried cabbage in butter, etc.). Pasta alternatives are zucchini spirals, too, and just fry out the water (no additives), and then put in the sauce after it's dry. It'll be harderish. Spaghetti squash is an awesome choice, too. Potato replacements are turnips and rutabagas. I hear people talk about jicamas, but I've not had the experience with this. Deserts: Microwave chocolate cups (search for these), or peanut butter cookies. It's all about eliminating the SAD diet with minimal amount of movement. If you're already active, carbs do have a place, or you have to raise up the amount of food you're eating. Keto flu will hit you in the beginning once you hit ketosis. I did keto because of other circumstances involving my family medical history that concerned me, and I find times to enjoy things like pizza and pasta when it's worth it. Keep rocking out that "mangia pasta" diet, though! :)

I have ordered the closest to Italian spaghetti and olive that I could get around in my area off of amazon. I have recieved the olive oil and am waiting for the spaghetti. Eva, you can do a keto diet with Italian food. Italian food is not only pasta and pizza. We have loads of recipes with low cars or that can be modified a bit to have low carbs. For example the Parmigiana di Melanzane. Loads of meat and fish dishes which are rich of olive oil and have no carbs (just omit potatoes and bread).

Coconut flour for making bread and anything you make with flour. Coffee, use heavy cream and grass fed butter and MCT oil. Instead of sugar use Swerve. Sour cream is also good and cottage cheese. It’s pretty easy. Cheese is allowed so you really can eat close to the way you would normally eat.

I cook bacon in the oven on a cookie sheet pan. The trick is to keep it elevated off the grease as it cooks out of the bacon. Use a rack or if you don't have a rack or just want less things to wash. You can crinkle up aluminum foil in to logs and place them in the pan and place the bacon on the foil logs. Best bacon every time

You guys are hilarious 😂 As someone who’s on a low-carb diet herself (though not keto, thankfully), I really enjoy watching your videos because it gives me a little vicarious taste of the things I can’t eat myself. You’re lucky that neither one of you has a weight/insulin-resistance problem that would require restricting your carb intake. I for one would love to mangiare nothing but pasta, pizza, and desserts all day, but I can’t do it for health reasons. Low carb isn’t necessarily a choice based on taste preferences. Some people (like type 2 diabetics) just have to do it. Anyway, keep on making those delicious Italian recipes and enjoying them for all of us! 😄

LOL! You can have tomatoes on keto. Also, you could have put scallion into the turkey burger with a mayonnaise sauce with Katamala olives on top, even a slice of cheddar melted on top. Lots of ways to make keto interesting.

Funny episode. I’m an Italian on Keto and Intermittent Fasting. Low carbs is the most difficult part, but I lost nearly 20 lbs in 6 weeks and I have more energy. Spiral some zucchini in olive oil, garlic, lemon, chili flakes with Shrimp. Eggplant or Chicken Parmigiano. There's just no replacement for a real Pizza Margherita. That's for cheat day, or if you carb cycle. I think eating two meals a day within a six-hour window does a lot.

I can watch Eva cook all day!! I have a question, my daughter and I love to bake cookies (chocolate chip cookies are our favorite). Eva and Harper what are your favorite Italian and American cookies? Also, can you do a cookie episode trying Italian cookies vs. American cookies and then bake real Italian biscotti or what ever Italian cookie that you love. As someone who has suffered on Keto for more than 3 years, I found your channel because I'm always craving and fantasizing about carbs ! I laughed my a__ off when Eva said "I'm making the most anti-keto dish that you could ever imagine." To that I couldn't help but say "HELL Yeah!!" Keto has saved my life and turned around my health, but omg I love your channel ! It's so fun.

If you want to make 95%+ of the dishes on this channel and you're diabetic and/or on keto search on youtube 'viral keto noodle'. It's not as good as real deal noodles, but keto egg noodles can come somewhat close, especially for dishes like lasagna. Keto doesn't have to limit what you eat, but you do have to prep your base ingredients first.

Yeah, I've been keto for about 5 years now to reverse my Type II Diabetes (which it did and really turned my health around too). The weirdest thing was that I rarely ate sweets pre-keto (I have zero sweet tooth), but as an Italian-American, I ate A LOT of pasta (and rice and potatoes). And apparently that was what was jacking up my blood sugar, which was super-sad. Still, I use low carb pasta and some other keto pasta variations in moderation when I have a hankering, but it definitely doesn't taste as good as 'the real thing'. So, like you, I watch this channel to dream about all the carbs I can't eat. I have no idea what I'm going to do when I visit Italy next year. There might need to be some 'cheat meals'.

I've never been able to stick to the the so-called plan though once I let myself "cheat." Good luck in Italy. Been there and it's lots of fun and the food is amazing.

I just love how when ONE person in the home decides to go on a diet, the entire family is expected to go along with their latest new diet fad. Oh, cooking bacon in the oven is the way to go. Heat oven to 350*. Place a rack (cooling rack) on top of a 9X14 an place strips of bacon on it. Bake until bacon is desired degree of doneness-floppy to extra crisp. When cooled, pour bacon drippings into your bacon grease jar and place in fridge until needed.

I was expecting an actual Italian Keto friendly dish. I would have loved to have one. I have lost 100 pounds on Keto, it definitely works. I do miss carbs though. I wish I could eat your pasta potato dish, it looks delicious, as does all your recipes. I noticed a few newbie mistakes, I would have done things a little differently. I would have done a Spinach and Feta omelette or fritata for Breakfast. It's much more filling and would probably better suit your pallette. Paninos would be a snack Eva might enjoy more than the meat sticks, or they might disgust her LOL. Going light with a Turkey Burger is a bad idea. You want as much fat as possible, so a 70/30 beef burger would be better. I personally make my own "buns" with Almond flour, but they are nowhere near as good as the real thing. They do scratch that itch when you are sick of letttuce wraps though. Putting a slice of tomato on the burger is fine. While tomatoes aren't "low carb" the amount of carbs in a slice is not very high and will not hurt. Heinz makes a no sugar added ketchup that is low carb and can be used on your burger. Spaghetti Squash actually has too many carbs. I have a spiralizer and turn Zuchini into "zoodles" in addition to being lower carb, they have a more neutral flavor and will complement the sauce better. They will still mortify Eva though. There is no mistaking them for pasta. Lastly I would have had a small cup of berries with homemade whipped cream for desert. Blackberries, Strawberries, and Raspberries are all low carb. Anyway, I am fully aware that Keto is not for everyone, and I don't expect an Italian to stick to it. Keto worked for me, but everyone is different, and you just have to do whatever works for you.

I make bacon in the microwave (so I don't get splattered with grease). I have a ridged/grooved dish that allows the grease to accumulate under the bacon. I lay the bacon strips on the dish, cover it with a paper towel, & microwave it for ~4-8 minutes until it is cooked the way I want it. I usually strain the liquid bacon fat & place it in a glass jar, so I can use it later in other recipes calling for bacon fat. It will stay good for a couple of days.

I think the squash spaghetti would have been better if they didn't put so much pesto on it, & served it as a side with some type of lean meat, eg: chicken or veal. That would have been keto friendly.

The healthiest way (least free radicals) to cook bacon is in the microwave. Wrap it in parchment paper and cook it around 2 minutes per slice. Cook it plus or minus 30 seconds depending on how crispy or juicy one wants it.

For breakfast, try an Italian Sweet Sausage Frittata with Roma Tomatoes, fresh basil, mushroom, eggs and Pecorino Ramano grated cheese. Oh and BTW, they wouldn't feed that Keto Pesto spaghetti squash to prisoners! Bring on some Caccio di Pepe!

Spaghetti squash is one of our family's favorite veggies! With butter, salt & pepper (plus garlic for my youngest daughter) or spaghetti sauce. A great substitute for pasta as a change of pace.
