Every cook during they formative years learn that every dish can be categorised in one of a handful of categories. What you got wrong were those categories because, despised of what you claim, those 4 categories don't englobe all foods and because you are grouping together foods that have nothing in common.

Dosa= dumpling Roti= bread and bread just like chicken is an ingredient. Roti is eaten usually with spicy stew like thick soups! Dry gravy thing you mentioned? Oh boy I just googled it and it is just bowl of stuff my guy
