Instead of 84g of fat free cheddar, you could try about 60 grams of fat free cheddar and 1 slice of fat free american cheese. The fat free american has sodium citrate in it, which will create a better emulsion in your cheese sauce (sauce won't be broken).

could you just do 84g of fat free cheddar and a teaspoon of xanthem gum for emulsion?
@aceofspades43 жыл бұрын
@@paramountofpuns6913 In addition to emulsifying, it would thicken. However, I'm also not too keen on the xanthum gum texture when used in liquids; bit too slimy for me. Guar gum (though often believed to be interchangeable) would provide a bit of a better texture, but all the same it's thickening property isn't really needed here. If it's a matter of just using what you have, and provided you didn't overdo it with the xanthum gum, it'd work in a pinch. I think would improve on what would otherwise be a broken cheese sauce.

Rem I just bought your cookbook! I literally lost 10 pound in the last 7 days. I know its mostly water weight but I'm so excited and best part is I'm a little tripped out because I eat to fullness at every meal and I have a big appetite. I'm tracking my meals on see how you eat, just a photo diary so I really don't know how many calories but so far it is absolutely working in conjunction with one hour walks each day! This is the best gift I could have given myself. The small things make a big difference too, I'm sleeping better, more stress tolerance, feel more happy and relaxed overall. Body's just working better overall.

I've started buying potatoes. Never going back to fries. Just get a potato, slice it, season it, and lower calorie and oil does nothing for flavor like good seasoning. I made low calorie hamburger helper. For base I used broccoli, squash, whole onion, 2 potatoes, lean beef, velveeta cheese, lite sour cream, and g Hughes honey bbq. Rub a butt seasoning all over veggies. Only 1300 calories and felt like I ate 4000. Was so full. And as a veggie hater, I'm amazed. Took me 15 minutes to eat. And that's what I like when eating for dinner. While watching my show. Ate a 700 calorie burrito earlier. Usually only use 300 for lunch
