I made just the chili last week for a chili cook-off this past weekend. As I was heating it up the morning of the cook-off, before putting it in the crock pot to transport, I decided to add about 8 ounces more of tomato sauce, since the chili was a little thick. I also added a 15 ounce can of chili bean pinto beans (gasp!) Out of 8 chilis submitted for the cook-off, mine came in first! Great recipe!

Whenever I do cheese fries, I do.....fries, grated cheese, chili, queso, then sometimes sour cream & hot sauce. The chili melts the grated cheese & 1. Keeps the chili from sogging out the fries & 2. Helps hold everything together so you get more chili with the fries....kinda like nachos with chips!

Double fry is called blanching if you ever hear the term, also Instead of pulling the fries out every time Sam put another one in the cutter and it will push out the first potato a tiny bit of cooking oil might help them go through as well on the grate.

The reason you prebake them at lower temperature is to get all moisture out. When frying them at high temp from the get go, they would be seared and fluids wouldn't be able to get out. The result/reward of getting the moisture out in the prebake: crispieness.

We make tacos with Beef, Chorizo and once it's brown, throw in some Pace Picante Sauce. I'm not crazy about jarred salsas but it works out great in this recipe. Simple but delicious. Keep cooking guys

Yes, this is Mexican Chorizo which is fresh sausage made of pork or beef with spices. It's raw and must be cooked. The chorizo in Europe is Spanish Chorizo which is in many cases cured and smoked.

I have a bigger version of one of those fry cutters I think designed for restaurants, looks like the ones at in-n -out and it fits potatoes of a more regular size fairly well. They are a pain in the ass to pull the potato through, if they aren't bolted into a wall or something, which unfortunately gets you to grab and grip the thing in weird places. Just make sure where your fingers are before you shove hard, lost a nail like that. Still once its done, it makes a damn good fry. I'm going to have to try this, that chorizo based chili looks good.
