Been a fan since his early days on tv, when he wasn't allowed to show labels 😂😂😂 I still make his newcastle sorry "dark beer" ginger/brown sugar 😂 marinated pork chops and og shrimp tacos with Adobe sauce to this day! Yes, this is Mexican Chorizo which is fresh sausage made of pork or beef with spices. It's raw and must be cooked. The chorizo in Europe is Spanish Chorizo which is in many cases cured and smoked.

Whenever I do cheese fries, I do.....fries, grated cheese, chili, queso, then sometimes sour cream & hot sauce. The chili melts the grated cheese & 1. Keeps the chili from sogging out the fries & 2. Helps hold everything together so you get more chili with the fries....kinda like nachos with chips!

I've been using ground pork for chili dog chili. Chorizo is inspired, and, now that I've seen it, terribly obvious. I'm surprised you don't put Worcestershire in your chili, though. And tabasco. How do you get the liquid out of the green chilis? Do you just use a fine sieve? I'd be tempted to drop the whole can in there, or, even better, use a can of jalapeños instead. As close as this is to nachos, I think I'd really want the jalapeños , and maybe some sour cream. :)

I made just the chili last week for a chili cook-off this past weekend. As I was heating it up the morning of the cook-off, before putting it in the crock pot to transport, I decided to add about 8 ounces more of tomato sauce, since the chili was a little thick. I also added a 15 ounce can of chili bean pinto beans (gasp!) Out of 8 chilis submitted for the cook-off, mine came in first! Great recipe!

The reason you prebake them at lower temperature is to get all moisture out. When frying them at high temp from the get go, they would be seared and fluids wouldn't be able to get out. The result/reward of getting the moisture out in the prebake: crispieness.

Double fry is called blanching if you ever hear the term, also Instead of pulling the fries out every time Sam put another one in the cutter and it will push out the first potato a tiny bit of cooking oil might help them go through as well on the grate.
