I dip demerara cubes in bitters, stack them in a small silicone container with parchment in between the layers and store them in the freezer. Then they're ready for me when I'm ready for them.

I did a build-your-own champagne bar for a friends and family New Years once. It went over great, with recipes to make several different options available. The favorite as I recall was a simple Kir Royale. Everyone was free to add as much Creme de Cassis as they cared for, so that bottle did NOT last long.

In Japanese bars, all spirits are stored in the freezer. It changes the texture of the spirit making it richer on the palate and intensifies the flavor components. I thought that was really neat.

This was an interesting taste indeed. I must say, the bitters did give a better taste to the champagne that I used(Korbel Brut). The bitters were not over powering the champagne as I thought it might have but enhanced the champagne instead. I did get a hint of the brown sugar halfway through the glass. Mixed feelings about this one.

Nice vid, I found it easier to open sparkling wine if you leave the wire cage on the cork after you undo the twist, it gives a nice grip on the cork.

No one mentioned this down as far as I read, the word you’re looking for is; “nucleation sites”, regarding CO2 bubbles forming on the surface of the sugar cube.

I'm really curious.....about the R's on the wall
@AndersErickson3 жыл бұрын
They're from a sign lettering workshop Az and I took a couple of years ago - she did the green one on the top, and I did the red one on the bottom. "R" is a good letter to practice curves, straight lines and diagonals. Sadly there wasn't a deeper meaning than that 😂

Do bitters last forever?
@mydogeatspuke2 жыл бұрын
These ones will as they're 45% ABV. As with any alcohol, they may evaporate over time and the taste will change as a result, but they'll always be safe to drink, just not necessarily palatable.

I have scotch and bourbon. What do you think instead of the cognac
@mydogeatspuke2 жыл бұрын
Not even close. I mean you could use either of them and it would be fine, but it wouldn't be this specific drink, because this calls for cognac. Most drinks can be made with whatever you have, be that spirit or just different brands. Drink what you enjoy drinking. Just make sure your expectations are low if you're dramatically changing a recipe as you're obviously not making the same thing.

I went in to a fancy cocktail lounge that was very trendy for NYE about three years ago. Smoked whiskey concoctions, you know the drill. I asked for a champagne cocktail at the bar and they had no idea what it was - "is that any cocktail with champagne in it?" To me, a champagne cocktail is a well known classic on the same level as an old fashioned, for example. Not knowing it and claiming to be a bartender is ludicrous. Also, their glassware was all from Ikea - which, ok fine - but not if you are trying to be a fancy, high end sort of place, with prices to match. Was not impressed, and am not surprised that they went out of business.
@mydogeatspuke2 жыл бұрын
When buying a drink, are you not paying for the alcohol rather than the glass it's served in? Lots of places went out of business in the past few years, there's been lockdowns and a pandemic and massive amounts of inflation making everyone's money worthless and supply chain problems the world over. I highly doubt they went out of business because they dared to use IKEA glasses. As for not knowing what you were talking about, nobody knows everything. You could have explained how to make it and been their favourite customer who opened their world to new cocktails they'd never seen before. Tending bar these days means knowing how to pull a pint, what you're thinking of is a mixologist, which isn't even close to the same thing.
