That is such a different and unique way to make corned beef. It looks so amazing and so good it's almost like how to do a ham with a glaze and everything but man that glazed look delicious and that meat looks so tender when you bit into it oh my goodness. I can't wait to try this that looks so good thank you so much Andrew for your video of this and I love all your bizarre foods videos and you are one of my favorite and best chefs in the whole world and I miss watching your shows on TV.

I have done this many times in the hydrator in my second fridge. A variant that help the cure to penetrate the meat is every day I turn the meat over & poke it with a sharp fork. Let it soak for 7 days.

Hey Andrew, you are the best! I've been watching countless corned beef recipes, and yours is the only one that uses a large amount of curing salt and no regular salt. I'm prepping my first corned beef from scratch and dont want to mess it up 😅. Could you please explain why you only use the 2/3rd cup curing salt? Thanks, Dustin

People are afraid of it hence the reduced amounts you seem. The traditional way is to use potassium nitrate, you just have to make sure you measure it carefully based on the volume of water.

Only people that value quality in food and life can understand the things you say - many will find your comment ‘don’t cook with alcohol that you wouldn’t drink on your birthday’ as alien - but it is true. With pasta sauces it is important to use very decent red wine and I think Spanish variety is very tasty. Also, I was struck by the compact visual of the brisket after the curing process and even once it was completed from 3 hours cooking. I personally would have only changed one thing - to not have the Russian dressing and replace with pickles and maybe a small slather of mustard but I was very impressed with everything - including your method with regard to the bun. You are a teacher and so tremendous - I miss seeing you with Anthony Bourdain - ty for making interesting and informative content videos.

When I'm looking for a way to cook something, I'll always check Andrew's recipes, but I must admit I _AM_ a bit apprehensive when I do. Considering all the trips he makes to Asia, eating those weird foods? _I'm always half expecting something like fish livers or bat wings in the mix._ Corned beef with fish eyes and eel guts. Served with cabbage and potatoes stuffed and roasted inside a pigs stomach. *YUM!* 🤣
