I purchased the ankarsrum mixer last year after a double batch of pasta dough killed my kitchen aid mixer. It was a expensive purchase but definitely worth the cost! A month later my daughter decided I would make her wedding cake and I was able to make the 3 tiers and the many batches of meringue icing for the cake with the ankarsrum with no problem. The small bowl would whip a dozen egg whites to stiff peaks in no time at all. I know the mixer made this huge job so much more manageable. I have since told everyone about the ankarsrum mixer and advised them to get one. I am also a huge fan of the bamix hand blender for quality. Both are made in Sweden.

Between 1:45 and 1:50, the Ankarsrum appears to have been knocked off balance. How stable is this mixer when mixing drier doughs such as this one?

R Dens4d, for this video we had the mixer on a wooden cutting board which is a less-than-ideal surface for any mixer. Typically this would not happen as the mixer is quite heavy and typically does stay in place on a standard countertop. I hope this helps!

Very. You have to make sure you don't run the mixer too fast (this is true for all doughs) and you need to adjust the arm so that it doesn't rock while the mixer is kneading.

The only thing I use the plastic bowl for is whipping cream and meringue. I use the 7qt metal bowl and dough roller for all cakes, quick breads, cookies, homemade marshmallows and divinity candy, etc. You can even make meringue with the dough roller but it takes longer.

Ok here is my question, I often make high hydration bread,im using kitchenaid pro,I find after 15 minutes of mixing the kitchenaid motor heats quite a bit.,how long this mixer can continuously mix dough without over heating?

Hey Chef E, 15 minutes is actually the max runtime that KitchenAid recommends continually running their mixers for. Because of the much different motor design in the Ankarsrum, you can run it much longer with no worries. They also warranty the motor for 7 years! I reached out to Ankarsum USA to see if I can get a more official answer and they didn't have a max run time - they said they've used the motor base with their meat grinder attachment and processed an entire deer for ground venison and continually ran the machine for 45 minutes with no issues at all. I'd say the Ankarsrum could handle any high hydration bread dough without any overheating or issues. I hope this helps! I have been making bread by hand for over 50 years. Now, I have arthritis in my wrists, making kneading painful. I am surprised how few reviewers and commenters give this as a reason for using an Ankarsrum to replace the pain of hand mixing and kneading.

According to the Ankarsrum website, after the war there was about a 3-year wait to be able to purchase one, UNLESS you had a doctors-note saying you had an issue with your hand/wrist etc. Subsequently Ankarsrum got loads of doctor's-notes.

I bought mine at Pleasant Hill Grain in Nebraska who gave me a discount when I asked for one plus FREE Shipping! They were the first in the USA to carry these "Anks." This Ank was made originally by a company called. "Electrolux of Sweden." I love this machine! If you like making bread then this machine is the one to buy. My crank-up bowl heavy-duty Kitchenaid is very noisy and moved around the counter when mixing low hydration doughs. You can also hear it straining to do the mixing like it is bogging down power-wise. The Ankarsrum has none of these faults. It is quiet and extremely powerful. even at high speed! The Ankarsrum has a warranty on the motor for 7 years and is built by hand and with pride to last a lifetime. The Kitchenaid has a 1-year warranty and is built to last an estimated 10 years before you need to buy another one. I am completely happy with buying my Ankarsrum Original Assistent.

I am older so when I make bread - I use 1 kg flour so can I use the dough hook rather then the round one. I make allot of🎉 marshmallow pavlovas, cakes, sponges, small cakes and scones and fancy desserts so can all this be made in the smaller bowl I hope it will shock and artiste well when making my pavlovas - i I’ve doing bread but I also love the sweet side as well but checking I can do smaller amounts like 1 kg of flour for my bread with the hook😁

Why not compare the Ankarsrum Mixer to the KitchenAid Pro 8 quart. That would be a more reasonable comparison. I don't think a comparison to the 6 quart is fair. I have the KitchenAid 8 quart stand mixer and it is a beast. For one thing, the motor is 1.3 HP, compared to about 600 watts for the Ankarsrum. This Ankarsrum Mixer is very similar to the Bosch Universal Plus Mixer.

Let me see as you compare. The Ankarsrum is also 3x the price I paid for my Kitchenaid Pro6. Also it came with a 6qt and 3qt bowl, whisk, dough hook, beater and flour guard. Bought the juicer, grinder, shedder for $199. Get the pasta for about the same. So total Kitchenaid package for less than just the Ankarsrum mixer. Oh and by the way, made pizza dough in the 6 quart with just 2 cups of flour.

Sad for you though KA's are complete junk from communist China, though assembled in the States. Are you seriously trying to compare a light duty mixer that requires a 30 min cool down period for every 10 min of use with the World's best consumer heavy duty mixer? Enjoy sending your noisy clunker off every few years for repair. They look cool though. Too bad Whirlpool ruined the original Hobart design after purchasing them. KA is the biggest hoodwinker in the manufacturing industry.

The kitchen aid isnt built for doing heavy doughs like pasta all the time... that is my biggest reason for purchasing the ank whenever i read review for people who did pasta, the kitchenaid didn't last as well with tough dough

As an engineering enthusiast first time I saw ankarsrum was like “dough! It’s so obvious” The rotating bowl and gearing system means high torque at low rpm with well machines gears and huge motor. Kitchenaids strip gears often when kneading and IMHO you should not knead anything other than very wet dough.

I have both the Ankarsrum Original Assistent and the big heavy-duty bowl crank-up KitchenAid (28 years old). I think after using both of these machines overall the Ankarsrum is a superior build design and quality. Every five years I have to send my expensive KitchenAid to the Ohio factory because it leaked oil from the gearbox. This maintenance is costly $100 plus any parts they inevitably need to use, i.e. gears, bushings, gaskets, etc. Overall, I believe I got a great deal on my Ankarsrum at $650 shipped free from Pleasant Hill Grain in Nebraska (online). Virtually zero maintenance is required on this machine. It handles heavy bread doughs to make meringues with ease and no bogging down the motor.

@@markdcmountp Thanks. I like the open bowl (no motorhead in the way), but I see video where the dough just sits there and won't move. I've heard they are going to re-design the gear system for the small bowl since many complain about the plastic breaking. I still think I'd be better of with a KitchenAid or Kenwood. Most bread making I do by hand anyway.

Operator made the dough too dry!!! Correct consistency and adjustment would have allowed the machine to squeeze the mixture, massage the gluten and smoothly tighten the dough.
