I have made the traditional madeleines many times, but never with Earl Grey Tea; sounds great, and am anxious to try these too.

I've watched so many Madeleine videos and they are loaded with sugar. I'm also wondering why. I had cut down the sugar to half the weight of flour and it's very good and not over sweet. I use 200g of flour, 1 tsp baking powder, 4 eggs, 100g of sugar, 100g butter. Beat egg white separately and fold in with mixture in the last step. Good luck.
