Beef & Broccoli Stir-Fried Noodles

Yield: 2 servings
Ingredients
Kosher salt
1 head broccoli, cut into florets and stems peeled and sliced into 1/4-inch-thick coins
4 tablespoons canola oil
1 New York strip steak (10 to 12 ounces), 1 1/2 inches thick, thinly sliced
2 scallions, thinly sliced on a bias (whites and greens separated)
2 cloves garlic, minced
1-inch piece ginger, peeled and grated
1/2 yellow onion, sliced
2 tablespoons rice wine vinegar
1/4 cup oyster sauce
1/4 cup chicken stock
1 teaspoon chile paste, such as sambal
One 3-ounce package dried curly noodles, such as ramen
Directions
Bring a pot of water to a boil and season generously with salt. It should be as salty as the sea. Prepare an ice bath and season generously with salt. Add the broccoli florets to the boiling water and cook for 2 to 3 minutes until bright green and tender, but still slightly crisp. Remove the broccoli and immediately plunge into the ice bath and set aside, but reserve the boiling water for the noodles later.
Heat 2 tablespoons of the canola oil in a large saute pan over medium-high heat until it shimmers. Season the steak with salt. Add the steak in batches to the pan and cook, turning occasionally, until brown and crispy, 2 to 3 minutes. Remove the steak from the pan and set aside. Repeat with remaining steak.
To the same pan, add the remaining 2 tablespoons canola oil. Add the scallion whites, garlic, ginger, onions and rice wine vinegar. Saute for 1 to 2 minutes. Add the oyster sauce, chicken stock and chili paste and stir to combine.
To the same pot of boiling water, add the noodles and cook according to package directions. Using tongs, remove the noodles and add directly into the saute pan with veggies. Add the broccoli florets and steak and toss to combine, ensuring the noodles, steak and broccoli are fully coated in the sauce. Mix in the broccoli stems. Plate and garnish with reserved scallion greens.

As a malaysian ,beef can use rump/round/chuck part,slice it and marinade with light soya sauce/little bit bit oyster sauce/white pepper powder/little bit sugar/chinese cooking wine /egg /corn flour to stir it up,and then add oil/scallion oil stir it again (this tip prevent sliced meat stick together) , done *Before that,beef sliced need to soak the water, let the dirty and blood running out

Whoa whoa whoa she added way too much oyster sauce for my taste. That stuff is pretty potent. I would have added like half of that and some soy sauce too. Maybe something sweet to take the edge of the oyster sauce off like some plum sauce or sweet Thai chilli sauce and some sesame oil to give it was extra depth and umami.

Not beating a dead horse with the "too much oyster sauce" clause here, but the extra sauce might be for the noodles. It's forgivable. But if it's _just_ beef and broccoli with that amount of sauce, that's just a stew.

Take it from a Chinese, I would have thinned the couple of spoons of oyster sauce with water, mixed in with soy sauce and sugar, adding cornstarch to thicken the sauce. I wouldn't dare go close to that dish with that amount of oyster sauce.

That is not how you make beef broccoli stir-fried noodles even though it is not an authentic Asian cuisine. That one cup of oyster sauce... Because I love Food Network, I am going to tell myself it is just shows and it is a simple dish to kick off the show to help me sleep better at night.

1 cup of oyster sauce? Jesus, thats almost whole bottle of oyster sauce. You know how salty and sweet it is. Gurl, too much oyster sauce n brocolli together. Nasty. Usually asian cook them separately. Usually only use a tbs of oyster sauce. And brocolli could over take the flavor. Usually serve on top. Jeez, this is the most nasty stir fried i ever seen in my life.

I really like this recipe and I have tried it making it two times and it came out good the only thing is the oyster sauce is really salty so I will try to add a little water in it next time. But overall I loved it.

nah as an asian I can say we do not use the "fond." It'll burn if you add more oil. That's a very french technique, asians clean their pans between elements. Also in the 10+ years that I've been cooking, I have never used rice wine vinegar in my stir fried noodles. Rice wine maybe to flavor the meat but never rice wine vinegar, I don't want my noodles sour. Plus, ramen noodles get soggy very easily so I highly recommend not stir frying them unless you undercook them like even a little pre al-dente.

its like she sat in on one of marco or gordons cooking lectures and took half assed notes. those are not finally chopped onions, the beef is barely seasoned and only with salt, and cutting it that thin makes it lose flavor in all ways, she is the definition of. a tv chef who wants to look pretty but also think shes a world class chef, shes a world class fake drama queen

I don’t know why everyone is complaining about the oyster sauce it wasn’t even close to the whole bottle plus it’s the meals main slat source and it must cover everything. And people complaining about the noodles, what do you think you get fresh noodles at most restaurants?
