As a Mexican , I approve of this dish . The fact that she fried the tortilla without the sauce on it is a plus for me . People from Michoacán , a state in Mexico, dip the tortilla with the sauce to then fry it . It makes a total mess and the enchiladas end up super greasy. They taste delicious but greasy as hell if you’re on a diet . Haha

the thing about male and female peppers is actually a myth, there is no diference, they are both ripened ovaries containing seeds formed after pollination. Those seeds will then form new pepper plants. The bumps or lack thereof are primarily related to the variety and growing conditions. Sweetness is usually a factor of ripeness. Thus red bell peppers are sweeter than green.

Carla is terrific! I appreciate her more calm demeanor vs. when she was on The Chew where all the co-hosts had to bark out commentary to be heard. Can't say I've ever heard of oregano in guacamole but I'm trusting her that it works!

I would just put the chicken and the peppers on a sheet pan and bake it just to skip a step. Definitely tenderize the chicken of course, and season it. And what I love about doing it in the oven is the red bell peppers really concentrate their sweetness while they’re baking.

She is missing a bit of technique using the chile ancho but it's ok. The fact that she is using corn tortillas makes me happy, for the chicken to be shreaded easier, it's better to boil it, the red bell pepper also doesn't go there (but it's not that bad), l've never seen a guacamole with oregano but I also don't complain much. So far, good enchiladas, as a mexican, I approve it 😝

Short answer, yes - but it will give a different flavour profile, right? Cilantro is almost an essential ingredient for Central American cooking. Love cilantro! Cannot get out of the grocery store without popping a leaf or two into my mouth, lol. True that.

I wouldn't recommend it. Corn tortilla's dont fry as easily as that, so the saucing portion will make sponges like she said.. and texture. And fish in the only thing I've found that works well with corn. Beef/Chicken/Pork is general flour and fish is corn. But knock yourself out.

These look delicious. However, I'm the only one who like the corn tortillas here at home. Everyone else like the flour ones. Would substitute something else for cilantro. Cilantro flavor is too strong for me

Dice mi mamá que pura porquería xd but as a Mexican I think the guacamole is not bad! My family do the Enchiladas quite different but the only true issue that I have, are the tortillas. Enchiladas and any Mexican dish is WAY BETTER whit corn tortillas than those white ones that she uses. But I mean, it's not bad!

Actually in Chihuahua, we prepare guacamole only with avocado, jalapeño, lemon, sour cream, salt and pepper 😝. Only sooooome times, we add tomato, onion and cilantro. Depends on the dish where u're gonna add it. As a botana, I prefer the version with tomato, onion and cilantro. 😉
