As a chef for 30+ years I can tell you a quiche is an egg dish and a crepe is not a crepe is not an egg dish. The batter for crepes is approx the same as a Yorkshire pudding or pancake in terms of egg content, it is the proteins of the egg that give the batter its structure and texture once cooked. Think of it in these terms build the same boot 3 times put a leather sole a vibram 430 and a vibram 100 on each pair, now is it the same boot? Proportionally they’re all the same but functionally they’re all different.

It drives me nuts when people complain about SPI, as long as it lasts the life of the boot, and they're not unbelievably ugly, im good
