I'm married to an Algerian. I spend 3 months in Algeria every year watching my mother in law who makes it the best and could never get my dough right it's a hard dish you make. You made it look easy great job

It's hard to me too as an Algerian 😂 in my culture if you want to impress your mother in law or your husband you have to make the recipes right but since you're not Algerian and you're just trying it's still good for you :)

For anyone who'll try the recipe, be VERY generous with oil when flatening the dough, use your hands after coating them with oil as well and most importanly let the dough rest for as long as you can, 6 hours or even more would give you a beautiful elastic dough. For the filling some places in Algeria make it with only tomatoes and onions and jelapenos or harrissa, others add carrots and others add pieces of animal fat with the sauce ( beef or sheep fat), it's a dish that should be eaten hot and spicy, it warms the heart

You can add half a cup of flour to help build the gluten content. Also it's best let the dough rest overnight. Because when the recipe says thin, it means "see through the dough" thin. Overall good first attempt.

Thanks for sharing Algerian culinary! but I just want to mention that in m’hajeb we don’t add carrots 🥕 the m’hadjeb filling is only made of green peppers, onions tomatoes and chilli. In some other area they use only tomatoes, onions and chilli. And in other part of Algeria, they use dried meat as-well. The dough should be thin and sprinkled with plenty of olive oil. Algeria has a rich succulent numerous different dishes all over the different regions in the country, unfortunately because of the lack of tourism the Algerian culinary is not known by the Occident. Thanks a million. Ps// if someone told you they put carrots inside the m’hadjeb, this is innovative not traditional.

Moman Foiri, It must be one of the newest version of m’hadjeb not the traditional one. I never heard of m’hadjeb with carrots in the East of Algeria. Surely a recent recipe. Nowadays everyone is using carrots and zucchinis in many different recipes. The traditional stays traditional but there are many innovations.

Wonderful as usual! Jamie, I know you’re a film buff; I thought it was apropos to suggest The Battle of Algiers if you haven’t seen it. Such a riveting movie. It’s excellent. Used to work at a movie magazine and my editor freaked out when he heard I hadn’t seen it. He brought me the Criterion Collection DVD the next day. 👍

If i have to give u an advic, for the filling i thought it was a bit dry it should be just a liiiiittlle bit runny and for the dough it should more thin than that but its fine u did a great job for the first time keep it up❤️

Why don't you try the other Algerian recipes like Tajin Hlou, Couscous, Ftir, Makrout......we have thousands of Couscous recipes here in our country and you will enjoy eating it.

what's the tajin hlou in Tunisia we have the tajine with potate and egg .... like all of the north africa but i didn't know that there is a Hlou version

@@sanaamami une specialite purement Algerienne sucree viande avev des fruits seches et amandes grillées. Un.plat présent sur la table du ramadhan . On fini toujours le repas par un bouchee de tadjine hlou ou lhem hliu ou mhamar ( appellation.selon.les regions) et c aussi un.plat de grandes circanstances comme les mariages khtena ... Un.plat ancestrale qui a egalement ete i.teiduit au marouk par les familles Algeriennes qui ont immigrer a fes tetouan.oujda fuiyant la guerre
