Thanks for sharing your experience. Heard you say that you ordered polish not sure how that differs from 551 but that is wicked cheap to make. Straight Star san actually works great to but wear gloves . Would upgrade the thump you have to 10gal at some point, as I understand it thump should be 1/3 -1/2 the size of the boiler bigger pipe in , smaller out . I have used red star bakers yeast for peach brandy and liked it better than wine yeast haven't used it with apples, but should work . If you invert the sugar prior will produce a smoother end result . Even better would be to exchange all or most the sugar for something like organic apple juice concentrate to raise og . Lastly if you are going to shoot the thump maybe put a valve on your opening with a small column about that , then wait until you are coming into the hearts before you shoot the thump . I only suggest that because if it's done at the start some of the tastiest influence will be in the heads which is not ideal . I apologize if you feel like I am criticizing your operation , I absolutely enjoyed your video & just as I have learned something from you today I hope you find this information equally insightful. Definitely not affended lol I enjoy tips anytime yea I actually just bought a infuser for my thumper now I will wait till after the heads are out also I have a 4 gallon thumper and a 7 gallon thumper I prefer the 4 I feel like it runs better and has never filled up or anything lol I just did a peach 🍑 brandy video and I showed people how to invert sugar 😂 I do it sometimes thank you for your input I really appreciate it that's what's awesome about this hoppy always something to learn.....shine on

nice set up you got there and i'll try the recipe one day. I put a steel plate between the gas flame and the bottom of my still, made a big big difference in the taste. so so smooth. I liked your video.

Thanks for watching...I tried that myself putting a plate between the flame and the still I couldn't get mine to heat up 2 hours and still was barely warm I run a 120,000 BTU jet burner and the plate was only 1/8 inch thick I even tried drilling a few 1in holes in the plate I finally gave up 😂 I'm glad you got it to work

Just picked a 5 gallon bucket today, going to make this tomorrow. This looks like the recipe i have been looking for. I may use recipe for peaches on the future.

@@TheShineshackin order to repack that thumper, you have to shut off your heat source. Do you go ahead and crack open that line coming from the boiler to keep the sides from sucking in on the pot? Last time I shut mine off in the middle of the run to fix a leak around the thermostat on my flat lid 13 gal Vevor, it pretty quickly made a Pah-Ponk sound when the lid sucked back in, and me being a newb it scared heck out of me, so I cracked open the line running to the thumper. Any advice you may have for me would be greatly appreciated. Thanks In Advance, Shine On

I appreciate it 😂 I love my copper pot but there is no difference in copper stills and stainless stills they both make the same likker in my opinion and I ain't on top of anything but a pile of shit maybe 😂 I will always remain a little folk thats where I belong....Shine On

mix up some 551 distilled water hydrogen peroxide and citric acid. works great

Use 500ml’s of water, 50 ml’s of hydrogen peroxide and 5 oz of citric acid. Clean that copper right up!

I have a question, I have a set up much like your and am getting ready to do a run like yours. The question is why not run till your out of the heads and shut the still off and open the thumper and dump your apple concentrates and apple into the thumper and relight the still, that way the flavor isn't lost in the heads. Does this sound like it would work? Thanks for making the video.

Yes it will before I got my infuser recently that's what I done if you do it multiple times throughout your run it's awesome it really helps it's called shooting your thumper I would do it every 3 quarts for my set up and thank you for watching

How many days did it take to ferment?

7 days but can take up to 10 with EC-1118 yeast

No I always do open fermentation I just lay the lid on top I don't seal it

There’s a man from up north somewhere that wrote on his blog that he uses the heads as polish. I don’t know if that is useful information to you but, I thought I’d pass it along as a sort of contribution. says it works great for his barbecue grill.

Thank you I'll half to look into trying that I always appreciate any feedback I usually just toss heads but when I run brandy I keep a little bit because with brandy a lot of your flavor is in your heads depending on how the hearts are I blend some back in to taste and smell.....Shine On

Ain't no need to polish the outside of your still.. I like a good tarnished/patinas still.. dull green looks ausome on the outside.. keep running often & the inside will be Shiney enough

You're absolutely right. I finally stopped polishing the outside of all my copper stills. I love that good dark patina myself really adds an awesome authentic look to it

It varies so much from still to still that's why I don't usually mention it in the videos my copper still starts producing when the pot hits around 200° my stainless set-up starts producing at 190° I go by of take what's coming out the worm I adjust the temperature up or down to keep my stream the thickness of a match stick when heating up I heat up fast when my pot hits 160° I back the fire down to low that's the only time I look at the thermometer then I go by out put...Shine On

Hey Red ...getting ready to try your recipe for the apple brandy....first time ever making liquor can you comment more on cuts.....4 shots, heads mls per gallon....dont want to kill myself ....lol.....Dirksy .

Own foreshots throw away at least 150ml per 5 gallons may be a little over kill but I like to be safe when it comes to heads own a brandy a lot of your flavor will be in the heads so your Gunna wanna blend a little back in with your hearts it's hard to say how much own heads and tails you gotta go by taste and smell and feel heads smell like finger nail polish remover and rubbing alcohol they will burn your nose when you smell them and will evaporate off your fingers quick just keep checking and tails will normally come around 90proof they will smell like wet cardboard but sometimes you may find a little bit in there that has flavor to blend back in it all depends on your taste some give a set % for each I feel that is not accurate as long as you get rid of foreshots your good then use minimal heads for blending add to taste own grain mashes throw heads out some people put them in on the next run I do not you will not die lol you will see the difference during the run it's very noticeable if you have any questions during your run add me on Facebook Shine shack and I'd be glad to help you anytime ...Shine on

I run a 25 gallon and I always throw away the first half gallon and be done with it if I do a Brandy I throw away the first quart and a half and keep half to blend also if you have a thumper pack apple concentrate in there for flavor and once you make the tails cut you can save your tails to dump back in on next run to get more out of them I do not I put a little in the thumper and throw the text away I feel like you put more tails in you get more tails out in my opinion

Hey Red I'm coming up to day 10 on my Apple Brandy and the yeast EC1118 is still rocking....most of the cap has dropped.....should I be waiting till the yeast is done.....just checked the SG and it's reading 1.040 .....how long should I wait......please advise......Dirksy

@@Dirksy985 I wouldn't touch it till the cap drops completely and you may see a few peaces of apple floating but that gravity should go down to .999 if it's still rocking let it roll in my opinion the slower and longer a brandy takes to ferment the better it is ....shine on

Atleast the first half gallon is tossed for foreshots & Heads there the same to me if it still smells like acetone I will pull off another 1/2 quart and toss it but if it smells good and sweet and taste and feels good I start collecting hearts after I toss the half gallon and I run till between 100-90 proof is where I hit tails I run 1 quart of tails just in case there is good flavor in the early tails if not I toss that quart then I shut the still off I don't collect tails I don't use them but you can keep the tails for the next run if you choose to do so....Shine On

Maybe in a distillery yes the outlaw side of moonshine has no regulations lol I have made brandy with just a pot and worm but with the thumper I add apples and fresh apple concentrate and it really adds to the apple character in the brandy in my opinion but some people like just a pot and worm eather way makes great likker

That's right my channel is about making great likker with what you have and on a budget alot of us don't have $300 for a mash we work 9-5 6 days a week to support are family you can make great likker with less they have been doing it for hundreds of years
