Hey Red Dave here again! It has been 6 days since you said you edited the peaches and cream run but still isn't showing up on KZbin! Are they jacking around with you? Getting ready to do a mash similar to yours. Think I am going to throw some oats in just for something different this time. My daughter lives about an hour away from Ashville NC in jonesborough TN hope that mess didn't affect you! Anyway shine on brother...

Ok a couple of questions. A couple months ago at the federal level it was deemed that distilling for personal consumption is now legal. Hear anything about that? Also I have been watching you for along time now and I was wondering if you would go bigger ? I have an 18 gallon still and makes my time worth it but I am thinking about going bigger. My question to you is how big would you go for personal use? Thanks for the videos and keep it up
@TheShineshack
@TheShineshack 5 күн бұрын
I haven't heard of anything like that to my current knowledge. Distilling for personal use to drink. It is illegal on the federal level. There are some states that are legalizing it though. I believe Virginia is one of them, but on the federal level it's still illegal unless you get a fuel alcohol permit, but you still have to denature it to where you can't drink it but what they don't know won't hurt them right 😂 I think all that's crazy. It should be legal if you can make beer and wine. Why can't we turn that beer and wine into shine? But anyway I do have a 30 gallon still that's about the biggest I would go your return off of that. On average it is about 3 gallons of high proof, sometimes 3 1/2 of good clean alcohol. After cuts By the time you proof that down to about 100 or 110 proof you're at about 4 1/2 -5 gallons. I personally wouldn't go any bigger than that. It cost more money to make that Mash more money to run your stilll, more money on ingredients and sugar and fruit and grain I would even consider running a 50 gallon still on occasion but you got to keep in mind the amount of money it's going to take to make your mashes and stuff also depends on are you filling a barrel or have the means to consume the larger amount

Not at all. I love this method of doing it in a barrel. You don't have to worry about scorching your grain and stirring like crazy. As long as you get your water to a rolling boil and check the tent, but make sure it's above 175 to 190 and add your high temperature amylase. It will convert, cover it insulate the barrel and let it sit for a while. I've never had a problem doing it this way

How you actually store ot for the 2 weeks & when u know it's ready. Also, more details about when you know your run is leaving the heads, entering the heart, & entering the tails. Couple questions about the setup. Where did you get the copper thing that you have the hydrometer in during the run? Also what type/model of hydrometer do u use? Thanks

Red i couldn't agree more, the BadMo barrels are where its at! I have several including 2 5 gal. They are aging great, my first 2 are hitting a year old. I feel you on the humidity and the heat down here in NC. Us bigger guys sweat so bad when working! You might think about running a bypass from your thumper to run your heads. So you can run your heads off then divert to your thumper for your hearts, it has more flavor impact because you're not wasting that flavor on you heads you're throwing out anyways. Remember if you're going to age on oak you actually want a little wider cut. White = tight clean cuts, barrel = wider cuts. If your cuts are too clean/ tight you actually lose complexities. Lacto adds great esters and helps improve your mouth feel as well, a creamier mouth feel. One of the things i love about runs is how the flavors come across at different points. Have you ever kept your sweet water, down below 20 proof? I use them to help proof my liquor down and it is essentially essential oils from your run. Lacto also eats some of the ethanol during fermentation, I've lost a lot of efficiency but you're right it's a great taste so it's usually worth it! Another great video! Keep on shining!

Awesome I haven't gotten any of the 5 gallon Badmo's yet but I do have 3 2 gallon badmo's going with another waiting to be filled 😂 But your exactly right I always make my cuts clean then when I blend before barreling I will add a little tails or a tad bit of heads on Brandys to taste to get that grungyness I like then barrel it I feel like I can control it more 😆 I have tried using Sweetwater several times my pallet just never could adjust I despise tails bad something about them but I have collected from 20 proof down to 0 to try it but I definitely will give it another shot for sure you have me intrigued. UJSSM is always a great mash recipe! I usually skim any floaters as well as any bad grain. I usually run 5 generations as well with mine but after about 4th gen you start getting diminishing results. @TheShineshack
@TheShineshack 23 күн бұрын
Well I'm kinda biased 😂 I'm a thumper guy I always use my thumper mostly but on Brandys I like to use my thumper for infusions but also single pot distilled Brandys are awesome to without a thumper my advice would be run with a thumper and without and compare them to your pallet everyone is different some mashes I have found a thumper can hurt you can strip a little flavor from your product if your not infusing like on grape,plum,pear is a few they are so subtle you have to pot distill them or do heavy infusions to get good flavor you can also run a thumper and just keep it empty it will act as a slobber box and want strip flavor but will help keep your spirit clean if you still happened to puke I hope this helps You have any other questions feel free to let me know....Shine On

How hot do you run the cleaning process and actual stilling process and how long does it take to make a run
@TheShineshack
@TheShineshack 23 күн бұрын
When it comes to cleaning I run it as hot as I can get. You want a good hard boil and hard steam to really get it good and clean with 50/50 water and vinegar or water and citric acid And when it comes to running it's all really about preference there's a bunch of factors that go into what exact temperature each still runs at different stills run at different temperatures Alcohol starts to evaporate at 174° but for this still My pot's always between about 180°and 190° And you can tweak it from there up a little or down a little to get your output stream to where you want it And as for how long it takes to do a run, it really all depends. You'll find what works for you. Some people like to run really really slow. Some people like to run fast. You definitely don't want to run too fast though it'll hurt your product too slow. Will hurt your product as well. For the 13 gallon vevor pot, I say about 2 to 4 hours To do a run that's from the time you get first drips to the time you get into your Late tails now my bigger still. My 25 gallon takes me about 6 to 8 hours I like to run kind of slow but not too slow As long as you keep your output stream the thickness of a matchstick, that's where you want to be. You don't want it pouring hope this helps thanks for watching
