This was creamy and delightful with just the right amount of sweetness. The rosemary went well with the Apricot, but it was a bit too strong. If I made this again, I would steep the rosemary for 20 minutes instead of two hours. I would also leave out the rosemary bits. This would be nice as a sorbet as well, with or without the rosemary. There was some left after spinning, so I blended in some fresh apricots and kumquats from our tree. The base now is divine and I can't wait to spin sorbet again.
