As far as I’ve found aside from dwelling there are four buildings you want in city center. Two are per nation which you just discovered the second one half way through the stream. The other two are per city, which are watch tower and castle, both of which provide fortification bonus to the region they are built. I hold monument in the same importance as alter and palace because its like having a single zone triumph that keeps growing in prestige.

One other thing I wanted to mention, if you build two or more scouts you want to take a pioneer as your first paragon unless you can get a scientist. Early game that extra move and strength on scouts is huge for exploring and defense. Two fortified scouts with a watch tower can fend off a battalion of spears.

Stoves as amenities will give 1+ food fertility to all regions in a city. Realy great if you want to grow your cities from pop 27 to 30. The food you need to grow to 30 is insane.

I think hunting animals with Scouts or Military units is the same. Higher strength does not speed up completing hunts or taking less damage. Scouts do not take up an army slot, which is tight early game.

You can destroy tribes by pillaging them. They are also useful to farm prestige and level up your armies if you don't destroy them. You get a lot more prestige this way and don't waste resources doing the events.
