I make an absolutely delicious Keto-friendly stir fry with shirataki (konjac) noodles or rice. I cook a small to moderate portion of grass-fed beef (steak) in either ghee or avocado oil, with Himalayan salt and freshly-ground Tellicherry peppercorns, fresh garlic and red onions. I add in broccoli, celery, portobello or shiitake mushrooms, and pasture-raised eggs. I mix it all together with those noodles or rice, then top it with fresh parsley and a small handful of broccoli sprouts - after it’s off the stove heat. It’s delicious! If you’re on Keto and doing OMAD (“one meal a day”), it’s very satisfying, as there is a HUGE amount of vegetables in this meal.

I live in Japan (American) and I love shirataki as a keto friendly pasta substitute. I started eating them because of their lower carb levels, but even happier now that you confirmed their ketogenic properties. Thanks Doc!

Boiling konjac in slightly salted water for 5 minutes will remove the odor. This is common practice in Japan.

Excellent, thanks! I'm about to embark on trying this out (Skinny pasta specifically) and also just found skinny rice too.. you guys use that too????

Skinny pasta and skinny rice are rarely available in Japan😂 Additional information, The best boiling time in salted water is 2 or 3 minutes. Over-boiling makes konjac tough. And if you boil them with a little vinegar, the smell is further removed. You can also add sake🍶

As of this morning, I have lost 40 lbs since February, thanks to Dr Berg, Keto and IF. I feel SO much better. I am a Japanese who live in Canada. We often eat konjac with seaweed salada. Some people do not like the smell, so I highly recommend boil and rince well. Also, there is Konjac jelly with fruit tastes. They are very tasty but low calorie.

Hey Doc!! And, anyone else who is interested --- The correct pronunciation is kone-yack. 😀😉 I love it!! It's delicious!!! There IS flavor, but not the crazy way westerners expect flavor. It's made of corm, not corn. Pro Tip: Start out slow, and only eat half of what you think you'll want. Because it will swell/expand in your stomach and intestines. Your body has to get used to it.

I refuse to get on the scale. When I did get on the scale after 2 months of Keto/IF and OMAD, I had only lost 6 pounds. But I feel amazing, I'm a 63 yr old woman my skin is beautiful, I don't have lose skin except on my thighs and my clothing showed different. I had lost 4 pant sizes. Started at size 24 and was a 20. And as of today I feel and look like I have shed 50 or 60 pds. I also use Dr. Bergs products. Thanks Dr. Berg. I am going to take the recommended course. And WILL keep on keeping on this journey. I will get on the scale on my birthday in December. Be blessed friends!❤

FYI, many brands that make konjac noodles (like Miracle Noodle) are now transitioning to using citric acid in the water solution rather than calcium hydroxide/limewater (the culprit of the "fishy" smell. Citric acid has no odor, so depending on which brand you buy, they may be a lot more palatable and simple to prepare! Another heads up though, always check the ingredients because some brands contain soy which is questionable. I believe Nasoya does so I typically stick to Miracle Noodle.

Is calcium hydroxide even a safe ingredients to consume? I wonder how konjac noodles were traditionally made 100s of years ago, they wouldn't have used chemicals

@@annc.3908 maybe you got a bad brand. Mine barelly smelled. And if you boil them for 5 minutes and then rinse with clear water the smell goes away completely.

I use the konjac "rice" a lot, too. I just rinse it and toss it into soups, broth, chili, whatever, no fussing with cutting up noodles. Any leftover bits of this and that in the frig can be quickly made into a hardy soup.

@@NintCondition Walmart. One brand name is Taste of Asia. I find them so much easier to eat than noodles because they are small, like rice. I mix them with something I’m having like meat & veggies, or soup, etc.

Rinse these thoroughly, then dry in a colander. Saute briefly in a frying pan to dry.

I wash mine well, I’m guessing I’m using the same ones they are called ’bare naked' over here, then I strain them as much as possible, then sauté them to help dry them out. I mix in various herbs or spices as well, depending on the meal. Ours come wet in sealed pouches so, as there aren’t really enough for two and they are fairly expensive, I mix them with zucchini noodles, they really go well with meatballs and a good keto tomato sauce. With grated cheddar on top. A seriously strong cheddar of course.

This is a good tip. I actually boil them for 2 minutes, then strain them, then into the dry pan until they start popping. I learned this method from Dr.Gundry.

Not into keto but I do eat konjac for my diet since I don't eat rice now although I'm asian. It's easily available in various forms and my favourites are konjac fettuccine, rice and macaroni😍 If you think it's fishy, just boil it for more than 5min with some vinegar. It will remove the unpleasant smell. You can cook it however you want afterward. I like to have konjac egg fried rice and kimchi fried rice

@@beverlybalfe115 It doesn’t take long. I’ve soaked them for 5-10 mins to as little as just a minute. Just cover them in cold water, add a few splashes of vinegar and stir around making sure the vinegar is mixed into the water. Let it sit a bit then drain and rinse. Voila! No stinky konjac noodles! 😁

I bought konjac noodles at costco and I am happy to say that its a great substitute , let me tell you I am quite fussy about many items that I use on keyo diet, I hated vegetables as noodles , but this is a great replacement👍 I rinsed it and then added to other ingredients on a heated pan , added some sauces and butter , it is an awesome replacement👌

I triple rinse them, set in a bowl of water in the fridge when ready to use, just take out the amount you need for your dish, pat dry and add them to whatever you’re making…delish!!!

After discovering Shiritaki/ konjac noodles, it has helped both me and my husband with our keto diet. We eat it with soup and with sauce. It definitely keeps me more full and I am not hungry for a very long time after a meal. Thank you Dr. Berg for keeping us updated on the latest keto foods so we can fight the good fight to stay thin and healthy.

Konjac is also used here in Japan as partial rice substitute. So instead of eating a bowl of rice only, you mix rice and Konjac and hence, consume way less carbs. It's almost flavor neutral.

Once you get used to the texture it's a great noodle to use. Just need a bit of resetting of the expectation that it will compare to carb noodles.

They kind of remind me of overcooked pasta, but lighter and less gooey. Takes a little getting use to how to use them with your meals, but it's not difficult.

In the "Timing is everything!" category, I had some konjac noodles for dinner last night. I did the nutrition calculations and my dinner was 350 calories, and that included a salad.

I absolutely love them. The key is to rinse well. They will take on the flavor of your keto sauces when tossed and heated well. We use coconut amino acids and toss these in our Asian dishs. I add the rice version to my broccoli and cheese casserole. So delicious! My grandson's like them with Kerry gold butter and a dash of coconut amino acid. We use them when making spaghetti...their use is endless.

I am loving it now. I just rinse it really well and inlet it boil for a long time then i pan fry it to remove the moisture before i use it. I used itvin making pad thai and in making vietnamese bun thit nuong. I saw a recipe for keto chow mein recipe, so i will try that as well

I’m so glad to hear this because I’ve been eating them a few times a week. Alfredo sauce, curry sauce, brown gravy, are a few of the flavors I like. I cut the noodles down to bite size pieces because they are chewy.

I cut them down too because they are actually a choking hazard. People have died eating them. The strands don't break easily and it's even difficult with teeth. I would never let kids have them.

One of my fave keto meals to make is konjac noodles with mushrooms and leftover chicken chunks (or prawns...) in coconut milk with curry and some greens! It’s so satisfying when you’re doing intermittent fasting and only eat a meal or two 👌🤤 🍝

I love it! It has a fishy smell when you open the package but to get rid of the smell simply dry it a little bit on a pan . Now I know it is Dr Berg approved!! Great!!

I rinse them under the tap, usually gets rid of that whiff, & someone told me it was the lime in the liquid they come in. Not sure if that's true though. 👍

The fishy smell is due to the calcium carbonate preservative. Soak in Apple Cider or Rice Vinegar for 5 minutes, then rinse with running water twice before using.

I use them with my home made spaghetti sauce. I like them more than Zucchini noodles. I also use them in stir fries. They also have some in little bits that they call rice, but I wasn't a fan of that. Cauliflower rice is much better.

Thanks Doc. I’ve been eating shiitake noodles for about a year and a half now. I love them. I’ve tried different brands and like The brand that Walmart carries (Nasoya) the best. To my pallet, they have a corn taste. I mix in an Italian red sauce, Alfredo sauce or pesto. Proteins I use are beef, chicken and shrimp.

I have these all the time! They come in rice shape too which is my favorite. Just don't expect that they're the same as rice and pasta. But as a zero-carb substitute, they work great! Rinse thoroughly and dry roast in a skillet to remove water so they'll absorb sauces. I'm so pleased that they are Dr. Berg approved!

I’m Taiwanese and I love konjac noodles! They have always been something we use to try to lose weights and the texture is so good and they absorb sauce so well so I can make them as any flavor as I want. Hight recommended!

Dude, so glad you did a video on this. I started eating konjac noodles a few months ago after finding them pretty cheap on Amazon (in Canada, so it's harder to get some stuff in local markets). Some things to add to your video comments: - They are super chewy. Might want to avoid the long noodles like spaghetti due to this. Maybe give them a try and figure out if you want to chew your noodles that much before ordering a bunch! - They stink. Like seriously, the noodles smell like fish. However, this has no impact on their taste (like Dr. Berg says, they are basically tasteless). Don't let this put you off, just be aware that they aren't bad, they just smell bad. Rinse them a good couple of times before eating them (it's also recommended on the package and good hygiene in general - especially whenever you're not sure where or how a product is produced or manufactured). - Interesting fact (at least to me): the konjac plant (蒟蒻) is native to Yunnan, China. They've been eating this type of stuff for hundreds of years, and it's part of Chinese traditional medicine. My wife is Chinese, so she's a huge supporter of stuff like this.

I’ve tried all three substitutes but we like the vegetable ones the best. I made zucchini noodles with chicken , spinach , mushrooms and Parmesan cheese in a cream , herb, and garlic sauce and it is SO good. My daughter and non keto husband love it! I also use them in ‘spaghetti bolognese’. The other noodles I use in my homemade chicken ‘noodle’ soup.

I made a delicious Thai style soup with the noodles in coconut milk, miso, spring onions, ginger, chilly, like juice, tamari sauce, lemongrass, cilantro, broccoli spinach, tuna, hard boiled egg pieces,, etc. It was so yummy.

We have them once every 3 months. My husband enjoys them. I put Costco’s pesto on it and some fried mushrooms, little tomatoes, shrimp. Can be made as a side or main dish. Must add grated cheese!

Konjac noodles are great. Just need to rinse them, then put them in boiling water for about 5 minutes to get rid of the "fishy" smell. Rinse the noodles again after it's been in boiling water for about 5 minutes. I find that the "fishy" smell remains if you don't put them in boiling water - at least for the brands that I have tried. I've used this method for a long time now and it really works.

I Buy Konjac noodles in Bulk. I love pairing them with pasta sauce, as a substitute for ramen and also stir fried. Quite versatile 👌

I like the noodles, I chop them up really tiny, & add them to soups, or do stirfrys. We also get Spaghetti, Fettuccine & Penne pasta shaped varieties, here in the UK. Handy to have in, as a bit of Keto Prep, for when I can't get certain Vegetables to Spiralize. (Which is happening more frequently now.) TFS this important information with us all. Thank you so much for clarifying that they are Keto friendly. I love them!!!! I haven’t eaten ‘real’ pasta in soooo long, these are truly a miracle godsend for me. I’ve been adding loads of veg mainly cruciferius veg with soya sauce and they’re yummy. I have to admit I was a bit scared when I clicked on this video, just in case you said they weren’t Keto but luckily they are. Thank you once again.

I use the miracle noodles and I love them. I rinse for double the time called for and then pan dry in a hot frypan or wok depends on how I'm using them. Add some butter to keep from sticking and for an added layer of flavor. toss in spaghetti or alfredo sauce. Or do a keto lo mien. YUMM. I've also made a keto chicken noodle soup with them.

Cut your spaghetti squash into rings about 1 and a half inches thick instead if lengthwise down the middle... you get much longer strands this way!

I love spaghett squash too and i cut it in half not lengthwise. They are much longer to twirl around the fork. 😁 I also love zoodles.(zucchini spirals) soo good!

They MUST be prepared properly. Rinse, thoroughly, in a strainer. Heat in a pan on low/medium for several minutes. I usually add sweet cream butter and simmer them for a few more minutes before adding a sauce.

Since April 1st this year I have been Keto, lost 48lbs . Thank you Dr Berg for all your videos , it has made the world of difference to me. I’ve been eating these noodles since the recommendation of ‘Heavenly Fan’ KZbin channel. I think they are delicious, I generally have them with king prawns & veg. I love that they are satisfying to eat ( nice bite ) and are filling too. I located some konjac powder recently and added a tiny amount to my sauce to thicken - it really does swell x 50. Definitely can recommend

I had these with spaghetti meat sauce last week. I bought an organic brand from Thrive. I really enjoyed them, just rinsed them off, not really any taste. The one thing that surprised me is they pass right on through and don't really digest. It gave me some cramps the 1st day I tried them, the second day was not so bad. I will use them again, the carb count is great! I used Rao's spaghetti sauce mixed with primal kitchens garlic alfredo sauce and 1 lb of hamburger. It was delicious!

The Japanese actually pronounce it the same way the French pronounce their brandy - cognac! It also has kind of a funky smell. But is fine once it has been cooked.

I like the zucchini noodles, but not to eat in the pasta style. I'll actually just pickle them in a jar with vinegar, water, salt & spices. Zucchini pickles are actually less briny than cucumber pickles, and I like the taste better. They're also firmer.

I think they work great in Asian and cream sauces dishes instead of noodles or rice. For Italian tomato base dishes I prefer zucchini. It’s a brilliant food staple to have in the pantry 😍

Glucomannan powder is an excellent thickener for gravy, thickening fruit sauce for low carb cheesecake and I use it to make low carb lemon pie. I use fat head dough to roll the crust. It does not clump the same as the other low carb thickeners.

Another thing to be careful of is eating too much too fast, and with no other food. I ate 2 packs one night and it plugged me up because they expand and don't digest. Was throwing up and had stomach pains. It took 30-40 hours to feel better.

In Pakistan we use it in "Falooda" which is a mixture of these noodles, sugar syrup and khoya or Rabri (made of milk, by boiling milk untill it gets very thick brown color)

I have been having these for a while as they are a great substitute for pasta, noodles and rice, I was hoping that Dr Berg or one of the other keto dr's I follow would do a video on this, and here it is. The most common ones in the UK a slim pasta, the rice is also really good

We can get a range of these in Australia. I find konjac noodles are a fantastic substitute for vermicelli, in laksas etc (the angel hair version). To me the thicker pasta substitutes and especially the rice version are less successful because the texture is too slippery and not firm enough. But they are a great product for those of us who have to watch our blood sugar!

Cannot overstate enough that these should be eaten in moderation until one knows how they effect them individually. Miracle Noodles have caused me severe stomach distress, intense nausea and sleepless nights in the past. Be careful!

Konjac noodles are good to have with stir fry, and particularly before a fast. I'm surprised you left out kelp noodles. They're great in salads and stir fry. Because they're made of powdered kelp, they're also pretty healthy.

I ate them for breakfast today and they were good. I first sliced some garlic, fried it in olive oil, added soy sauce and waited, till the water boiled off, then i added the noodles and an egg and fried it for a few minutes.

Love konjac noodles! Konjac rice is also great, but too much of a pain in the but to have to strain and rinse compared to the noodles :)

It's written on the box to consume min 200ml of water during eating them... due to danger of suffocation ☝🏼 not because dehydration ☝🏼. First bites are ok, nevermind what sauce you use with... and they also look very good with any sauce. But then I understand the warning on the box. That stuff is like gum/rubber. The noodles don't have any own taste, but the consistency/structure/bitefeeling is cruel. Between the tooth like soft finger nails, in the throat like gum. And seriously, I needed the water to finish them. Never tried the rice version, but for the noodles... can't personally recommend them.

Yellow summer squash makes great noodles too. Weird name however.......Squadles? Also cabbage sliced in pasta shaped strips is really good if you like cabbage, just boil them to the tenderness you like.

I've been getting these lately since they added them to the pasta shelf at our local market. They got spaghetti, fettuccini and nootles variants. Works real well for pasta courses just immerse it in sauuuuce :)

Hello from France ! I use them aswell, in soups or with sauce as pasta, or with vegetables wok style. They don’t have really any special taste. They take the taste of what you put with them. Nice texture too.

I just tried the rice form of the Konjac noodles. No taste and the texture was more like barley. With spices and a few other ingredients to approximate fried rice, it tasted great. The Bag indicated that there was no odour and no need to rinse and that was true. Other Konjac noodles I have tried all have an odour and a need for alot of rinsing. Great alternative. Thanks for your perspective on this.

I've lost 30 pounds after introducing these to my diet. I eat a packet every other day. They keep you feeling full longer. After a bit you get used to them not tasting like a normal noodle.

Glad to hear that, I was almost sure but. Used a lot, but in last few months I cut carbs to less than 5% and every little counts. After your advice I will use again, sometime, Italian style..Aglio, Olio e Peperoncino (garlic, EVO and chilly peppers) YUMMY YUMMY

I've tried them once. Got severe stomach pain and later intestenal pain after eating. This lasted for 3 days! So I stick with the zucchini noodles, brocolli and cauliflower rice.

As an Asian, we eat it since our childhood and there are tons of different food made with konjac where I'm from. The benefits for weight loss is really outstanding, bc you stay full for longer and there is zero sugar konjac jello (search Korean zero sugar conjac jelly) etc that's easily digestible. I'd say try again, but maybe soak the noodles in baking soda for a little so it's softer, then rinse well with water. Drink more water after eating.

I trainned to run 13 miles and lost a total of 32 lbs. I jogged and reduced clories for about 6 months. End result affter loosing some weight I felt weak. I did eliminate most process foods and cut down on eating fast foods. . When the pandemic started the 1/2 marathon I tranned hard for was canceled. Subsequently I gained back 5 lbs. I saw Dr. Eric Bergs videos and I have learned alot about healthy eating. I adjusted my diet and started eating two meals a day on days that I do 16 hour fast. With what I have learned about food and cut down more on carbs and added healthy fats I lost 18 lbs. I feel much better physically and mentally sharper. My orinal weight was 207 lbs. Can any do the math to figure out my current weight. Retired Algebra teacher. Dr. Berg you are doing a great job helping so many people. PS i want to order the nutritional yeast.

I made these noodles today. I combine them with cabbage, onions, soy sauce, garlic, and cilantro.. and drizzled a little olive oil on it! I love it these noodles have curb my appetite as well. Thanks for the information doc

I've tried these noodles and the texture is a bit rubbery in my opinion. I quickly realised that I would have to spend some time making sauces and adding ingredients to make them more palatable and I suppose I'm a bit lazy. I did however learn how to make Keto muffins and flatbread and those have caused me to be less adventurous in expanding my culinary skills.

Well... I find them plastic tasting too, but try them with real pancetta/guanciale cooked in it’s own fat and egg yolks/ Parmesan + water u cooked with ( carbonara..lol) or do it the English way... add double cream 🤣😂

I like these quite a bit. I can now eat my favorite "pasta" dishes again, which was the reason it too me as long as it did to get on Keto. I have always loved pasta. It was always my biggest weakness as far as the S.A.D. I'd like to find a good keto recipe for Lo-Mein, as I would make that in a heartbeat if I knew how.

I eat the Liviva brand Konjac noodles. I rinse well and drain and put them in a pot. Douse with a good amount of salt and prepare the rest of your meal. When you are ready to cook your noodles do not rinse them, boil to heat in fresh water, then drain them, use in your recipe. The salt gets rid of that smell and that off putting flavor that these noodles tend to have. Spaghetti is my favorite shape for them.

I have never tried these noodles but I have tried something called Healthy Noodles from Costco that tastes pretty good. Reminds me of a rice noodle or a pad Thai-type noodle. It's a good substitute when my family is eating spaghetti or having some other garlic butter type pasta.
