When making bread, all grains go through that soaking process when the bread is set to rise (twice in many cases). One thing about sprouted bread is that not only are you not eating dead grain (sprouted grains are alive when they are sprouted), once the grain is sprouted it becomes a plant. So you are not eating grain, you are eating plants, and the difference is huge when it comes to the glycemic scale. Once a grain sprouts the protein increases and the carbohydrate levels in that grain drop dramatically.

About 8 months ago I started eating organic sprouted grain bread, the main benefit I got I started to have great bowel movement since the bread is high in fibre, and I actually lost weight. Unfortunately I am overseas on an island in the Philippines, where it's challenging to get higher quality bread. I have a local baker who makes his bread, but I can tell it's not the same as sprouted bread.

I've baked all of my own bread for decades, however, over the past few months, I've been purchasing wheat berries, ancient mostly, to grind my own flour. I first started hearing about the health benefits of sprouted grains and I plan to sprout grains prior to baking bread, hopefully, for most, if not all of my breads.

soaking will only remove a portion of phytic acid depending on the grain. usually it will remove 40-60%. sprouting/fermenting will remove almost all of it

The quantity of rice consumed has probably become too much in the modern times. People might have eaten less of rice and more of healthier vegetables, other proteins and fermented foods in the ancient days. Also fasting used to be part of normal life for many to detox the system and keep it well balanced. Modern food has become very taste oriented and less healthy. White rice might have less phytate than brown rice too, but less in over all nutritional value as well.

Phytates can be a problem for some. But it's definitely not like eating unsprouted grains means ur not absorbing any of the minerals which this video gives that off which is false. You still absorb an decently appreciable amount of zinc and iron from regular ol grains. Plus just eating the rice with vegetables or peppers high in vitamin C does the same thing as sprouting for those minerals
@prioris55555
@prioris55555 8 жыл бұрын
the video didn't say that. how much of the available minerals will be binded to the phytates will depend upon how much of each there is. if i am taking a mineral supplement, i never take it with a meal that is dominated by phytates. there can be small amounts though. you use common sense.
@VOTE4JUSTICE

what he did say is that about 80% of iron and magnesium can't be digested with phytates.
@elisenieuwe4649
@elisenieuwe4649 7 жыл бұрын
-That's actually not true. If you eat phytates over a longer period of time your gut (bacteria) adapt and the problem of iron/zinc absorption actually goes away. Also foods with phytates contain a lot of fiber and fiber feeds good gut bacteria and that increases overall nutrition absorption, not just iron and zinc. Furthermore combining iron rich foods with vitamin C increases absorption a lot. Same with zinc in combination with other foods. You cannot see phytates and establish that they decrease absorption of iron/zinc on their own and then just conclude: so it's bad. You eat food in combination with many other foods and those interactions between the different foods are incredibly important. -Also: longterm food studies show that people that have a phytate rich diet, have a better iron/zinc absorption in general. (And absorption of other nutrients as well.) Studies also show that vegaterians and vegans do not have a higher change of anemia.

How can you have that entire conversation without mentioning Phytase and lactobacilli? Humans make a small amount of the phytase enzyme and our processes destroy the phytase in the seeds --- So supplement your phytase and add lactobacilli to add more phytase and ferment and sour so that phytase is present in the food --- the phosphoous based acid can rot your teeth and it blocks absoprtion and disrupts metabolism of magnesium, zinc, and iron --- its a friggin monster --- gluten is not the problem lack of phytase is -- so we either eat it right or do not eat it unless you are supplementing. Phytic acid can rot your teeth in a week--so how bad do you think it is to the rest of your system . Our enzymes are compromised hugely by large amounts of inflammation and fibrin -- so eating incorrectly is literally making a mountain out of a mole hill in an ever accelerating fashion -- self-destruction ..... step it up Dr. Axe you are doing good work... I am a fan but add some MAGNITUDE to your delivery. Our enzyme production drops off huge at 27 years and then inflammation ever increasingly dominates our limited resource of enzymes -- Help!!!!

ryebread1980 I believe they're healthier. Each does have quite a bit of starch but definitely better than most foods. On the Gerson diet they eat oatmeal in the morning with a Tbsp or so of raw honey or unprocessed sugar so it can't be all bad if it's part of a diet that cures cancer.

Best diet eaten by Scott Nearing in book The Good Life. Fruit for breakfast, veg soup and whole grains for lunch, veg salad and baked veg for dinner. Lived to age 100 but bed ridden at age 95. Good news, you are living to be old. Bad news you are living to be old.

Why dont you mention that most nuts have even more phytic acid and no one is eating them fermented. Paleo diet with almond flour or cashews (highest in phytic acid) is extremely high in phytic acid

Your first example of food from grains is with bread. I eat BROL (Dr Greger recipe), try it. I soak it overnight. I don’t sprout or soak nuts and seeds because science. I wish this guy backed up his claims with evidence. You know, scientific studies.

Solve the whole problem of grains by eating the bread that people in Europe and Russia ate as their basic food for thousands of years, and many still eat: 100% whole grain sourdough rye bread! The long sourdough process destroys some amount of the phytates, oxalates, digestive enzyme inhibitors, and gluten! Fermentation also raises the essential amino acid lysine and lowers the non-essential acid arginine. These amino acids compete with each other, so more lysine (can't be made in the body) needs to be eaten than arginine (plenty is made in the body). When arginine is too high in your diet, like it is when you eat other grains, nuts, and seeds, you make too much inflammatory nitric oxide and arginine vasopressin (from studies), both of which cause many problems, like restlessness. Inflammatory nitric oxide is a major pathological molecule, found with inflammatory diseases. Arginine also feeds viruses and tumors, while lysine fights cancer, and keeps us calm. Also, unlike pretty much all other plant proteins, rye has a good zinc to copper ratio, which is necessary for brain function and your immune system. You need to make it yourself, but it's very easy-just watch the many videos on KZbin on how to make, for example, Danish sourdough rye bread. Then you can make very nourishing Danish open faced sandwiches, and toast it for the delicious caramel flavor. Best of all, you'll feel nicely full, because it keeps your blood sugar level with its special fiber. So, it's recommended for both diabetes and alcoholics. Solving the grain problem is easy, once you look at what our near ancestors actually ate!

Aaah, whole grain sourdough rye.❤ The problem is that, toasting it with some grass-fed butter, it's so delicious you can't stop eating it! I've been through a few rounds of this already. The last starter was going for about six months and I baked every day or every other day. I feel funky when I eat too much bread, even this.

At 2:38 you state that regular grain consumption increases your risk of diabetes and other health issues. A systemic review by de Munter et al. published in 2007 (PLoS Med 4(8): e261) found "Whole grain intake is inversely associated with risk of type 2 diabetes" and "Findings from prospective cohort studies consistently support increasing whole grain consumption for the prevention of type 2 diabetes." What evidence do you have to support the assertion that grain consumption increases your risk of diabetes? And what other sort of health issues does the consumption of whole grains cause? I ask because I am worried you are misleading your viewers by telling them to avoid grains if they don't want to risk getting diabetes when that advice is the exact opposite of what the body of scientific research has shown.

Porrige is great, now go on low fat whole food plant based diet for few years and you might see a difference. Ceylon cinnamon won't help you with diabetes though, only regular cinnamon helps regulate blood sugar but it's toxic for the liver.

Phytic acid? Do you mean Folic acid from enriched flour? It sounds to me like you are confusing the two. Folic acid restricts the uptake/absorption of minerals like calcium. It sounds like you are schilling for enriched flour, which is a nurotoxin. Sprouted grains are 100 billion times better than GMO enriched flour. Why are you beating on this? (unless paid by the industry)
