Hi and welcome to our channel!
Who are we:
Scandinavians Arne Nerjordet and Carlos Zachrison are highly regarded designers, textile artists and authors. They are best known for their craft books and their original, colourful and visually striking designs. Their work is highly influenced by their Scandinavian background and their everyday life in rural Norway. They work under their artist name ARNE & CARLOS, which they established in 2002.

I haven’t scrolled through every comment so this info may be posted already. Just in case it will help anyone, here are the conversions I calculated: 1.5 cups sugar 1.25 + 2 Tbsp butter 1.25 cups molasses 7.25 cups flour 175C = 347F (The spices, eggs and bicarbonate measurements are already compatible.)

Thank you, Sarah. This is a big help for those of us not using the metric system. I found a recipe for gingerbread men cookies in my old Joy Of Cooking cookbooks (1964 and 2006 75th Anniversary editions) that has the same ingredients as the one Arne and Carlos are using except there's no pepper, but all the amounts are for a smaller batch of the cookies. Just thought I mention this in case anyone here has the JoC cookbook and would like to note that. There have been numerous editions of the JoC published, but all of them have more or less the same gingerbread men cookie recipe.

Thanks. I mixed up a batch, trying to weigh everything to get metric measurement, and had to add quite a bit of flour. But as you say, it will be OK. The dough has been in the refrigerator overnight so it's "show time". And, Arne, I'll be looking for horse and moose cookie cutters because I really loved yours. For now, I'll be baking and decorating snowflakes. Merry Christmas and thanks for sharing so much joy.

The horrified look on Arne's face when Carlos told him he'd need to use the stove 😂😂 Also: Molasses pro tip. If you put a tiny amount of neutral tasting oil in your measuring cup/spoon first the molasses will completely pour out with not a speck left behind... and egg white pro tip: try beating the egg white for a bit before putting in the sugar which will increase its volume (aka, one eggwhite really is enough :-) ) PS: super job Arne - those cookies look great - love your artistic icing job!

I just got on Utube to repeat that same tip - grease the measuring cup before you measure out the molasses. I just use the butter which is on hand.

@@genedwards1 Absolutely, butter works too, especially if you have it out on the counter already. Sometimes mine is in the fridge and rock hard so a bit of canola oil or similar is easier. But I've used both for sure.

The disbelief and horror on Arnes face when Carlos mentioned needing to use the stove was so precious. It was as if he'd never seen the stove before . The true unsung hero of the episode goes to Carlos. Giving over the control of the kitchen is a daunting task! It's so hard to keep your mouth shut and let someone roam freely in your space whether it's your spouse or children it causes anxiety 😂😂 Good Job Carlos! Molasses for the cows because it is high in iron. Some cattle/horse feed still has molasses as and ingredient.

Yes. "Sweet Treat" is a brand of feed with molasses added.

We make a whole wheat bread here on our homestead, that uses molasses. It's a very old recipe and we LOVE it!

We say "level teaspoonful" when you flatten off the contents level with the rim of the spoon. When the contents are piled on top we call it a "heaped teaspoonful" or a "rounded teaspoonful". I felt the need to share this!! :)

I made these gingerbread cookies last night. I halved the batch, weighing the ingredients with a scale. I used the trick of greasing the measuring cup for the molasses (thank you to a viewer for this great tip!). I never thought that black pepper in cookies would work, but these are without a doubt, the best gingerbread cookies I've ever tasted!! Thank you Arne and Carlos!

So many warm and humorous moments. After watching it straight through the first time, I like watching it again divided into 3 half-hour segments. One with morning coffee, one in the evening with hot tea, and so forth whenever time permits. My favorite moment is Arne saying "The stove?!!" What a great graphic that would be for a mug and tote bag, Arne standing there aghast in the kitchen saying "The stove?!!".

I have never laughed as hard as I did watching this! Arne, you are so funny and lovable. Between your Julia Child imitation, licking the spoons, blowing into the bowl (much to Carlos’ horror) and using some “hip action” to mix the batter, I was in tears. I have heard about people who will eat a bite of butter, but have never seen anyone do it. Carlos, you told us that Arne had a sweet tooth and he really does. Arne, I love how you always tie in the lovely stories of your Mother and Grandmother into whatever you are doing. Carlos, I understood you when you told Arne to be careful of your heart pan. I am the same way about my kitchen items. You two make a wonderful couple. Your personalities and sense of humor are a perfect match. And you are always kind and encouraging to one another. I don’t think you know how much joy and laughter you are bringing into our homes. I look forward to seeing you every day. Arne, your gingerbread cookies looked delicious. I knew you would do an amazing job, especially with the decorating. All for now. I am going to watch your show again! 🎄 👨‍🍳 🧶 🐴

We have a saying here in Wisconsin.."slower than molasses in the winter""because molasses runs slow when its cold...😁great job Arne..baking is so different from cooking and wonderful when its cold outside..A nice xmas gift would be a set of measuring spoons,,thanks for the morning entertainment..I am crocheting a snowflake and watching you guys..big hugs from Milwaukee..👍❄🤗❣rolling pin...😁😁add a dope of water or milk to powdered sugar as it melts with liquid...good luck.

Arne mentioned pasting the flour label into his "idea" scrapbook. I am curious how you access those idea books over time. . . do you have them organized anyway, or do you just pull them randomly off the shelves & browse for inspiration? Question from a retired librarian!

One of your best episodes ever. So now, lads, a few baking tips: 1) When using the stove, put the sugar in first on low heat and stir. It will turn liquid. To this add the butter until it melts down and then the molasses last. It will be much easier to deal with and you won't get the crystals (although I'm with you, Arne--who cares!); 2. To chill your dough faster, separate into four bundles and wrap each in wax paper or baking paper (we call that parchment paper in the States). The smaller portions will chill more quickly; 3. be patient with the icing and let the on egg white do its job (as I think you learned); 4. If you want to hang these on the tree (as we often do in the States), insert a toothpick into the moose or horse's head or back and work a hole so that after it bakes, you will have a hole in the cookie into which you can insert a ribbon. This was all kinds of fun. And Prym needles are the absolute best!

I don't think I've ever enjoyed a cooking podcast as much as I did this one. As you may know, trying to teach someone how to cook takes patience...doubly so as it's being filmed. Kudos to you both for working so lovely together while entertaining your viewers. Stay safe! Stay healthy!

Arne never grow up, you are our Peter Pan. There’s nothing like tasting the butter ( because you like it) and your definitely never too old to lick the spoon, or eat the dough. And you came up with a good idea with baking paper. We need more cooking episodes from Arne, and wood crafts from Carlos. 🥰😍😘😂🤣😅👏👏👏👍👍🇦🇺
